BANANA RAISIN BRAN MUFFIN image

Yield 12 Muffins

Number Of Ingredients 11

1 cup boiling water
1 cup Shiloh Farms Coarse Bran
1/3 cup Honey of Agave Nectar
1/4 cup Oil, Veg or Coconut
2 large Eggs
1 1/2 cup White or Spelt Flour
1 1/2 t. Baking Soda
1 cup plain Yogurt
1 cup raisins
2/3 cup mashed banana
Flax Seeds or Nuts, optional

Steps:

  • 1. In a small saucepan, mix bran and boiling water. Remove from heat and let sit for 10 minutes. 2. Mix honey, oil and eggs in a large bowl. Add flour, soda, and yogurt. Stir in bran mixture, raisins, and banana. Do not overmix. 3. Spoon into lined muffin pan, 2/3 full. Bake at 350 degress for about 25 minutes.
