Sweet Potato Cake image

I tweaked this recipe from one I found on the can of Bruce's Sweet Potato Pie filling. This was much easier and tasted SOOOO much better! It's a simple, easy, and perfect holiday and fall comfort dessert. This was a huge hit with our Ladies in the FCE Club at the Clifton Senior Center. It's also a wonderful way to start your day...

Number Of Ingredients 3

1 box butter pecan cake mix
3 large eggs, beaten
1 can(s) sweet potato pie filling

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour a 13 x 9" cake pan or a standard bundt pan.
  • 2. Beat three eggs in large bowl. Add Sweet Potato Pie Filling and mix thoroughly. Finally, blend in Butter Pecan cake mix until smooth.
  • 3. Pour into cake pan and bake for 40 to 45 min or until inserted toothpick comes out clean. Let cake cool slightly and sprinkle with powdered sugar or pour over Maple Walnut glaze or a caramel sauce.
  • 4. **NOTE: I have a recipe for a Caramel Sauce but there are several recipes on Justapinch that are fabulous. The recipe I posted for the Maple Walnut glaze on the pumpkin spice cake would be awesome, just replace the walnuts with pecans or just leave the nuts out all together.
