1/2 cup butter, softened
2 large eggs
1 teaspoon vanilla extract
1 package Funfetti cake mix

Steps:

  • In a large bowl, beat butter, eggs and vanilla until combined. Beat in cake mix. Refrigerate, covered, 2 hours or until firm enough to roll. , Preheat oven to 350°. On a well-floured surface, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until set. Remove from pans to wire racks to cool completely. Decorate as desired. Freeze option: Transfer dough to a resealable plastic freezer bag; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare and bake cookies as directed; decorate as desired.

Fun for holidays, birthdays, and other occasions, easy cake mix cookies are a time saver in the kitchen. Sprinkles are a fun addition to these festive cookies.

15 oz box white cake mix (dry mix only)
1/3 cup oil
2 large eggs
1 cup unsalted butter (softened)
6 cups powdered sugar
Milk or water to thin frosting if needed
2 teaspoons vanilla extract
Christmas sprinkles

Steps:

  • Preheat oven to 375 degrees F. Line baking sheets with parchment paper or silicon baking mats.
  • In a large bowl with a wooden spoon stir together the cake mix, oil, eggs and 1 tablespoon of the Christmas sprinkles until well mixed.
  • Using about 1 1/2 tablespoons of dough, shape into balls and place onto prepared cookie sheet with plenty of space in between.
  • Flatten the cookies slightly using the palm of your hand or the bottom of a flat glass.
  • Bake 8-10 minutes or until edges are light golden brown.
  • Remove to wire racks to cool completely.
  • In a large bowl using hand mixer beat together the butter, powdered sugar and vanilla extract until light and fluffy.
  • If your frosting is too thick you can add 1 tablespoon of milk or water at a time until desired consistency is achieved.
  • Generously spread each cookie with frosting and sprinkles.

1/3 cup unsweetened baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick-cooking or old-fashioned oats
1 cup miniature candy-coated milk chocolate baking bits
1/2 cup softened butter
2 tablespoons water
1/2 teaspoon vanilla
3 egg

Steps:

  • In medium bowl, mix sugar, flour, cocoa, baking soda and salt. In 1-quart jar with tight-fitting lid, place mixture; tap lightly to pack. Top with oats and baking bits; cover.
  • Give with gift card that reads: To make cookies, heat oven to 350°F. In large bowl, place contents of jar, butter, water, vanilla and egg. Stir 30 seconds with spoon or until combined. On ungreased cookie sheets, spoon dough by rounded teaspoonfuls 2 inches apart. Bake 10 to 12 minutes or until edges are set. Cool 5 minutes; remove from cookie sheets to cooling racks.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.

1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
1 egg
2 teaspoons vanilla
1 box Betty Crocker™ Super Moist™ white cake mix
1/4 cup green, red and white candy sprinkles
1 container Betty Crocker™ Rich & Creamy vanilla frosting
1 tablespoon green, red and white candy sprinkles

Steps:

  • Heat oven to 350°F.
  • In large bowl, beat cream cheese and softened butter with electric mixer on medium speed about 1 minute or until well blended; scrape side of bowl. Beat in egg and vanilla until smooth. On low speed, beat in cake mix until blended. Beat in 1/4 cup sprinkles. Cover and refrigerate 30 minutes.
  • Drop dough by rounded tablespoonfuls 2 inches apart on ungreased cookie sheets.
  • Bake 12 to 14 minutes or until edges are light golden brown. Cool on cookie sheet 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.
  • Using knife, spread slightly less than 1 tablespoon frosting over top of cookie, and immediately top with sprinkles. Repeat with remaining cookies. Store in airtight container at room temperature.
