Roasted Onions image

I love these with steaks, roasts, or pork chops! Great to just throw in the oven and get on with the rest of your meal. If your red onions are large, reduce the number to two and cut into sixths instead of quarters. From Southern Living.

1/4 cup(s) light brown sugar, firmly packed
1/4 cup(s) olive oil
1/4 cup(s) balsamic vinegar
1/2 teaspoon(s) salt
4 small red onions, quartered
1 pound(s) white pearl onions
1 pound(s) cipollini onions
1 pound(s) shallots

Steps:

  • Preheat the oven to 450 degrees. Whisk together the brown sugar, olive oil, balsamic vinegar, and salt in a large bowl.
  • Toss the onions with the oil mixture. Arrange in a single layer on a lightly greased 17 x 12 inch jelly roll pan.
  • Bake at 450 degrees for 30 to 40 minutes or until tender and golden brown, stirring twice during the cooking time.
