CLAY POT CHICKEN WITH GARLIC CARROTS AND POTATOES
This is our family's favorite recipe. I created this recipe when I purchased my first clay pot. Chicken will be very moist and tender; potatoes are done in the same pot. What more could you want? Easy, delicious and great looking dish. I promise, that even your pickiest eaters will be asking for seconds.

Steps:
- Soak clay pot for 15 min.
- Rub chicken with garlic, salt, pepper, caraway seeds, parsley, Italian dressing and marinate overnight ( optional) You can rub your chicken and bake it right away, but it will taste much better , if marinated.
- In a clay pot, add potatoes, carrots and chicken on top.
- Place your clay pot in the cold oven and roast at 430F for 1.5 hours.

I found this recipe in "The Good Health, Clay Pot Cookbook" in response to a request.The recipe states that you can delate the salt all together if you wish for a low sodium, low fat dish.

Steps:
- Soak top and bottom of 3 qt clay pot in water about 10 minutes, drain.
- Put carrots in presoaked pot.
- Sprinkle with brown sugar, salt and pepper.
- Pour on orange juice, add butter.
- Cover pot and place in cold oven.
- Bake at 425 degrees for 25 minutes.
- Stir carrots and cook uncovered for aditional 10 minutes.
- Sprinkle with herbs and toss til evenly coated.
- Serve hot.

CHICKEN WITH 40 CLOVES OF GARLIC IN A CLAY POT
I found this recipe in Consumer Guide to Clay Cookery. Though it sounds like a lot of garlic - the peeled cloves cook into sweet, mellow nuggets of flavor - great to spread on crusty french bread. The chicken cooks up moist and tender. This recipe is cooked in a clay pot that must be soaked in cold water for 15 minutes and is placed in a cold oven to start.

Steps:
- Soak top and bottom of 3 1/4 quart clay cooker in water about 15 minutes; drain.
- Line bottom and sides of cooker with parchment paper.
- Combine olive oil, garlic and herbs in cooker.
- Rinse and pat dry chicken reserving neck and giblets for other use.
- Place chicken over garlic mixture.
- Drizzle with lemon juice.
- Sprinkle with salt and pepper.
- Place covered cooker in COLD oven.
- Set oven at 475 degrees F.
- Bake until chicken is tender and juices run clear when thigh is pierced, about 1 1/4 hours.
- Remove cover; bake until chicken is crisp and brown.
- 5 to 10 minutes.
- Carve chicken and spoon cooking liquid over chicken.
- Serve with garlic and french bread.

- Rinse clay pots and allow to dry. In the meantime make pudding as directed on package. When pudding has set, fold in cool whip (like mousse-u can also by mousse in the box and make it that way). Keep cold in fridge.
- Preparation: cut out circles from parchment paper to fit on the bottom of pot melt dyed chocolate and dip marshmallow & then into the colored sugar...allow to set in refrigerator. with a peeler make long thin cuts for the carrot top, crush oreo's; set aside
- Assembly: Pipe in pudding mixture in the clay pot, place marshmallow on top, crushed oreos around marshmallow. With a toothpick make a small hole to add the celery strings.
