4 large potatoes 1â€"2 cups cheddar cheese, shredded or broken into small pieces 3 tablespoons Bacon Bits or 3 diced cooked bacon slices, W-inch pieces 2 tablespoons thinly sliced green onion garlic powder (optional) sour cream (optional)

Steps:

  • 1 Cut potatoes into wedges, lengthwise, 2 or 4 pieces depending on the size of the potato. Place in microwave-safe dish filled with water to cover potatoes. 2 Cook on high heat for 7 minutes. 3 Remove and test for doneness by poking with a knife. If youcannot scoop out the inside of the potato, return to microwave on high for 1 minute at a time until finished. 4 Scoop out the potato so W-inch thickness remains around shell of potato. 5 Sprinkle cheese over the top and return to microwave for 1â€"2minutes, until cheese is melted. 6 Remove and sprinkle with Bacon Bits, green onion and top with a shake of garlic powder and a dollop of sour cream, if desired.

1 medium to large russet potato
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter

Steps:

  • Poke the potato 4 to 5 times on each side with a fork. Wet a clean sheet of paper towel with water and wring out any excess moisture. Wrap the damp paper towel around the potato and place on a microwave-safe plate. Microwave on high for 5 minutes. Remove the paper towel and flip the potato over.
  • Drizzle the potato with olive oil and sprinkle with salt and pepper. Microwave on high, uncovered, 3 minutes more (see Cook's Note). Use a fork to test for doneness. If the potato is not done, cook in 1-minute intervals until the fork can easily pierce the flesh. Serve with the butter and more salt and pepper.

All cooking is done in the microwave! This is my original recipe that I made up. An easy staple on my table that everyone enjoys and everyone can make. Perfect for snacks or sides or appetizers. I call it 'College Guy' because of how simple they are to make and how little things you need. I am in fact, a woman and have been making these since my not-so-long-ago college days! :)

3 potatoes
3 tablespoons Bacos bacon bits
9 ounces shredded cheddar cheese, 1-3 oz per potato
1 tablespoon margarine (optional) or 1 tablespoon butter (optional)
salt

Steps:

  • Slice potatoes lengthwise.
  • Lay out on a microwave plate, skins down. Carve a vertical line about halfway through the potato. This helps it cook even and is not necessary for smaller or thinner potato strips. You could also carve an "X" shape instead.
  • Microwave on HIGH for 10 Minutes.
  • Take out of microwave and if you want to, spread out margarine or butter thinly over the potatoes. Top each potato with a good handful of shredded cheddar cheese. Sprinkle with Bacos.
  • Microwave on high an additional 2 minutes or until cheese is completely melted.
  • Let potatoes sit for a few minutes. They are usually extremely HOT. Also, be careful handling the plate. After they have cooled, salt to taste and enjoy!

Homemade potato skins are great while watching football or serving at a casual party. There is absolutely no need to deep fry them. As long as the skins are cooked at a high heat, they will be perfectly crispy! After eating these my boyfriend proclaimed, "no need to spend ten bucks at a restaurant anymore!"

6 small russet potatoes, scrubbed
1 tablespoon olive oil, or as needed
1 tablespoon canola oil, or as needed
salt to taste
6 slices center-cut bacon
ground black pepper to taste
½ cup shredded Cheddar cheese, or to taste
¼ cup sour cream, or to taste
2 medium green onions, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Rub potatoes with olive oil and place on a baking sheet.
  • Bake in the preheated oven until tender, about 1 hour. Remove from the oven and let sit until cool enough to handle, about 10 minutes. Increase the oven temperature to 450 degrees F (230 degrees C).
  • Cut potatoes in half lengthwise. Scoop out the flesh, leaving 1/4 inch on the skin. Brush canola oil all over the potato skins, outside and inside, and sprinkle with salt. Reserve flesh for another use.
  • Bake skins in the preheated oven for 10 minutes. Flip and continue to bake for 10 minutes more. Remove from the oven. Turn on the oven's broiler.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Arrange the potato skins flesh-side up on a roasting pan or rack. Sprinkle the insides with pepper, Cheddar cheese, and crumbled bacon. Return to the oven and broil until cheese is bubbly, about 2 minutes. Remove from the oven.
  • Add a dollop of sour cream to each skin and sprinkle with green onions.
