It's that time of year again and here in Georgia the peaches are in. Here's a peach pie recipe that my family loves and I hope yours will too. Note: Cook time is cool time.

2 c fresh peeled, sliced peaches divided
2/3 c boiling water
1 pkg 3 oz. peach flavor gelatin
ice cubes
1/2 c cold water
8 oz cool whip
1 6 oz. graham cracker pie crust

Steps:

  • 1. Slice 1 cup of peaches, refrigerate for later use. Chop remaining peaches, set aside. Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to make 1 cup. Add to gelatin, stir until slightly thickened. Remove any unmelted ice.
  • 2. Whisk in cool whip. Stir in chopped peaches. Refrigerate 30 minutes or until mixture is very thick and will mound. Spoon into pie crust.
  • 3. Refrigerate 6 hours or longer until firm. Top with remaining sliced peaches.

A graham cracker pie crust filled with layers of peach pie filling, cream cheese, pudding and whipped topping? Sounds like the perfect pie to share.

1 can (21 oz.) peach pie filling, divided
1 ready-to-use graham cracker crumb crust (6 oz.)
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup cold milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Spread half the peach pie filling onto bottom of crust.
  • Beat cream cheese in large bowl with whisk until creamy. Gradually beat in milk. Add dry pudding mix; beat 2 min. Gently stir in half the COOL WHIP; spread over filling in crust. Cover with remaining COOL WHIP and pie filling.
  • Refrigerate 3 hours or until firm

1 package (4 oz.) Jell-O Orange Flavor Gelatin
1 cup boiling water
1 cup vanilla ice cream
1 cup drained diced peaches
1 tub (8 oz.) Cool Whip, defrosted
1 ready made graham cracker pie crust

Steps:

  • Empty contents of Orange Jell-O into a large mixing bowl. Pour 1 cup boiling water over the Jell-O and stir until all dissolved.
  • Stir vanilla ice cream into Jell-O mixture until all dissolved. Add drained diced peaches and allow to chill but not set, about 15 minutes.
  • Gently fold Cool Whip into the chilled Jell-O mixture. Pour into ready made graham cracker pie crust. Chill two hours before serving.
