COCA-COLA BBQ SAUCE FOR RIBS
I love the sauce used on these BBQ'ed ribs, as does everyone that has tried them. I use the Country Style Pork Ribs and I prefer cooking them on the grill using indirect heat for hours, but I have used the oven as well. I mop the sauce on often and generously. Steps:
- Combine all the ingredients in a heavy, non-reactive saucepan and gradually bring to a boil over medium heat.
- Reduce the heat slightly to obtain a gentle simmer.
- Simmer the sauce until reduced by a quarter, 6-8 minutes.
- Use right away or transfer to a large jar, cover, cool to room temperature, and refrigerate.

- Prepare grill for indirect-heat cooking.
- Combine cumin, salt, chile pepper and onion powder.
- Rub ribs with 2 T lime juice.
- Reserve 1 t spice mixture; sprinkle remaining mixture over ribs.
- Place ribs, meaty side down, on grill over indirect heat.
- Cover, cook 15 minutes.
- Turn ribs, cover and cook until tender, about 2 hours.
- Meanwhile, in pot, combine soda, ketchup, zest, remaining 2 T lime juice and reserved 1 t spice mixture.
- Over medium-high heat, bring mixture to boil.
- Stir; over low heat, cook, stirring occasionally, until reduced to about 1 cup, about 40 minutes.
- Remove from heat.
- Brush ribs with half of soda mixture; cook 15 minutes.
- Turn ribs, brush with remaining mixture.
- Cook until very tender, about 15 minutes.
- Let ribs stand 10 minutes before serving.
- If desired, sprinkle with cilantro and serve with lime wedges.

- Cut ribs into serving-size portions and place in crock-pot. Season with garlic salt and pepper. Add Coca-Cola. Cover and cook on low about 8 hours, or until tender. During last 30 minutes of cook time, drain juice from ribs and coat well with barbecue sauce.

This is a relatively unusual BBQ pork ribs recipe, whereby Coke is used as a seasoning as well as a rib marinade.

- Pour enough Coca cola over the ribs. I use a vacuum sealer, to make it easier, but any way will do. Marinate for at least 24 hours. Remove the ribs from the marinade and apply more pork dry rub.
- Prepare your smoker and smoke the ribs at approx 225 degrees for 4 hours, basting hourly with Coke. Or, if just grilling, grill ribs over medium to low heat until a nice color develops. You can leaeve them on the grill, covered for approximately 4 hours until you reach your desired tenderness, or alternatively, wrap the ribs in foil and put in a 200 degree oven for about 4 hours or until desired tenderness is achieved.
- Meanwhile, put about 2 cups of Coca Cola in a saucepan and bring to a boil. Reduce until you have about 1/2 cup or it is a syrupy consistency. Keep warm. Now it's money time. Remove the Coca Cola ribs, and brush on the syrup. Now, apply more rub to make a bbq pork ribs recipe that is sweet, and also savory. BBQ sauce is optional!

I've seen lots of recipes here for cola chicken and all of them sound so yummy. So I thought I'd post my own recipe for Coca Cola Chicken (or Ribs) and see what y'all think. This would be yummy over a ham too.

- 1. In 9x13 cassarole dish combine brown sugar, cola, onions, garlic, soy sauce, salt and pepper. Stir and mix well.
- 2. mix together the corn starch and water making sure you mix it well. Slowly pour into cassarole dish while stirring. Place chicken wings or ribs in sauce mixture.
- 3. Bake at 350 degrees for 2 hours. Sauce will thicken as it cooks. Delicious served with rice or noodles.

- Cut Rib rack in half
- Sprinkle ribs with Salt and Pepper, then place in Crockpot.
- Combine BBQ Sauce and Coke in bowl, mix well, then pour over ribs in Crockpot.

My Mom's favorite place to eat is Cornacopia Restaurant in Cashiers,NC. Now she can't get out, so I did some searching a while back & came up with a recipe that is pretty simular to thiers. Why pay $15 for a 1/2 slab with fries & cole slaw when I can make a full slab for the same price?

- THE DAY BEFORE: Remove membrane from back of ribs. Prepare spice rub. Rub the rub all over front & back of ribs. Double wrap in aluminum foil & refrigerate overnight.
- NEXT DAY: Gas grill (we have 4 burners) directions...preheat grill on high for 10 - 15 minutes. Remove ribs from foil. Once grill is heated, turn off 2 middle burneres & turn 2 outer burners to low (aka: indirect heat). Place ribs (bone side down) & grill for 1 1/2 hours (no turning the ribs - stays juicer that way).
- As the ribs are cooking, prepare the Coca-Cola BBQ Sauce (you can do this the day before as well so that the flavors marry together).
- COCA-COLA BBQ SAUCE: Combine the ingredients in a heavy saucepan & gradually bring to boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4 C, 6 - 8 minutes. Let cool to room temperature, then refrigerate until ready to use. The sauce will keep for several months & can also freeze it. This sauce is also perfect for chicken, pork & even over steaks).
- After 1 1/2 hour is up, put some BBQ Sauce on top of ribs (not slathered & no need for saucing the bottom of ribs), then turn over & cook additional 1/2 hour. Take off when done. When serving...slather with lots of Coca-Cola BBQ Sauce & enjoy!
