1 tablespoon vegetable oil
1 medium onion, chopped
1 1/2 pounds lean ground beef
1 1/2 cups mild salsa (medium or hot if preferred)
One 12-ounce bag frozen whole-kernel white shoepeg corn, thawed
1/4 cup vegetable broth
2 tablespoons hot Mexican chili powder
1 teaspoon ground cumin
Salt and freshly ground black pepper
Three 8-ounce boxes cornbread muffin mix (Jiffy preferred)
1 1/2 cups whole milk
1 cup shredded Cheddar (about 4 ounces)
1/4 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium heat, heat the oil until shimmering, about 2 minutes. Add the onion and saute until soft, about 5 minutes. Add the ground beef to the onion and saute, breaking it up with a spoon, until browned and cooked through, 8 to 10 minutes. Drain off any excess fat. Stir in the salsa, corn, vegetable broth, chili powder, cumin, 1 teaspoon salt and 1/2 teaspoon pepper. Transfer the mixture into a 9-by-13-inch baking dish, smoothing into an even layer.
  • In a large bowl, mix together the corn muffin mix with about 1 1/2 cups milk, or just enough to make it easy to spread. Spread it thinly over the chili mixture. Bake until browned to top, 30 to 35 minutes. Remove from the oven and set aside for 10 minutes to allow the casserole to set. Top with the Cheddar and sour cream before serving.

1 small onion, minced
1 pound ground beef
1 (15 ounce) can dark red kidney beans
1 (12 ounce) can tomato sauce
1 cup frozen corn

1 teaspoon seasoned salt (such as LAWRY'S®)
1 teaspoon white sugar
1 teaspoon brown sugar
½ teaspoon garlic powder
2 dashes Worcestershire sauce
1 (7.5 ounce) package cornbread mix (such as Jiffy®)
⅓ cup milk
1 egg
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a 10-inch cast iron skillet over medium heat; cook onion until soft, about 5 minutes. Stir in ground beef and cook until browned, about 5 minutes more. Drain grease.
  • Add kidney beans, tomato sauce, corn, chili seasoning, salt, sugars, garlic powder, and Worcestershire sauce. Cook and stir until thoroughly heated, 5 to 10 minutes. Remove from heat and smooth out the top.
  • Combine cornbread mix, milk, and egg together in a bowl. Mix until a slightly lumpy batter forms. Drop big spoonfuls of the cornbread mixture over the chili; smooth out to the edges of the skillet.

1 tablespoon cornstarch
1 tablespoon dried minced onion

1 yellow onion, diced
2 teaspoons kosher salt, or more to taste
2 pounds ground beef
2 tablespoons all-purpose flour
½ cup diced poblano pepper
3 cloves garlic, crushed

2 teaspoons ground cumin
2 teaspoons freshly ground black pepper
½ teaspoon cayenne pepper

1 (15 ounce) can fire-roasted diced tomatoes
1 (15 ounce) can fire-roasted crushed tomatoes
2 cups water, or as needed

Steps:

  • Heat oil in a large pot over high heat. Add onion, salt, and ground beef. Cook and stir with a wooden spoon or spatula until meat is browned and crumbled into small pieces, about 5 minutes. Stir in flour and cook for 2 minutes. Add poblano pepper, garlic, chili powder, cumin, black pepper, cayenne, and oregano; cook, stirring, for 2 to 3 minutes.

1 can(s) refried beans
2 box jiffy cornbread mix

Steps:

  • 1. Pre-heat oven to 400 degrees. Prepare cornbread as per directions on box. Set aside
  • 2. Brown hamburger until no longer pink. Drain off grease. place back into skillet and add sauce and beans mix thoroughly

1 c chopped onion
3 clove garlic minced
1 Tbsp oil
15 oz can chili with beans or without
3 Tbsp brown sugar
1 tsp chili powder
1/2 tsp cumin
1 pkg hot dogs
1 c shredded sharp cheddar

Steps:

  • 1. Make the cornbread according to directions on box. Spread half in bottom of greased baking pan.
  • 2. In large skillet add the olive oil and saute the onions and garlic until translucent. Cut the hot dogs in half lengthwise then into pieces. Stir hot dogs into the onion mixture and let brown Stir in the chili, brown sugar, chili powder and cumin.
  • 3. Spoon hot dog mixture over cornbread mixture in baking pan. Top with cheese. Top with remaining cornbread mixture.

Steps:

  • Heat oven to 400°F. In 12-inch skillet, cook ground beef over medium-high heat, stirring occasionally, until thoroughly cooked; drain. Stir in salsa, kidney beans, tomatoes, corn, chili powder and cumin. Cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.
  • Meanwhile, make cornbread as directed on pouch, using milk. Spoon cornbread batter around outside edge of ungreased 12x8-inch (2-quart) glass baking dish. Spoon hot beef mixture into center. (Casserole will be full.)
  • Bake 18 minutes. Sprinkle with cheese; bake 4 to 5 minutes longer or until cheese is melted and cornbread is deep golden brown. Sprinkle with green onion just before serving.

1 tablespoon(s) oil
1 medium onion, chopped
1 1/2 pound(s) ground chuck
1 1/2 cup(s) salsa
1 can(s) 15 ounce can of corn, drained
1 cup(s) cheddar cheese, shredded
1 can(s) hormel chili with beans
1 dash(es) cumin, chili powder, salt, pepper
1/4 cup(s) water
1 box(es) 7 - 8 ounce package or box cornbread mix
1/3 cup(s) milk .........for the cornbread
1 large egg......for the cornbread

Steps:

  • Heat oil in large skillet, saute onion until soft. Add beef, cook until no longer pink. Discard fat. Stir in the salsa, corn, Hormel Chili with Beans, water and the cheese, cumin, chili powder, salt and pepper.
  • Spoon into a 7x13 (2-Quart) casserole dish, smooth the top. Follow the cornbread package directions. Spread a thin layer over the top of the casserole.
  • Put the casserole on a parchment lined baking sheet and bake at 375 degrees for 40 minutes or so till the topping is cooked. Cool 10 minutes before serving

1-1/4 cups water, divided
1 pkg. (11.1 oz.) VELVEETA Cheesy Casseroles Chili Cornbread
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, drained

Steps:

  • HEAT oven to 425ºF.
  • BROWN meat in large skillet; drain. Return meat to skillet; stir in 3/4 cup water. Add Vegetables and Seasoning Mix; stir. Bring to boil; cook 1 min. Simmer on medium-low heat 5 min., stirring frequently. Stir in tomatoes. Spoon into 2-qt. casserole sprayed with cooking spray; cover with Cheese Sauce.
  • ADD remaining water to Cornbread Mix; stir until blended. Spread over cheese sauce.
  • BAKE 17 to 19 min. or until filling is heated through and topping is golden brown.

2 teaspoons olive oil
1 large onion, chopped
1 medium green bell or red bell pepper, chopped
4 cloves garlic, minced
3 medium zucchini, diced (about 5 cups)
1 1/2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/8 teaspoon cayenne peper(Optional)
1 teaspoon ground cinnamon
1 teaspoon salt
2 14-ounce cans diced tomatoes
2 14-ounce cans Black or Kidney beans
2 pounds raw shrimp (41-50 per pound; peeled and deveined
1/2 cup chopped fresh cilantro
Cornbread Topping
1 cup yellow cornmeal
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/4 cup canola oil
1 large egg
1 tablespoon honey

Steps:

  • EASY PREPARATION: 1. To prepare filling: Heat 2 teaspoons oil in a Dutch oven over medium heat. Add onion and pepper; cook, stirring often, until softened, about 3 minutes. Add garlic and cook, stirring, for 30 seconds. Stir in zucchini; cook, stirring often, for 3 minutes. Stir in chili powder, cumin, cinnamon and 1 teaspoon salt; cook for 20 seconds. Pour in tomatoes and their juice; bring to a simmer. Remove from the heat. Stir in shrimp and cilantro. Pour into a 9-by-13-inch baking pan. 2. Preheat oven to 350°F. 3. Add the wet ingredients to the dry ingredients and stir just until moistened. Drop by heaping tablespoons over the shrimp mixture. 4. Bake the casserole, uncovered, until the top is browned and the filling is bubbling, 40 to 45 minutes. Let stand for 10 minutes before serving. MAKE AHEAD TIP: Bake, let cool for 1 hour, cover with parchment paper then foil and refrigerate for up to 3 days. Reheat, covered, in a preheated 350°F oven for 1 hour.
