Steps:
- Combine black beans, tomatoes, coconut milk, vegetable broth, green onions, ginger, cumin, turmeric, and garlic in a large saucepan; bring to a boil. Reduce heat and simmer until desired consistency is reached, 30 to 45 minutes. Season with salt.

COCONUT MILK BEAN SOUP
This recipe comes from Tanzania. A friend from Togo brought me this recipe he found on the internet, because he knew I was looking for African recipes to post for ZWT4. Cooking time doesn't include the time to cook the 1/2 cup rice. Thanks Sylvanus!

- In a large saucepan, heat the oil and sauté the onions until softened (maybe about 5 minutes).
- Add green peppers, curry powder, salt, pepper, butter or margarine, and tomato, and simmer for 2 minutes.
- Add the kidney beans with their liquid, the coconut milk, and water.
- Simmer gently for 10 minutes, Stir in the cooked rice and heat for about 2 minutes.
- Ladle into bowls. Top each serving with 1 Tablespoon of shredded coconut, and serve.
BLACK BEAN AND COCONUT MILK SOUP
From Fitness magazine February 2006. Very easy to make and vegan, too! As a suggestion, serve with Recipe #118085. Also, I like to cook up a pot of brown rice and add a large spoonful to each serving of soup for a complete meal in a bowl. Finally, I have reduced the coconut milk by half and the soup was still delicious! There you go!

- In a soup pot over medium heat, warm the olive oil. Add the onion, garlic, cumin and chipotle. Saute, stirring occasionally for approximately 5 minutes.
- Add 1/2 cup water, reducing heat to low, continuing to cook for 12-15 minutes or until onion is softened.
- Add the black beans (plus the bean liquid if using canned), coconut milk, and 2 1/2 cups water or stock. Increase heat to high and bring to a boil.
- Reduce the heat to medium-low and simmer the soup for 15 minutes.
- Scoop out 1 cup of the beans and some liquid; place in a mixing bowl. Puree the 1 cup of beans until smooth then return to the soup pot. Stir to thicken, blending more beans if you wish to desired consistency. (Or you can use a hand held immersion blender and blend the soup that way.).
- Adjust seasoning if necessary, adding salt and pepper as needed.
- Garnish each serving with lime wedges, diced white onion and cilantro leaves and diced tomatoes.
SIMPLE COCONUT & BEAN SOUP

- Heat the oil in a large saucepan. Sizzle the spring onion whites, pepper, chilli paste and garlic for 5-8 mins until soft and fragrant. Add the thyme, curry powder and spices, then cook for 1 min more, Stir in the tomatoes, then cook for 2 mins to soften slightly.
- Crumble in the stock cube, then tip in all the beans and the coconut milk. Simmer for 10 mins. Turn off the heat and stir in most of the spring onion greens, the lime juice and some seasoning. Ladle into bowls and scatter with remaining spring onions just before serving.

- Sauté onion, pepper ,chilli and garlic in the melted butter until soft but not brown.
- Add tomatoes, coconut milk and water or stock and simmer on a gentle heat for about 10 minutes.
- Add cooked chicken and rice and simmer until heated through about 2 minutes.
- Season to taste and serve garnished with the coconut and some freshly chopped coriander.
ADZUKI BEAN, TAPIOCA NOODLE, AND COCONUT SWEET SOUP
Steps:
- Rinse the beans in several changes of water. Drain the beans and put them into a bowl. Add enough water to cover by 1 inch. Set aside to soak for 6 to 9 hours.
- Drain the beans and rinse them again. Put them into a saucepan with water to cover by 1 inch. Bring to a near boil over medium heat, and then lower the heat to a gentle simmer. Cover partially and cook for about 45 minutes, or until the beans are tender but not mushy. Let cool before using. Or, you may refrigerate them in their cooking liquid in a tightly covered container for up to 3 days.
- To make the sugar syrup, in a small saucepan, whisk together the sugar and 2/3 cup of the water until combined. Bring to a boil over medium heat and boil for about 1 minute, or until the sugar dissolves and the mixture is clear. Let cool before using. There will be 3/4 cup. Or, refrigerate in a tightly covered jar until needed.
- Put the tapioca starch in a large bowl and make a well in the center. Bring the remaining 1/3 cup water to a boil, immediately pour it into the well, and stir with a wooden spoon or sturdy rubber spatula until the mixture is lumpy. Use your hand (it is not that hot) or a plastic dough scraper to gather the mixture into a rough mass. Turn it out, along with all the unincorporated bits, onto a large cutting board. Knead the dough vigorously for 2 to 3 minutes, pushing it with the heel of one hand and folding it over, to create a smooth, dense dough. The dough will seem dry at first, but as the water is absorbed throughout the mass, the dough becomes malleable like modeling clay. Work in a little more tapioca starch if the dough is sticky, or a few drops of water at a time if the dough is too firm. The finished dough will be slightly warm.
- Cut the dough into 3 equal pieces. Roll out each piece into a strip 2 to 2 1/2 inches wide and a scant 1/4 inch thick. Allow the strips to cool, firm, and dry for 6 to 8 minutes, so they are easier to work with, flipping them midway so they dry evenly on both sides. Use a knife to cut the strips crosswise into short noodles a generous 1/8 inch thick. Pause occasionally to separate them with your fingers. They will be dry, which means they won't stick together during cooking.
- Set a bowl of cold water large enough to accommodate the noodles near the sink. Fill a 5-quart pot half full with water and bring to a rolling boil over high heat. Pick up the cutting board and scoot the noodles into the pot. Stir the noodles to prevent sticking. After the water returns to a boil, cook the noodles for about 5 minutes, or until they are coated with a clear layer of cooked tapioca. (They will look white in the pot, so use a slotted spoon to examine one.) Drain the noodles in a colander and immediately transfer them to the cold water bowl, where they will turn clear. Let the noodles cool before pouring off the water. (The noodles can be covered and kept at room temperature for about 4 hours. They lose their springiness if they are refrigerated. Cooled noodles stick together, so loosen and separate them with warm water before using.)
- To serve, have ready 6 glasses; each should hold 1 to 1 1/4 cups. Drain the beans and divide them and the noodles evenly among the glasses. Add 2 tablespoons sugar syrup and about 3 tablespoons coconut sauce to each glass. Top with 2 to 4 tablespoons crushed ice, depending on everyone's sweet tooth. Serve with spoons for stirring up the contents and eating.
COCONUT BLACK BEAN SOUP
Steps:
- Saute bacon until semi-cooked. Add next 5 ingredients and cook until onion is slightly transparent Add next 7 ingredients, bring to a simmer, cook on low, slight boil, for about 30 minutes. Add next 4 ingredients, cook for 30 minutes more. Adjust spice, salt or cinnamon if needed
