¼ cup unsalted butter (softened)
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1½ cups all-purpose flour (spooned and leveled)
2 teaspoon baking powder
½ teaspoon kosher salt
½ cup buttermilk
1 cup fresh strawberries (quartered)
½ cup granulated sugar
½ cup all-purpose flour
2 teaspoons ground cinnamon
3 tablespoons salted butter (melted)

Steps:

  • Preheat over to 350°F and line a 9x9-inch baking pan with parchment paper.
  • Cream together the butter and sugar in a mixing bowl.
  • Beat in the egg and vanilla. The mixture may be a bit lumpy, that's okay.
  • Combine flour, baking powder, and salt in a separate bowl.
  • Slowly add buttermilk and flour mix, alternating between until incorporated in the butter mix.
  • Gently fold in the strawberries with a rubber spatula.
  • Pour the batter into the prepared baking pan.
  • In a mixing bowl, beat topping ingredients until fully combined.
  • Sprinkle the topping over the top of the batter and bake for 30 to 40 minutes until the top is golden brown and a toothpick comes clean from the center of the cake.
  • Allow the coffee cake to cool in the pan for about 1 hour before cutting. This gives the coffee cake time to finish setting up.

2 can(s) refrigerated crescent rolls, 8 ounces each
2 pkg cream cheese, softened, 8 ounces each
3/4 c sugar, divided
1/3 c strawberry preserves
1 large egg
1 tsp vanilla extract
1 1/2 c strawberries, sliced

Steps:

  • 1. 1. Preheat oven to 350F degrees. Spray a 13x9 in pan with nonstick cooking spray. Unroll 1 can of crescent roll dough. Press onto the bottom of the prepared pan to form bottom crust, pinching and sealing the seams together.
  • 2. 2. Place the cream cheese, 1/2 cup sugar, the preserves, egg and vanilla in a medium bowl. Beat with an electric mixer, set on medium speed until combined and no lumps remaining. Stir in the strawberries. Spread the mixture over the crust in the pan.
  • 3. 3. Unroll the remaining can of dough onto a large sheet of waxed paper to form a 13x9 inch rectangle, pinching and sealing the seams together. Invert over the strawberry mix.
  • 4. 4. Sprinkle the top crust with the remaining sugar. Bake until golden brown, 30-35 min. Cool completely. Cut into 24 squares.

1-1/2 cups sugar
3 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup sour cream
2 teaspoons vanilla extract
2 cups chopped fresh strawberries
FILLING:
3/4 cup chopped walnuts
1/4 cup sugar
1/4 cup packed brown sugar
3/4 teaspoon ground cinnamon

Steps:

  • In a bowl, cream the butter and sugar. Add eggs; mix well. combine the flour, baking powder and baking soda; add to creamed mixture alternately with sour cream. Beat in vanilla. Fold in the strawberries. Spoon half into a greased and floured 10-in. fluted tube pan., Combine the filling ingredients; sprinkle half over batter. Top with remaining batter and filling. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.
