COCONUT CREAM BANANA NUT BREAD



Coconut Cream Banana Nut Bread image

A pleasant banana bread hiding a sweet surprise inside. It brings back memories of home. Leave the nuts out if you must.

Number Of Ingredients 15

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup packed brown sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1 cup mashed banana
1/2 cup chopped walnuts or 1/2 cup pecans
1 (8 ounce) package cream cheese
1/4 cup packed brown sugar
1 egg
1/2 cup shredded coconut

Steps:

  • Thoroughly grease the bottoms and sides of 2 loaf pans; set aside.
  • Combine flour, baking powder, baking soda, cinnamon and salt; set aside.
  • Beat butter on high speed for about 30 seconds.
  • Add 1/2 cup brown sugar, beaten eggs and vanilla; beat until well mixed.
  • Add flour mixture and banana alternately to beaten mixture; beating on low after each addition.
  • Stir in nuts.
  • In a separate bowl, beat cream cheese, 1/4 cup brown sugar and the 1 egg until smooth.
  • Stir in coconut.
  • Pour 1/4 of the banana batter into each pan.
  • Spoon 1/4 of the cream cheese mixture over each loaf.
  • Marble each by using a spatula to cut cream cheese into the banana batter.
  • Repeat the 2 layers as above but do not marble them.
  • Bake in a 350°F oven for about 50 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in pans for 10 minutes.
  • Remove loaves from pans and cool completely.

Use up ripe bananas in this easy banana bread recipe. This recipe makes two loaves so it is great for gift giving. Use coconut oil and coconut sugar if you'd like!

1 cup coconut oil ({or canola oil}*)
2 cups granulated sugar ( {435 grams})
3 large eggs
2 teaspoons vanilla extract
2 cups mashed bananas
3 cups all-purpose flour ({385 grams})
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
3 teaspoons cinnamon
1/2 cup chopped walnuts ({optional})

Steps:

  • In a medium-size bowl, mix together the oil, sugar, eggs, vanilla and mashed bananas in a bowl. Set aside.
  • In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cinnamon.
  • Add the wet ingredients to the dry ingredients and mix just until combined. Do not overmix.
  • Grease and flour two 9x5 loaf pans. Divide the batter between the two pans.
  • Bake at 325 degrees for 45-50 minutes or until a toothpick inserted in the center of the loaf comes out clean.
  • Sprinkle the top with nuts, if desired.

2 eggs
1 cup white sugar
½ cup butter, melted
1 cup mashed bananas
½ teaspoon almond extract
1 ½ cups all-purpose flour
½ cup flaked coconut
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup maraschino cherries, chopped

Steps:

  • Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
  • Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.

1/2 cup vegetable oil
1 cup white granulated sugar
2 eggs (vegan option use 1/2 cup apple sauce)
1 teaspoon vanilla extract
1 teaspoon almond extract
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 extra ripe bananas, mashed.
2 1/2 cups all-purpose flour
1 cup canned unsweetened coconut milk, full fat
1 cup sweetened shredded coconut flakes

Steps:

  • Preheat oven to 350*F Grease 2 9x5 loaf pans and set aside. In a bowl combine oil and sugar. Add eggs (or apple sauce) and mix well. Add vanilla extract and almond extract, mix again. Add baking powder, baking soda and salt. Mix again. Add mashed bananas and mix well, scraping sides of bowl as needed. Alternately add flour & coconut milk, starting and ending with flour, mixing well after each addition until combined. Add Coconut and mix again. Pour batter into your two prepared pans. Bake for 1 hour. If toothpick inserted to center of loaf comes out wet bake for additional 15 minutes or until tested toothpick comes out clean. Let loaves rest for 10 minutes before removing from pans and allowing to cool on racks.

I came up with this last night. It is a good way to use up leftover coconut milk. Like all banana breads, the flavor is much better the second day.

4 ripe mashed bananas
7 1/2 ounces cans coconut milk (high quality, thick, not the watered down kind)
2 eggs
1/2 cup olive oil
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
2/3 cup packed brown sugar
2 -2 1/2 cups flour

Steps:

  • Mix wet ingredients, and dry ingredients.
  • Mixture will be lumpy.
  • Pour mixture into a greased loaf pan, and bake at 350 for 30-40 minutes, or until a cake tester inserted in the middle of the loaf comes out clean.

I created this recipe as a way to make something faster and easier and then discovered it was the best banana bread I'd ever tasted. :-)

1/2 c butter, room temperature
1 c sugar
2 large eggs well beaten
2 c all purpose flour
1 tsp salt
1 tsp baking soda
426 ml bananas in coconut cream baby food (2 containers)
cooking spray
tiny bit of flour for inside of loaf pan

Steps:

  • 1. Preheat oven to 350 Degrees and spray and lightly flour the inside of baking dish. (I use a large silicone baking dish)
  • 2. In a large bowl, cream butter and sugar together
  • 3. Add Eggs, mix well
  • 4. In separate bowl wisk together flour, salt and baking soda
  • 5. Mix the dry mixture, (flour, salt and baking soda) into the wet mixture (butter, sugar and eggs) and mix well
  • 6. add bananas in coconut cream and mix until smooth
  • 7. Pour entire mixture into a sprayed and floured loaf pans.
  • 8. Place in oven and bake for 1 hour
  • 9. Let cool and then remove from baking dish.
