3 tbsp firmly packed light brown sugar
3 tbsp unsweetened cocoa powder
2 tsp Chilli Powder Mild
1½ tsp Basil
1 tsp Onion Salt
¼ tsp Chillies Crushed
2 (2 kg) racks pork baby back ribs, white membrane removed
225 ml (8 fl oz) passion fruit juice
175 ml (6 fl oz) barbecue sauce

Steps:

  • Pre-heat the oven to 150°C, 300°F, Gas Mark 2
  • Mix brown sugar, cocoa powder, Chilli Powder, Basil, Garlic Powder, Onion Salt and Chillies in a small bowl. Rub spice rub evenly on ribs, then wrap each rack tightly in foil. Place on roasting pan.
  • Bake in a pre-heated oven for 2½ to 3 hours or until ribs are very tender
  • Meanwhile, bring passion fruit juice and barbecue sauce to simmer in small saucepan on medium heat. Simmer for 30 minutes or until sauce is reduced by half.
  • Pre-heat the grill to medium. Remove foil from ribs and place ribs under the grill. Grill for 5 minutes per side or until ribs are evenly browned, brushing occasionally with barbecue sauce.

1/2 cup paprika
3 tablespoons Chinese five-spice powder
2 tablespoon salt
1 tablespoon dried ginger
1 tablespoon dry mustard
1 tablespoon black pepper
3 racks baby back ribs
Tropical Rub
Tropical BBQ Sauce, recipe follows
1 1/2-inch knob ginger, finely chopped
1 jalapeno, stem removed
3 green onions, chopped
2 tablespoon vegetable oil
2 1/2 cups ketchup
1/2 cup mango juice
1/2 cup passion fruit juice
1/2 cup cider vinegar
1/4 cup dark molasses
1 teaspoon dry mustard
Salt and freshly ground black pepper

Steps:

  • For the Tropical Rub:
  • Whisk all ingredients together.
  • For the ribs:
  • Rinse and dry ribs. Place on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with 1/4 cup of the tropical dry rub. Wrap ribs in plastic wrap and refrigerate for at least 8 hours so flavors can permeate.
  • Preheat grill to 200 to 225 degrees F using charcoal and indirect heat.
  • Place ribs meatier side down on the grill away from the flame. Cook the ribs 2 to 2 1/2 hours total, turning the ribs halfway through, until ribs bend.
  • In a food processor, add the ginger, jalapeno and green onion. Pulse until they are finely chopped. In a medium saucepan, add the vegetable oil over medium heat. Add the ginger mixture and saute until tender. Combine the ketchup, mango juice, passion fruit juice, cider vinegar, molasses and dry mustard in a bowl and add to the saucepan. Season with salt and pepper. Let simmer for 10 minutes for the flavors to blend.

Passion fruit nectar can be found in Latin markets or the Latin aisle of some supermarkets. Passion fruit liqueur can be purchased in liquor stores.
