COCONUT RUM CREAM
We loved drinking a little coconut rum cream in our morning coffee on vacation in Jamaica, but could never find it when we returned home. After looking up several recipes I decided to make some adjustments and came up with my own version. Add a little to your coffee or serve over ice as a cocktail.

Steps:
- Heat cream and chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula until chocolate is melted; remove from heat and cool.
- Blend cooled chocolate mixture, sweetened condensed milk, rum, coffee granules, cinnamon, vanilla extract, and coconut extract together in a blender on high speed until smooth.

In honor of my new favorite cake, NurseDi's Mango Cake, recipe # 102221, I made a spoon-licking-good frosting that packs a great flavor but won't overpower that wonderful cake.

- Mix all together with a spoon & spread over cooled cake.
- Refrigerate leftovers (if you're lucky enough to have any leftovers). Just gets better as it sits.
- Note: I used the cartons of already whipped cream cheese as that's what I had on hand. Probably, (2) 8 oz. blocks whipped would work just as well.

COCONUT-CREAM CHEESE FROSTING
I wanted a frosting for a coconut layer cake that stood up to a stronger flavor without overpowering it and without being too sweet. If frosting a layer cake, I recommend spreading melted apricot preserves over the center layer, along with some frosting.

- Beat the cream cheese and butter in a mixer bowl until light and fluffy. Gradually add the confectioners' sugar, one cup at a time, alternating with heavy cream. Beat in the salt, coconut flavoring, and vanilla extract. Continue beating until mixture is smooth and spreadable. Add additional confectioners' sugar if necessary to thicken the frosting, or more cream to thin. Stir in the coconut. If desired, spoon toasted coconut evenly over frosted cake.

COCONUT-CREAM CHEESE FROSTING
In our test kitchen, Philadelphia-brand cream cheese gave us good results. This frosting would also be delicious on carrot cake or gingerbread.

- Beat cream cheese in medium bowl until fluffy. Add butter and beat to blend. Add sugar, sweetened cream of coconut and vanilla extract and beat until well blended.
LEMON AND COCONUT RUM CREAM CHEESE FROSTING
Baking from scratch is a new venture for me. I came up with this easy, but yummy frosting. The flavors are subtle. I hope you enjoy.

Steps:
- Cream butter and honey together in a large bowl.
- Then add milk gradually (you may not need to use the entire 1 1/2 tsps, it all depends on the consistency you want to achieve).
- Finally add the lemon extract and coconut rum and blend into frosting.
- Frost your cupcakes or cake.
- I found that the frosting thickened a bit once it settled. Also, I feel it tasted much better after I had chilled the cupcakes a bit.
- Enjoy.
