I've seen lots of recipes here for cola chicken and all of them sound so yummy. So I thought I'd post my own recipe for Coca Cola Chicken (or Ribs) and see what y'all think. This would be yummy over a ham too.

1 c brown sugar
1 can(s) coca-cola (not diet)
2 medium onions chopped
2 clove garlic minced
2 Tbsp soy sauce or you can use 2 t. teriyaki sauce
1/2 tsp salt
1/2 tsp black pepper
2 Tbsp corn starch
1 c cold water
2-3 lb chicken wings, chicken breasts, or ribs

Steps:

  • 1. In 9x13 cassarole dish combine brown sugar, cola, onions, garlic, soy sauce, salt and pepper. Stir and mix well.
  • 2. mix together the corn starch and water making sure you mix it well. Slowly pour into cassarole dish while stirring. Place chicken wings or ribs in sauce mixture.
  • 3. Bake at 350 degrees for 2 hours. Sauce will thicken as it cooks. Delicious served with rice or noodles.

COLA BARBECUE RIBS

1 20-ounce bottle cola
2 cups ketchup
2/3 cup apple cider vinegar
1/3 cup lightly packed dark brown sugar
1/3 cup Dijon mustard
3 cloves garlic, finely chopped
1 tablespoon Worcestershire sauce
3/4 teaspoon cayenne pepper
2 tablespoons sweet paprika
Kosher salt and freshly ground black pepper
5 racks baby back ribs (8 to 10 pounds total), membranes removed
Vegetable oil, for the grill

Steps:

  • Make the barbecue sauce: Bring the cola to a boil in a medium saucepan over high heat. Cook until reduced by about half, about 5 minutes. Add the ketchup, vinegar, brown sugar, mustard, garlic, Worcestershire sauce, cayenne and 2 teaspoons paprika. Bring to a simmer and cook, stirring occasionally, until thickened, 8 to 10 minutes. Remove from the heat and let cool slightly.
  • Preheat a grill to medium and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Combine 2 tablespoons salt, 1 tablespoon black pepper and the remaining 1 tablespoon plus 1 teaspoon paprika in a bowl. Rub the salt mixture all over the ribs. Remove 1 cup of the barbecue sauce to a small bowl; brush over the ribs.
  • Wrap each rack of ribs separately in foil. Put the racks, overlapping if necessary, on the cooler side of the grill (indirect heat). Cover and cook, flipping the ribs after 30 minutes, until just tender and beginning to pull away from the bones, about 1 hour to 1 hour 15 minutes.
  • Remove the ribs from the grill and carefully unwrap; pour any juices into the pan with the remaining barbecue sauce. Bring the sauce to a simmer over medium heat and cook until thickened, 5 to 7 minutes.
  • Increase the grill heat to medium high. Brush the ribs with some sauce from the pan and grill over direct heat, flipping every 5 minutes, until glossy and crisp at the edges, about 20 minutes. Transfer the ribs to a large cutting board and let rest 5 minutes. Cut the ribs between the bones and serve with the remaining barbecue sauce.
  • If you're making the ribs on a charcoal grill, you'll need 3 to 4 pounds of charcoal. Add several new briquettes to the coals every 30 minutes to maintain the heat.

CHINESE COCA-COLA WINGS OR RIBS

Coke is the leading soft drink in China and, like in the US, Chinese are using it to cook. This recipe is for just one such dish.

1 cup brown sugar
1 (12 ounce) can Coca-Cola
1/4 cup dry sherry or 1/4 cup chinese rice wine
2 medium onions, chopped
2 garlic cloves, minced
2 scallions, chopped finely
2 tablespoons soy sauce
salt & freshly ground black pepper, to taste
2 1/2 lbs chicken wings (if previously frozen, allow to thaw overnight in refrigerator) or 2 1/2 lbs ribs (if previously frozen, allow to thaw overnight in refrigerator)

Steps:

  • Combine all ingredients except chicken or ribs in a large bowl.
  • Mix in the chicken or ribs and coat with marinade. Refrigerate for 6-8 hours or overnight.
  • When ready to bake, preheat oven to 350 degrees F.
  • Lay out the chicken or ribs on a baking sheet coated with cooking spray.
  • Bake for 2 hours. Serve immediately.

CHICKEN WITH COCA-COLA AND LEMONS

Like many cooks, I keep a file of recipes I want to try. When I looked through it recently, there were a preponderance of lemon recipes, including one for roasted chicken with lemons and Coca-Cola from Frédérick Grasser-Hermé. Again, the savory and sweet. A food writer who has worked with chefs like Alain Ducasse, Grasser-Hermé is also the wife of the Parisian pastry chef Pierre Hermé. It humored me that a French cook would deign to baste her chicken with Coke. But it makes perfect sense: like many drinks - wheat beer, iced tea, sangria, Vietnamese sugar-cane juice - Coca-Cola is always improved by a wedge of lemon.

Juice of 3 lemons, zest of 2 lemons
One 4 1/2 pound chicken, butterflied
3 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Olive oil, for sautéeing
1 medium onion, thickly sliced
1/4 cup finely julienned ginger
3 cloves garlic, crushed and chopped
1 cup Coca-Cola
1/2 teaspoon white vinegar
1 tablespoon balsamic vinegar

Steps:

  • In a large, rimmed dish, sprinkle the lemon juice over both sides of the chicken. Rub with the salt and pepper, then the lemon zest. Cover and chill for 4 hours.
  • Preheat the oven to 350 degrees. Spread the chicken, skin side up, in a roasting pan. Reserve the lemon juice, diluting it with 1 tablespoon water. Cover the chicken with foil and roast for 30 minutes, basting it with the lemon juice every 5 to 10 minutes.
  • Meanwhile, cover the bottom of a medium sauté pan with a thin film of olive oil. Place over medium heat and add the onion and ginger. Cook until the onions are soft and golden, about 8 minutes, then stir in the garlic. Season with salt and pepper.
  • After the chicken has cooked for 30 minutes, lower the heat to 300 degrees and remove the foil. Begin basting every 10 minutes with the Coca-Cola, until the chicken juices run clear, about 1 hour more. Reheat the onions, adding the vinegars and 2 tablespoons of the chicken juices. Cook for 1 minute. Serve the chicken topped with the onions and pan drippings.
