HERB-LOADED CHICKEN NOODLE SOUP



Herb-Loaded Chicken Noodle Soup image

Kick your classic homemade chicken noodle soup up a delicious notch by loading it up with loads of fresh Italian herbs. (Suggestions included below for dried herbs, too, in case fresh herbs are not available!)

2 tablespoons olive oil
1 small white onion, peeled and diced
2 medium carrots, peeled and diced
2 stalks celery, ends trimmed and diced
4 cloves garlic, minced or pressed
8 cups (64 ounces) good-quality chicken stock
3 sprigs fresh rosemary*
3 sprigs fresh thyme*
1 sprig fresh sage*
6 ounces wide egg noodles
2 cups shredded cooked chicken
salt and pepper
1/2 cup loosely-packed chopped fresh parsley
1/3 cup loosely-packed chopped (or julienned) fresh basil

Steps:

  • Heat oil in a large stockpot over medium-high heat. Add onion and sauté for 4 minutes, stirring occasionally. Add carrots and celery and sauté for an additional 3-4 minutes, or until the carrots are softened a bit, stirring occasionally. Add garlic and sauté for an additional 1-2 minutes, or until fragrant, stirring occasionally. Add chicken stock, rosemary, thyme and sage, and gently stir until combined. Continue cooking until the soup reaches a simmer.
  • Reduce heat to medium-low, and stir in the egg noodles and chicken. Continue cooking for 8-10 minutes or until the egg noodles are al dente. (The longer they cook, the more broth they will soak up. Feel free to add more chicken stock if needed.)
  • Remove and discard the rosemary, thyme, and sage sprigs (no worries if some of the leaves have dropped off). Taste the soup, and season with salt and pepper to taste.
  • Serve warm, garnished with extra black pepper, fresh parsley and fresh basil.

1/2 cup red onion, diced fine
1/4 cup celery, diced fine
1 tablespoon fresh garlic clove, minced well
1 tablespoon dried parsley
1 teaspoon dried thyme
1/2 teaspoon seasoning salt
2 teaspoons dried dill weed
1 cup mayonnaise (more or less to taste)
1 tablespoon lemon juice
4 cups chopped chicken (I use Rotisserie left over from Costco)

Steps:

  • Mix Mayo and lemon juice together. Add dried spices and mix well. Add rest of ingredients mix well and chill for atleast 2 hours. Enjoy!

1 (3 lb) chicken, cut up
4 cups chicken stock
1 bay leaf
1 onion
1 stalk celery
1 carrot
1/2 cup butter
1/2 cup flour
2 cups milk
2 cups cream
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon chives
1/8 teaspoon nutmeg
1/2 teaspoon turmeric or 1/2 teaspoon saffron
3/4 cup cooked rice
salt and pepper
chopped parsley

Steps:

  • Cook chicken in broth with onions, celery and carrots.
  • approx 1 1/2 hours.
  • remove skin and bones, chop chicken, skim fat.
  • Return chicken to the pot, add herbs and rice.
  • In a seperate pot, melt butter, add flour, whisk for 1 min, slowly add your cream and milk and whisk over low heat till thickened.
  • Add to the pot with the chicken, rice and broth, stirring till smooth and thick.
  • Heat through.
  • Serve with parsley on top.
  • Enjoy!

3 sprigs fresh tarragon, plus 1 tablespoon chopped
3 sprigs fresh thyme
1 bay leaf
1 small onion, chopped
2 medium carrots, sliced
1 stalk celery, sliced
3 long strips lemon zest
4 bone-in chicken breast halves (about 2 1/2 to 3 pounds), skin removed
4 cups canned low-sodium chicken broth, or homemade
1 bunch medium asparagus, thick ends trimmed, cut into 1-inch segments
1/3 cup fresh or frozen peas
5 medium shiitake mushrooms, stemmed and sliced

Steps:

  • 1. Tie parsley, tarragon, and thyme sprigs and bay leaf together with kitchen twine and place in a large saucepan with onion, carrots, celery, lemon zest, and chicken breasts. Pour in broth and bring to a boil over high heat. Immediately reduce heat to low and skim surface. Cover and cook until chicken is firm to touch, about 20 minutes. Remove from heat and transfer chicken to a platter. When chicken is cool enough to handle, pull meat in large strips from bones; discard bones.

2 cooked chicken breasts, diced
1 small onion, diced

12 stalks asparagus, cut into 1-inch pieces
12 ounces frozen home-style noodles
1/2 cup half-and-half

2 cups fresh peas
2 heads lettuce
1 clove garlic
1 white onion
1 cup chicken broth
6 cups milk or light cream
1 teaspoon of salt
1/2 teaspoon black pepper
1 loaf crusty, peasant-style bread
1/4 cup fresh lemon juice
2 teaspoons salt, plus more to taste
1/2 teaspoon freshly ground pepper, plus more to taste
1/2 cup olive oil
2 tablespoons fresh tarragon, coarsely chopped
2 scallions, minced
3 tablespoons minced flat-leaf parsley
1 teaspoon lemon zest
2 cups white wine
2 cloves garlic
1 onion, coarsely chopped
1 chili pepper, sliced in half
3 black peppercorns
3 chicken breasts, on the bone, split in the middle

Steps:

  • To make the soup, combine the peas, the lettuce, the garlic, the onion and the chicken broth in a large pot and bring to a boil. Cover and simmer until the peas are tender, about 15 minutes. Remove from heat and pass through a food mill. Whisk in the milk or cream to desired consistency, season and refrigerate.
  • To make the salad, cut the bread loaf in half and cover with cold water. Soak for 30 minutes. Drain and wring with a dish towel. Combine the lemon, salt and black pepper in a large bowl. Slowly whisk in the oil. Add the tarragon, scallions, parsley and lemon zest and stir. Add the bread and stir well. Chill, stirring frequently to completely incorporate. After the salad is cold, adjust the seasoning.
  • To make the chicken, place all the ingredients in a shallow pan and bring to a boil. Reduce heat to medium, cover and steam for 20 minutes. Remove from heat and keep covered until chicken reaches room temperature. Strain and reserve liquid for another use. Slice the chicken.
  • To serve, ladle the soup into 6 bowls, garnish with the salad and fan the chicken slices around it.
