CONSOMME PORK CHOPS AND RICE
This is a very easy and good pork chop recipe that I have been making for 30 years. This recipe could be cut in half and baked in an 8X8 pan instead.

Steps:
- Preheat oven to 350 degrees.
- Over medium high heat in dutch oven on the stove, combine rice, butter and onion. Cook until rice is lightly browned, butter melted and onion soft.
- Add 2 cans Consomme Beef soup
- Add 1 can water.
- Add 1/2 teaspoon fresh ground black pepper.
- Bring to a boil.
- lightly spray a 9X13 pan and pour mixture into sprayed pan; distributing mixture evenly.
- lay pork chops in a single layer over the top.
- Bake for 1 hour uncovered.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the oil in a skillet over medium heat. Place the flour in a shallow dish. Season pork chops with salt and pepper, and press in the flour to lightly coat. Place chops in the skillet, and lightly brown on both sides. Drain on paper towels.
- In a large baking dish, mix the rice, consomme, and water. Arrange onion slices over the rice. Top with pork chops.
- Bake in the preheated oven 1 1/2 hours, or until rice is tender and pork is done.

BETTE'S PORK CHOPS AND RICE CASSEROLE
This is the recipe my son ALWAYS asks for when he comes home. I got it from his Gramma Betty, who when I divorced her son, still considered me a member of her family. Steps:
- 1. Preheat oven to 350*. Spray a large casserole (2.5 Qt) with Pam.
- 2. Dredge the pork chops in flour, and brown in a skillet with 2-4 Tbs of EVOO
- 3. Pour 3/4 C of uncooked Rice into prepared casserole dish.
- 4. Top with a generous sprinkle of dried onion flakes.
- 5. Place browned pork chops on the rice/onion mixture.
- 6. Pour undiluted can of Beef Consomme Soup over all. Cover with casserole lid or aluminum foil.
- 7. Bake at 350* for 45 minutes. Remove cover, bake an additional 15 minutes. Serve.
- 8. OPTIONAL:I had some leftover french fried onions after Thanksgiving this year. The last 15 min of baking this I added 1/2-1 Cup of the french fried onions an absolute 4-STAR improvement on a recipe I didn't think could be improved!!!
CONNIE'S PORK CHOPS OVER RICE
I was very pleasantly surprised at how nicely this came together. It is super easy, not terribly expensive and the end result is delicious. It is a very warm, inviting and comforting meal. My family loved it and we'll be making it many more times.

Steps:
- 1. Gather all ingredients.
- 2. Spray hot cast iron skillet with Crisco oil spray.
- 3. Salt and pepper both sides of pork chops. Brown pork chops on both sides. This will take about 25 minutes total.
- 4. Place uncooked rice in bottom of a casserole dish that has a cover.
- 5. Place browned pork chops over rice.
- 6. Add 1 cup of water to hot skillet and scape off the browned bits.
- 7. Pour undilated beef consomme' and skillet drippings over pork chops and rice.
- 8. Cover and bake 50 minutes at 350 degrees. Times may vary based on thickness of the pork chops.
- 9. Enjoy!

- Sprinkle chops with a little salt, pepper and garlic powder.
- dredge chops in flour and set aside.
- pour oil into large skillet and cook the chops in hot oil until golden brown on both sides.
- set chops aside.
- spray baking dish with non stick spray.
- combine beef consomme,4 cups of water and rice into baking dish.
- sprinkle salt and pepper and stir with a fork.
- add chops to rice mix.
- cover with foil and bake at 350 for 40 minutes.
- take out of oven and remove foil.
- stir in 2 tablespoon of butter.
- bake an additional 30 minutes or until rice is done. additional water may need to be added.

DECADENT PORK CHOPS & RICE
An old friend gave me this recipe several years ago, the first time I made it my mother fell in love with it and she would make it so much, because it is so easy, that we all got sick of it. But it really is a good recipe if you don't over cook it.

- Place uncooked rice in bottom of a greased dish.
- Cover rice with sliced onion.
- Lay pork chops over onion and rice.
- Salt and pepper.
- Pour beef consomme and water over all.
- Bake in covered dish for 1 hour at 450 degrees F.
- I always decrease the rice it calls for because, we are not big rice eaters.
