1 medium cucumber
1 package (3 ounces) lime gelatin
1 teaspoon salt
1/2 cup boiling water
1 cup mayonnaise
1 cup 4% cottage cheese
1 small onion, grated
Optional: Sliced cucumbers and fresh parsley

Steps:

  • Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.

1 large cucumber, peeled and shredded
1 (3 ounce) package lime flavored Jell-O® mix
1 ¼ cups boiling water
1 tablespoon white sugar
1 pinch salt
1 tablespoon white vinegar
½ cup mayonnaise

Steps:

  • Place the shredded cucumber in a colander to drain. In a medium bowl, whisk together the gelatin mix and hot water until gelatin has dissolved. Mix in the sugar, salt and vinegar. Set aside to cool until it starts to set, about 1 hour.
  • When the gelatin has thickened, stir in the mayonnaise, and fold in the drained cucumber. Transfer to a mold or serving bowl, and chill for 3 hours, or until set.

This is a very simple recipe from one of the best cooks ever -- my grandmother. The proportions are a little ambiguous, use your eye -- that's how the best cooks do it! The secret -- be sure and dry the cucumbers well!

3 cucumbers
1 onion, cut into very thin slices
salt and pepper to taste
2 cups fat free sour cream

Steps:

  • Peel cucumbers, but leave a little on for color and slice by hand as thin as possible. Dry slices with paper towels.
  • Place dried cucumber slices in a large bowl with onion slices. Generously season with salt and pepper. Toss well and let sit 10 minuets, drain any excess liquids.
  • Toss cucumbers and onions in with enough sour cream to coat. Refrigerate until well chilled. Stir, and season with salt and pepper to taste if needed.

I got this recipe from a good friend of mine several years ago. I always make it when my cucumbers are ready in the summer. It has a sweet & tangy flavor and the longer you leave the onions and cucumber set in the dressing the more they soak up the great taste! As for servings, I've never really measured but it makes a large bowl full. We usually have enough for 2 meals. Try it for yourself!

2 cups elbow macaroni, uncooked
1 cup grape tomatoes, each cut in half

1/4 cup light sour cream
3/4-1 cup mayonnaise, use any amount to taste

  • Sprinkle the diced cucumber with the 1/2 tsp of salt and let sit in a collander over a bowl for about 20 minutes to draw out the liquid. Shake off any extra liquid.

1 Tbsp vegetable oil
2 medium cucumbers very thinly sliced
1 medium sweet onion very thinly sliced (vadalia works great)

3/4 c apple cider vinegar
1 Tbsp yellow mustard
1 Tbsp dried parsley
1 tsp salt and pepper
1/2 tsp garlic powder

  • 1. TO MAKE THIS TO EAT RIGHT AWAY: Cook the pasta al dente. Drain and rinse in cold water. Place in large bowl: stir in oil,cucumbers and onion.

TO MAKE THIS TO FREEZE AND ASSEMBLE LATER: Here is what I changed from about recipe so that you can freeze the cucumber part and add the rest of ingredients later: I combine the cucumbers,onion,sugar and vinegar. (leave out the water if freezing) Then you simply take this mixture out of the freezer,Do not drain the frozen cucumber mixture. let it thaw, and add the rest of ingredients.
  • 4. Very refreshing and different! If you freeze it, you can have the taste of summer any time you wish! When I do make it and not freeze it, I do not add as much water as listed. I find that the cucumbers have plenty of water after sitting in fridge for 4 hours. Add water to suit your taste if you make it to eat right away.If I froze it, I dont add the water at all.

1/4 c white vinegar
2-3 tablespoons sour cream
2 tsp salt
1 tsp pepper
handful fresh dill

  • 1. Wash and peel the cucumber. Slice into thin/medium-thin slices. Mix in bowl with vinegar, salt and pepper, and chill in fridge for about 2 hours.

1/2 teaspoon sesame oil
1 tablespoon rice wine vinegar (or white wine vinegar)

1/2 teaspoon minced garlic
1 pinch salt and pepper
2 English cucumbers (or seedless or regular)
1/2 red onion
1 avocado
2 tablespoons sesame seeds or 2 tablespoons finely chopped peanuts

Steps:

  • For dressing, mix first 8 ingredients in a container and shake well.
  • Refrigerate for a couple of hours to blend the flavors.
  • Slice onion very thin and place in ice water for half hour.
  • Dry onion with paper towels before using.
  • Peel cucumbers and slice thin.
  • Place in a bowl, pour on dressing and mix well.
  • Peel and slice avocado.
  • Arrange cucumbers (don't pour out the dressing), onion, and avocado individually on a plate (they can be mixed but I like the way they look individually).
  • Drizzle the remaining dressing on the onion and avocado.
  • Sprinkle with sesame seeds or peanuts.

1 super big cucumber
1 teaspoon salt
1/4 red onion, chopped
1/3 cup approximately Mexican crema or 1/3 cup sour cream
ground black pepper

Steps:

  • Peel the cucumber and slice very thin. Put in a bowl and toss with the salt; chill one hour. Drain (I don't do a lot of salt and in the future will rinse), then pat dry. Return to bowl and stir in the Crema and onion, season with fresh ground pepper. Chill and serve.
  • The original recipe called for re-constituted dried onion flakes (ugh) and pickled cherry peppers, which I didn't have. It also called for some sugar, but the Mexican crema was perfectly sweet enough for me. Should I ever find the pickled peppers, though, I'd like to try adding them.

DRESSING:
1 16 ounce container low fat (or fat free) sour cream
3 Tbsp low fat mayonnaise
1 1.4 ounce envelope vegetable soup mix (i use knorr)
1 tsp dill, dried
SALAD:
1 large cucumber, peeled, seeded and chopped
1/2 c chopped red bell pepper
1/2 c chopped yellow bell pepper
1/2 c chopped orange bell pepper
1/4 c sweet onion, diced
1 pt grape tomatoes, rinsed and drained

1 1/2 cups long-grain white rice
Salt
2-3 cucumbers, peeled, seeded, and finely chopped
1/2 cup finely chopped parsley
3 T. chopped dill
2 T. chopped mint
1/4 cup finely sliced scallions, including some of the greens
1/4 cup champagne vinegar or white wine vinegar
3 T. extra virgin olive oil
1/2 cup yogurt
Green oakleaf, Boston, or butter lettuce leaves

Steps:

  • Bring 2 quarts water to a boil in a medium pan. Add the rice and 2 tsp. salt and boil until tender, 12-15 minutes. Meanwhile, put the cucumbers in a large bowl with the herbs. In a small bowl, combine scallions, vinegar, oil, and 1/4 tsp. salt. When the rice is done, pour it into a colander, rinse briefly, then shake off as much water as possible. Put the warm rice into the bowl with the cucumbers, add the dressing and yogurt, and toss gently with a wide rubber spatula. Taste for salt and tartness. Certain types of rice will absorb more vinegar and salt than others. Serve tepid or chilled, mounded on plates and garnished with light green lettuce leaves.

½ cup diced red onion

2 avocados - peeled, pitted and diced

  • Place the cucumber slices into a colander set in the sink, and sprinkle with salt. Set aside and allow to drip.
  • In a salad bowl, mix together the red onion, red bell pepper, lime zest and juice, cilantro, sugar, curry powder, and hot pepper sauce until thoroughly combined and the sugar has dissolved. Drain the cucumber slices, and pat them dry with paper towels. Stir the cucumbers into the salad. Gently toss the avocados with the salad and serve.
