This is a simple but delicious way to serve cauliflower. American cheese can easily be substituted for Cheddar if you would rather eat American cheese.

2 heads cauliflower
1 ½ cups sour cream
1 ½ cups shredded Cheddar cheese
1 tablespoon butter
1 cup bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch casserole dish.
  • Break cauliflower into florets, place in large covered saucepan and steam until tender.
  • Place cauliflower in casserole dish; gently stir in sour cream and cheese.
  • In a saute pan over medium heat, melt butter; add bread crumbs and evenly coat.
  • Sprinkle bread crumbs over cauliflower mixture and bake for 25 to 30 minutes.

My family LOVES this dish! Lots of prep, but worth every minute!

Number Of Ingredients 14

1 large cauliflower, small florets
1/3 c green bell pepper
1/3 c orange bell pepper
1/3 c yellow bell pepper
1 c diced onion
1 pkg raw mushrooms, rough chopped
1 jar(s) pimento (small jar) diced
1 bunch green onion diced
1/4 c butter
1/3 c all purpose flour
2 c milk
1/4 tsp cayenne pepper
1 tsp salt
1 c velveeta cheese shredded or a mix of cheddar & swiss shredded

Steps:

  • 1. Cook cauliflower in boiling, salted water until barely tender, Drain
  • 2. While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.
  • 3. In a large skillet saute onion, mushrooms and peppers in butter until tender.
  • 4. Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened
  • 5. stir in salt, cayenne & cheese. Cook until cheese is melted.
  • 6. in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly
  • 7. Sprinkle green onion and pimiento mix over the top. Serve! Good left over but does not freeze well.
