1/4 cup creme de menthe
1 cup honey
1 pint sour cream (or I have used 1/2 sour cream and 1/2 lite Cool Whip)
3 -5 drops green food coloring, if you wish
fresh mint leaves, for garnish
fresh fruit, cut into bite-size pieces (Strawberries, grapes, pineapple, melon balls, etc.)

Steps:

  • Mix the first four ingredients together well.
  • (I used a hand mixer).
  • Leave in the refrigerator for a few minutes to set.
  • Garnish with fresh mint leaves.
  • Serve with fresh fruit.

1 (8 ounce) package cream cheese, softened
1 (7 ounce) jar marshmallow cream
1/2 cup canned crushed pineapple, drained
1 teaspoon grated orange rind
1/2 teaspoon triple sec or 1/2 teaspoon other orange-flavored liqueur
1/8 teaspoon ground ginger

Steps:

  • Combine all ingredients in a small bowl; stir well.
  • Cover and chill.
  • Serve with fresh fruit.

1 cup 2% low-fat milk or 1 cup nonfat milk
1 (3 1/2 ounce) package reg. vanilla instant pudding mix or 1 (3 1/2 ounce) package fat-free instant vanilla pudding mix
3 tablespoons orange juice
1/8 teaspoon ground cinnamon
1/8 teaspoon almond extract
1 cup frozen whipped topping, thawed (creamy, reg., lite, or fat-free works well)
fresh fruit (strawberries or red grapes or green grapes or melon cubes or bananas or even canned pineapple chunks)

Steps:

  • In a medium or large bowl whisk together milk, pudding mix, oj, cinnamon, and almond extract until combined.
  • With a spatula fold in the whipped topping until it's just combined.
  • Transfer to a serving bowl (chill till ready to serve unless you're serving it directly after making it). Serve with fruit.

1 cup whipping cream
1/4 cup sugar
1 lemon, zested and juiced
pineapple juice

Steps:

  • Soften cream cheese then whip with the powered sugar. Then whip cream and sugar together until it forms soft peaks. Combine beaten cream cheese whipped cream lemon juice and zest; continue to beat adding just enough pineapple juice to achieve desired consistency. Serve with fresh fruit tray or fruit salad.
