I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

Number Of Ingredients 11

1/2 cup oil
2 cups brown sugar
2 eggs
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla (can use 2 teaspoons)
1 cup strong black coffee
12 ounces chocolate chips (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large cookie sheet.
  • In a bowl combine oil, sugar and eggs, beat until well combined.
  • In another bowl, combine dry ingredients, except chocolate chips, then add to the oil/sugar mixture; mix well.
  • Add the vanilla and coffee; mix until combined.
  • Stir in chocolate chips.
  • Spread on a cookie sheet.
  • Bake for about 35 minutes or until bars tests done.
  • Cool and cut into squares.
  • Delicious!

This cake is not a typical "Coffee Cake" with cinnamon. It is a chocolate chip cake with real coffee. My family gobbles these squares up.

Number Of Ingredients 9

1/2 cup margarine or 1/2 cup butter
1 1/2 cups brown sugar
1 egg
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 cup warm coffee
1/2 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees.
  • Cream the margarine or butter with the sugar.
  • Add the egg and mix.
  • Then blend in the rest of the ingredients except the chips.
  • Spread into a greased 9x13" baking pan.
  • Sprinkle the chocolate chips on top.
  • Bake for 30-35 minutes.
  • Cool and then cut into squares.

1 c raisins
2 c water
1/2 c shortening
1 large egg
1 c sugar
2 1/2 c flour, sifted
1 tsp baking soda
1 tsp salt
1/2 tsp cloves
1/2 tsp cinnamon
FROSTING
1 c powdered sugar
2 Tbsp milk, approx
1/2 tsp vanilla

Steps:

  • 1. Cook raisins in water until only 1 cup liquid remains.
  • 2. Add hot liquid to shortening. Set aside and let cool.
  • 3. Beat eggs and sugar together. Stir in Shortening mixture. Blend in dry ingredients. Fold in raisins.
  • 4. Spread in greased 10x15 cookie sheet with edges. Bake at 350 degrees for 20-25 min.
  • 5. Frost with powdered sugar frosting while still warm.
  • 6. Cut into squares.

BUTTERSCOTCH COFFEE SQUARES

It is the richest, gooiest, yummiest use of instant coffee that I have ever tasted! These are a cousin the chewy blondes but witha definite coffee flavor. Also good with ice cream!

3/4 cup butter (1 1/2 sticks)
2 cups firmly packed brown sugar
2 tablespoons instant coffee powder
2 large eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 cup chopped walnuts (black)
1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350° and grease a 9 x 13 baking pan.
  • Melt the butter and brown sufar in a large saucepan over low heat, stirring constantly until mixture is well combined.
  • Add coffee powder, stirring to dissolve.
  • Let cool until barely warm to the touch, and then beat in eggs and vanilla.
  • Sift flour, salt and baking poder together, and stir the dry ingredients into the coffee mixture, the fold in nuts and chocolate.
  • Pour batter into prepared pan, smoothing the top out with a spatula, and bake for 25-30 minutes or until lightly browned and chewy. DO NOT OVERBAKE!
  • Cool on a rack and then cut them into squares and store them for up to 4 days in an airtight container- if they last that long!

1/2 cup butter, softened
1 cup sugar
2 eggs
2 tablespoons instant coffee
1 teaspoon vanilla
1 cup sour cream
2 cups unbleached flour
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt
1/4 cup brown sugar
1 tablespoon unbleached flour
1 teaspoon cinnamon
1 tablespoon butter, melted
3 granny smith apples, peeled cored and sliced

Steps:

  • Preheat oven to 350 F.
  • Cream butter and sugar until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Add vanilla and stir in sour cream.
  • In a separate bowl, combine dry ingredients and stir into wet ingredients until just mixed.
  • In another bowl, combine all ingredients for topping except the apples.
  • Toss the topping with the sliced apples.
  • Scrape the cake batter into a 9x12 inch cake pan and level.
  • Arrange the apple topping over the batter.
  • Bake for 35 to 40 minutes or until a toothpick inserted in the centre of the cake comes out clean.
  • Cut into squares and serve warm or at room temperature.

2 can(s) refrigerated crescent rolls, 8 ounces each
2 pkg cream cheese, softened, 8 ounces each
3/4 c sugar, divided
1/3 c strawberry preserves
1 large egg
1 tsp vanilla extract
1 1/2 c strawberries, sliced

Steps:

  • 1. 1. Preheat oven to 350F degrees. Spray a 13x9 in pan with nonstick cooking spray. Unroll 1 can of crescent roll dough. Press onto the bottom of the prepared pan to form bottom crust, pinching and sealing the seams together.
  • 2. 2. Place the cream cheese, 1/2 cup sugar, the preserves, egg and vanilla in a medium bowl. Beat with an electric mixer, set on medium speed until combined and no lumps remaining. Stir in the strawberries. Spread the mixture over the crust in the pan.
  • 3. 3. Unroll the remaining can of dough onto a large sheet of waxed paper to form a 13x9 inch rectangle, pinching and sealing the seams together. Invert over the strawberry mix.
  • 4. 4. Sprinkle the top crust with the remaining sugar. Bake until golden brown, 30-35 min. Cool completely. Cut into 24 squares.
