1 boneless fully cooked ham (3 to 4 pounds)
1/2 cup water
1 cup honey
1/2 cup packed brown sugar
1 teaspoon ground cloves
1/2 teaspoon ground mustard

Steps:

  • Score the ham, making diamond shapes 1/2 in. deep. Place on a rack in a well-greased foil-lined roasting pan. Add water to pan. In a small bowl, combine the honey, brown sugar, cloves and mustard; pour over ham., Bake, uncovered, at 325° for 1 to 1-1/2 hours or until a thermometer reads 140°, basting with pan juices often. Add additional water to the pan if necessary.

1/2 fully cooked bone-in ham (6 to 7 pounds)
2 tablespoons whole cloves
1 cup packed brown sugar
2/3 cup orange juice
1/2 cup unsweetened pineapple juice
1/3 cup maraschino cherry juice

Steps:

  • Place ham on a rack in a shallow foil-lined roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove into each diamond. Cover and bake at 325° for 2 hours., Meanwhile, in a small saucepan, bring the brown sugar and juices to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until glaze is reduced to 1 cup. , Baste ham with 1/3 cup glaze. This is the ham that led directly to whatever childhood memory caused someone to combine ham and pineapple on a pizza. The sweet, slightly fiery and herbaceous crust on this salty haunch practically calls out for a garnish of caramelized pineapple, if not a spray of maraschino cherries. Others may reverse course and apply mustard. Either way, it is good to serve with a nutty wild rice or potatoes au grain, something with backbone.

1 7-to-8-pound bone-in ham
Whole cloves
1½ teaspoons dry mustard powder
1 cup brown sugar
¼ cup dry sherry

Steps:

  • Heat oven to 325 degrees. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, to create a diamond pattern across the meat. Stud each diamond with a whole clove.
  • Add a cup or two of water to the bottom of the pan, then bake the ham, uncovered, 25 minutes to the pound if it is ready-to-cook, about half that if it is ready-to-eat.
  • Combine the mustard and the brown sugar in a bowl, then add the sherry to make a thick paste. Spread the mixture over the ham approximately 20 minutes before it is ready to remove from the oven, then bake until crust has formed.

As long as I can remember, my favorite room's been the kitchen. My glaze dates back to shortly after my husband (of 23 years now) and I were married. My parents were visiting, I cooked a Sunday ham with this glaze-and I've done it that same way from then on. Since my husband made his career in the Air Force, we spent years in the city or living in close quarters. When he retired, we decided to plant roots here where we could experience the daily wonder of God's creation. (The rise and set of the sun, silhouetting the mountains in the distance, is breathtaking.) Our children are 17 and 11.

1 can (20 ounces) sliced pineapple
1/2 spiral-sliced fully cooked bone-in ham (8 to 10 pounds)
2/3 cup maraschino cherries
1-1/2 cups packed brown sugar
1/2 teaspoon seasoned salt

Steps:

  • Drain pineapple, reserving juice. Place ham on a rack in a shallow roasting pan. Secure pineapple and cherries to ham with toothpicks. Combine brown sugar and seasoned salt; rub over ham.
