PUERTO RICAN CANNED CORNED BEEF STEW
Simple, easy, and quick... This is a stew using canned corned beef and ingredients easily found in most home pantries and refrigerators. The end result is delicious and satisfying. Typically it is served over white rice. The perfect side dish is fried sweet plantains.

Steps:
- Bring a small pot of water to a boil. Add potato and cook uncovered until slightly tender, about 5 minutes. Drain in a colander.
- Heat oil in a large skillet or Dutch oven over medium-high heat. Add drained potatoes, corn, sofrito, and garlic; cook and stir until fragrant, 2 to 3 minutes. Add tomato sauce, oregano, and bay leaf; cook and stir until flavors combine, 2 to 3 minutes. Add water and bring mixture to a boil. Lower heat to medium-low; stir in corned beef. Cook until heated through, 6 to 8 minutes.

Steps:
- Place flour into a large bowl; toss corned beef cubes in flour to coat.
- Heat olive oil in a large heavy pot or Dutch oven over medium heat and brown corned beef cubes on all sides, about 10 minutes.
- Sprinkle the spice packet from the corned beef over the meat; mix in potatoes, parsnips, carrots, onion, water, stout beer, beef broth, and any unused flour; stir to combine. Bring to a boil.
- Reduce heat to low and simmer until corned beef is very tender and the stew has thickened, 2 to 2 1/2 hours.
- Mix cabbage into the stew and simmer until tender, about 15 minutes. Stir in vinegar.

- Cut away any large pieces of fat from corned beef and cut meat into 1-inch cubes; dredge well in flour. Melt butter in a pan. Add corned beef (including any excess flour); cook over medium-high heat, stirring frequently, until browned on all sides.
- Add spice packet and all remaining ingredients except cabbage to crockpot and stir well. Cook on high for 4 hours.
- Add cabbage and cook for 10 minutes more.
GHANAIAN CORNED BEEF STEW
Steps:
- 1. Heat up the oil in a large saucepan, add the onions, chopped garlic and stir util slightly browned. Now add the cayenne pepper,tomato sauce and then tomato paste.
- 2. Stir mixture until smooth then add broth, stir again, cover, and set to medium-low heat stirring frequently for about 10mins...now add lawrys seasoning, garlic powder, onion powder.....stir again
- 3. Let simmer for another 10mins...keep your eye on it...now add the corned beef and stir again...let simmer for another 5mins... *Optional*...add 3eggs lightly beaten into the mixture, stir lightly and let the egg fry up into the mixture for 5 quick minutes...and Voila an official Ghanaian delicacy.. Best served on a hot bed of Jasmine Rice or with boiled cutup white Potatoes..Enjoy

- 1. Peel and dice potatoes, set aside.
- 2. In a large Dutch Oven pot, bring roux and 8 cups of water to a boil. Roux will dissolve into the water as it heats. Note: You can use bottled Roux or look for my Microwave Roux recipe.
- 3. Add onions, salt, pepper, corned beef and bring to a medium boil. Gravy should be a little on the thick side.
- 4. Stir in potatoes and simmer until potatoes are tender, about 25 minutes.
- 5. If gravy is too thick, add more water or for thicker gravy, add more dark roux.
- 6. Note: If your gravy is not a milk chocolate color, stir in some Kitchen Bouquet to darken and add flavor.

- Boiled cubed potatoes and onions in just enough water to cover. When soft, add corn and cream. Cook 5 minutes. Add corned beef and slowly add cheese depending on how thick you want it. If after adding all 4 cups of cheese it's not thick enough for you, just make a corn starch slurry until the right consistency is reached.
