COMFORTING TUNA PATTIES



Comforting Tuna Patties image

My grandmother and mother made these tuna patties on Fridays during Lent. I'm not the biggest fan of tuna, but it's perfect in this dish. These patties are even good cold the next day, if there are any leftovers. -Ann Marie Eberhart, Gig Harbor, Washington

2 tablespoons butter
3 tablespoons all-purpose flour
1 cup evaporated milk
1 pouch (6.4 ounces) light tuna in water
1/3 cup plus 1/2 cup dry bread crumbs, divided
1 green onion, finely chopped
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Oil for frying

Steps:

  • In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

5 oz tuna, 2 cans, drained
1 large avocado, diced
1 cup carrot, finely chopped
2 ribs celery, finely chopped
¼ cup red onion, finely chopped
¼ cup dijon mustard
1 tablespoon lemon juice
½ teaspoon garlic powder
salt, to taste
pepper, to taste
4 whole wheat tortillas
4 leaves green leaf lettuce
1 cup cherry tomatoes, halved

Steps:

  • In a large bowl, add the tuna and avocado. Use a fork to smash the avocado and tuna together.
  • Add the carrots, celery, red onion, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir to combine.
  • Lay a tortilla flat on a plate. Lay a lettuce leaf on the tortilla. Scoop ¼ of the tuna mixture into the center of the lettuce and spread down the middle. Top with cherry tomatoes and carefully roll the the tortilla to create a wrap. Repeat with the remaining ingredients.

1 (6 ounce) can tuna, drained and flaked
2 tablespoons chopped green bell peppers
2 tablespoons chopped red bell peppers
2 tablespoons chopped yellow bell peppers
2 tablespoons green onions, sliced
4 teaspoons Dijon mustard
2 slices reduced-fat sharp cheddar cheese, halved
4 large leaves lettuce leaves

Steps:

  • Mix tuna, peppers, onion, and mustard.

1 pound fresh tuna
1 cup extra virgin olive oil
2 cloves garlic, smashed
3 sprigs fresh thyme
4 2-inch strips lemon peel
4 teaspoons capers, drained; more for garnish
1/2 tablespoon minced shallots
2 tablespoons Dijon mustard
1 tablespoon sherry vinegar
1/2 tablespoon chicken stock
3 1/2 tablespoons grape seed oil
Salt and ground black pepper
Toasted country bread for serving

Steps:

  • Place tuna in a bowl, cutting it into several pieces if necessary. Add olive oil, the garlic, thyme and lemon peel. Cover, and marinate 6 hours, refrigerated or at room temperature, or overnight in the refrigerator.
  • Transfer contents of bowl to a saucepan, bring to a simmer, lower heat and cook 5 minutes. Shut off heat. Tuna will still be pink in middle. Let cool 30 minutes.
  • Remove tuna, drain well, transfer to a bowl and mash coarsely with a fork. Fold capers, shallots, mustard and sherry vinegar into tuna. Whisk 2 tablespoons of the olive oil with chicken stock and grape seed oil. Fold into tuna. Season with salt and pepper. (Mixture should be fairly loose.)
  • To serve at once, place mounds of tuna on each of 6 salad plates, scatter with more capers and serve with toast, as a first course. Otherwise, refrigerate tuna until 30 minutes before serving; then divide onto plates and serve.

3 tablespoons Japanese soy sauce
2 tablespoons Japanese sweet rice wine (mirin) or dry sherry
1 tablespoon Chinese or Japanese sesame oil
3/4 teaspoon freshly ground black pepper
4 1-inch thick pieces tuna steak, each 4 ounces
1 1/2 tablespoons olive oil
3 tablespoons finely minced scallions
2 tablespoons finely minced garlic
1 tablespoon finely minced fresh ginger
1 tablespoon finely minced shallots
1 teaspoon finely minced fresh red chili (seeded)
1/4 cup finely minced carrots
1/4 cup finely minced zucchini
2 tablespoons finely minced sweet red pepper
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon sugar
1 tablespoon finely minced fresh coriander
1 1/2 tablespoons peanut oil

Steps:

  • In a small bowl combine the soy sauce, rice wine, sesame oil and one-fourth teaspoon pepper. Place the tuna on a plate, spread the mixture evenly over the tuna on both sides, cover with plastic wrap and refrigerate for two hours.
  • Heat a wok or a heavy skillet. Add the olive oil, then the scallions, garlic, ginger, shallots and chili. Stir- fry for one minute, then add the carrots, zucchini and red pepper. Stir-fry another minute, then add the cumin, salt, sugar and remaining black pepper. Stir-fry another minute, remove from heat, stir in the fresh coriander and set aside.
  • Just before serving remove the tuna from the marinade, reserving the marinade. Pat the tuna dry on paper towels.
  • Clean the wok or skillet and reheat it over high heat. Add the peanut oil. Add the tuna; reduce the heat to medium and sear on one side. Turn the tuna over and sear on the other side, long enough to brown the outside but keeping the inside rare. Remove the tuna to warm plates. Alternatively, the tuna can be brushed with the oil and grilled or broiled.
  • Pour the marinade into the wok or skillet and bring to a boil. Pour the heated marinade over the tuna and spoon the vegetable mixture on top. Serve at once.
