TAMMY'S SHRIMP STUFFED CRAB CAKE RECIPE

There's nothing better than a good ole fashion crab cake recipe. But me being who I am I just had to reinvent the wheel. By adding mouthwatering perfectly seasoned shrimp to the mix. And creating what I call shrimp stuffed crab cake. This recipe is phenomenal in every aspect.

1 lb Lump crab
6 jumbo shrimp
1/2 cup Mayonnaise
1 tbsp Dijon Mustard
1 tbsp Worcestershire Sauce
1/4 tsp Old Bay Seasoning
1/4 tsp Cajun Seasoning
1 Egg
1 tbsp Lemon Juice
2 tbsp bread crumbs
Tammy's Cajun Butter Lemon Sauce
butter
old bay
cajun seasoning
smoked paprika
lemon juice

Steps:

  • Preheat oven to 400F
  • Start off with adding mayo, dijon mustard, Worcestershire sauce, egg, old bay seasoning, cajun seasoning, and cedar plank seasoning, and lemon juice to a bowl.
  • Combine all of the added ingredients in a bowl.
  • Cut jumbo shrimp into bite-sized pieces.
  • Add the lump crab to the mayo mixture and fold in the crabmeat. Try not to disturb or break the lumps in the crabmeat.
  • Add shrimp pieces and fold once again.
  • Add breadcrumbs and combine. Add enough breadcrumbs starting off with a small amount at a time.
  • Add non-stick cooking spray to parchment paper and mold the crab patties to your desired size.
  • Place the shrimp stuffed crab patties onto the baking sheet.
  • Add a light sprinkle of paprika and parsley to the top.
  • Bake @ 400F for about 15 minutes Then turn on the broiler for about 2 minutes to brown the crabcakes.
  • Cajun Butter Lemon Sauce
  • Take melted butter and add old bay, smoked paprika, cajun seasoning, fresh parsley, lemon juice and combine.
  • Taking a small bbq brush add the sauce to the top of each shrimp stuffed crab cake.

1 ½ cups Italian-style bread crumbs
1 cup mayonnaise
2 eggs
2 teaspoons dill mustard
2 teaspoons capers with brine
½ lemon, juiced
1 teaspoon Worcestershire sauce
1 teaspoon dried dill
1 teaspoon Creole seasoning
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
3 (4.25 ounce) cans white crabmeat, drained
1 (4 ounce) can tiny shrimp, drained
2 tablespoons canola oil, or as needed

Steps:

  • Combine bread crumbs, mayonnaise, eggs, mustard, capers and brine, lemon juice, Worcestershire sauce, dill, Creole seasoning, garlic, salt, pepper, and garlic powder in a bowl; mix until well combined.
  • Combine crabmeat and shrimp in a small bowl. Fold into the mayonnaise mixture until well blended. Cover and refrigerate for 30 minutes.
  • Remove from the refrigerator and form into 12 patties.
  • Heat oil in a large skillet over medium-high heat. Cook seafood patties in batches in the hot oil, until browned, 5 to 6 minutes per side. Transfer to a paper towel-lined plate and repeat with remaining patties, adding more oil if needed.

3/4 pound raw shrimp, peeled and deveined, tail removed *
2 egg whites
1/4 cup heavy cream
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cumin seeds
1/2 cup 1/4-inch cubes peeled jicama
3 green onions, white parts only, finely chopped
2 tablespoons chopped fresh cilantro leaves
1 1/2 tablespoons rasped or finely grated ginger
3 minced kaffir lime leaves
3/4 pound crabmeat
3 cups panko bread crumbs**
Vegetable oil, for frying
Ginger-Lime Sauce, recipe follows
1 cup sugar
1 cup water
1 cup peeled, thinly sliced, fresh ginger
1 teaspoon kosher salt
1/3 cup cilantro leaves
3 tablespoons lime juice
1 fresh green Thai chile, seeded, roughly chopped***
2 tablespoons roughly chopped green onion, green part only

Steps:

  • Roughly chop the raw shrimp and place in a large bowl.
  • In a small bowl, whip the egg whites with a fork until frothy. Stir in the cream, salt, pepper, and cumin seeds. Combine with chopped shrimp. Mix well with the jicama, green onion, cilantro, ginger, and kaffir lime leaves.
  • Press any excess moisture out of the crab meat in a colander. Combine the crab with the shrimp mixture.
  • Pour the panko into a wide, shallow dish. Scoop out a heaping tablespoon of the shrimp and crab mixture and drop it into the panko. Using your hands, shape the shrimp and crab mixture into round cakes and evenly coat with the panko. Repeat with the remaining mixture and place the crab cakes on a parchment-lined baking sheet. Refrigerate for 30 minutes until firm.
  • Heat a deep fryer to 350 degrees F or heat 3/4-inch of vegetable oil in a skillet over medium heat, just until the surface of the oil begins to gently ripple. Fry the crab cakes, a few at a time, until crispy and golden, about 2 minutes per side. Remove from the hot oil with a slotted spoon or spider and place on absorbent paper to absorb any excess oil.
  • Serve with Ginger-Lime Dipping Sauce on the side.
  • Put sugar, water, ginger, and salt in a heavy-bottomed saucepan. Bring to a boil, then lower heat and reduce to a syrupy consistency (about 15 minutes). Strain through a fine sieve, discard ginger, reserve liquid, and let cool.
  • In a small food processor, pulse cilantro, lime juice, chile, and green onion (about 30 seconds). Add ginger syrup and pulse until combined.
  • Serve at room temperature.

1 garlic clove, chopped
1 shallot, chopped
2 ounces raw shrimp, deveined, shells removed and reserved
1 1/2 teaspoons vegetable oil
1/2 teaspoon paprika
2 tablespoons dry sherry
2 tablespoons heavy cream
salt and pepper
1/2 cup red and yellow bell pepper, finely diced
2 tablespoons butter
2 small eggs, separated
1 cup soft breadcrumbs
cooked crab meat
1 1/2 teaspoons caribbean seasoning
flour, for dusting
1 dash Worcestershire sauce
1 dash Tabasco sauce
salt and pepper

Steps:

  • Finely mince the shrimp and set aside, reserving the.
  • Heat the oil in a small saucepan over medium heat, then saute the shrimp shells with the garlic and shallots.
  • When the shells turn pink, add the paprika and the sherry. Continue to cook until the sherry has reduced by half (this won't take very long).
  • Strain the mixture, and return the liquid to the pan. Add the diced shrimp and the heavy cream. Keep cooking until the sauce thickens (it should coat the back of your spoon). Season with salt and pepper and keep warm.
  • Put the breadcrumbs and crab meat into a medium sized bowl and set aside. With your mixer, beat the egg whites until you get stiff peaks, then fold into the crab mixture.
  • Gently add the peppers, yolks, Caribbean seasoning, Worcestershire and Tabasco sauces.
  • Form the crab mixture into small cakes (you should get six to eight from this recipe) and dust with flour.
  • Fry in the remaining 1 tbsp butter. When they are golden brown, flip and continue to fry until the other side is also golden brown.
  • To serve, pour the shrimp sauce over.

1/4 cup butter, room temperature
1 (5 ounce) jar Kraft Old English cheese spread
1 1/2 teaspoons mayonnaise
1/2 teaspoon garlic powder
1/2 jalapeno, seeded and chopped
1/2-1 teaspoon Old Bay Seasoning
2 (6 ounce) cans lump crabmeat, drained and chopped
1 (4 ounce) can shrimp, rinsed and chopped
6 English muffins, split (wheat is best, regular ones get soggy)
1/2 cup mayonnaise
1 -2 tablespoon horseradish
2 tablespoons seafood cocktail sauce or 2 tablespoons ketchup
3/4 teaspoon chili-garlic sauce (optional)

Steps:

  • Mix butter, cheese, mayo, garlic powder, jalapeno and Old Bay together.
  • Add crab and shrimp.
  • Spread onto muffins (I use quite a bit).
  • Freeze on cookie sheet. When frozen put in zip-lock baggies.
  • Bake frozen in 400 degree oven for 12 minutes.
  • Broil on low for 3 to 5 minutes until browned on top.
  • Cut into fourths, serve with my sauce, cocktail or tarter sauce.

1/4 cup fat-free mayonnaise
2 tablespoons chopped fresh cilantro
1 tablespoon chopped peeled fresh ginger
2 teaspoons bottled Thai fish sauce (nam pla) or 2 teaspoons soy sauce
6 ounces canned crabmeat, drained, picked over, patted dry
3 ounces bay shrimp, chopped
1 1/2 cups fresh breadcrumbs, made from crustless french bread or 1 1/2 cups storebought breadcrumbs
1 1/2 tablespoons peanut oil

Steps:

  • Blend first 4 ingredients in medium bowl.
  • Mix in crabmeat, shrimp and 1/2 cup breadcrumbs.
  • Season with pepper.
  • Place remaining 1 cup breadcrumbs on plate.
  • Drop 1/4 of crab mixture into breadcrumbs; turn to coat.
  • Shape into 2 1/2-inch-diameter cake.
  • Repeat coating and shaping with remaining crab mixture and crumbs, forming total of 4 cakes.
  • Heat oil in heavy medium skillet over medium heat.
  • Add cakes and sauté until crisp, about 5 minutes per side.
