Tangy Broccoli Pasta Salad image

This is a simple veggie salad with penne pasta. The dressing is creamy, a little sweet and a bit tart- All the flavor combinations I love. And it's rather figure friendly because there is very little pasta. Just enough to make you feel like you're indulging!

6 slice cooked bacon chopped
1 medium head broccoli cut into bite size florets
1/2 c uncooked penne pasta
2 scallions chopped 1/2 inch
1/2 c pitted kalamata olives halved
1/3 c raisins (optional)
1 roasted pepper chopped into 1 inch pieces
DRESSING
1/4 c rice vinegar
1/2 c light mayonnaise
2 Tbsp splenda or sugar
1/8 tsp freshly ground pepper
1/2 tsp kosher salt

Steps:

  • 1. Cook penne according to package directions. While penne is cooking microwave broccoli florets on high for 2-1/2 minutes with a few tablespoons of water and a pinch of salt. Let broccoli cool and drain. When penne is done, rinse with cool water and drain. Place all salad ingredients in large bowl and get ready to make the dressing.
  • 2. Combine all dressing ingredients in medium size bowl and mix with a whisk to remove any lumps. Add to salad and toss/mix well. Cover and chill to let the flavors meld.
  • 3. Serve as a side with burgers or sandwiches, or do what I do, roll in Bibb lettuce leaves and take a big bite!
