4 lbs beef tenderloin
1 tablespoon olive oil
1 teaspoon pepper
1/2 teaspoon dried thyme
1 cup beef stock
2 portabella mushrooms, coarsely chopped
1 tablespoon balsamic vinegar or 1 tablespoon red wine vinegar
2 teaspoons all-purpose flour
2 teaspoons butter, softened
1 pinch salt
1 pinch pepper

Steps:

  • FOR THE BEEF TENDERLOIN: Place beef on rack in roasting pan. Brush with oil; sprinkle with pepper and thyme. Roast in 450°F oven for 40 to 50 minutes or until meat thermometer registers 140°F for rare, or until desired doneness.
  • Transfer to cutting board; tent with foil and let stand for 10 minutes before slicing thinly. Serve with Balsamic Portobello Sauce if you wish. Serves 16.
  • FOR THE PORTOBELLO SAUCE: Heat roasting pan over medium high heat for 1 minute. Pour in beef stock, stirring to scrape up any brown bits. Add mushrooms; cook, stirring frequently, for about 8 minutes or until very soft. Stir in vinegar.
  • Mix flour with butter until combined; whisk into pan and bring to boil, whisking constantly. Cook, whisking, for 1 minute or until glossy and thickened. Season with salt and pepper. Makes about 1 1/2 cups.

2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
2 tablespoons minced garlic
1-1/2 teaspoons salt
1 teaspoon coarsely ground pepper
1 beef tenderloin roast (2 pounds)
SAUCE:
2 cups port wine or 1 cup grape juice and 1 cup reduced-sodium beef broth
2 tablespoons balsamic vinegar
1 teaspoon butter
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Combine the rosemary, garlic, salt and pepper; rub evenly over tenderloin. Cover and refrigerate for 2 hours. Place meat on a rack in shallow roasting pan. Bake, uncovered, at 400° for 50-70 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing., In a saucepan, bring wine or grape juice and broth to a boil; cook until reduced to 3/4 cup. Add vinegar; cook for 3-4 minutes or until reduced to a sauce consistency. Stir in butter, salt and pepper. Serve with tenderloin.

1 cup ruby port
1 cup dry white wine
16 ounces beef tenderloin steaks
all-purpose flour
3 tablespoons unsalted butter
1 tablespoon olive oil
2 tablespoons balsamic vinegar

Steps:

  • Boil Port and wine in heavy small saucepan until mixture is reduced to 2/3 cup, about 8 minutes. Set aside.
  • Sprinkle steaks with salt and pepper. Dust with flour; shake off excess. Melt 1 tablespoon butter with oil in heavy large skillet over medium-high heat. Add steaks; cook to desired doneness, about 4 minutes per side for medium-rare. Transfer steaks to platter (do not clean skillet); tent steaks with foil to keep warm.
  • Add Port mixture and vinegar to same skillet and bring to boil, scraping up any browned bits. Boil until reduced to sauce consistency, about 2 minutes. Remove from heat. Add remaining 2 tablespoons butter and whisk just until melted. Season sauce to taste with salt and pepper. Transfer steaks to plates. Spoon sauce over and serve.

1/2 cup Italian dressing
1 teaspoon fresh lime juice
1 1/2 teaspoons honey

Steps:

  • Drain and discard spices from the Italian dressing. (Some may elect to keep the spices; the recipe will still turn out but will have a different flavor than intended.).
  • Combine dressing, lime juice, and honey.

6 (6 ounce) beef tenderloin fillets
2 teaspoons chopped fresh tarragon
1/2 teaspoon fresh ground pepper
5 tablespoons butter
8 ounces portabella mushroom caps, sliced
1/3 cup dry red wine
1/2 cup sour cream
3 ounces Stilton cheese or 3 ounces blue cheese, crumbled
1 sprig fresh tarragon

Steps:

  • Rub the fillets with the chopped tarragon and pepper. Melt 2 TBS of the butter in a large skillet over medium high heat. Add the fillets and cook for 4 to 5 minutes on each side or to the desired degree of doneness. Remove from the skillet and keep warm.
  • Melt the remaining 3 TBS butter in the skillet. Add the mushrooms. Saute for 3 to 4 minutes or until tender. Add the wine. Cook for 1 to 2 minutes, stirring to deglaze the skillet. Stir in the sour cream. Add 1/4 cup of the cheese. Cook until melted, stirring constantly.
  • To serve, drizzle the sauce over the fillets. Sprinkle with the remaining cheese. Garnish with sprigs of tarragon.

2 beef tenderloin steaks
1/2 c dry red wine
1 teas flour
1/2 c beef broth
1 teas each steak sauce, Worcestershire sauce, and ketchup
1/2 teas ground mustard
4 oz fresh baby portabella mushrooms, sliced
1/4 teas pepper
1/8 teas salt

Steps:

  • In a large nonstick skillet with 1 T olive oil, brown steaks on both sides over medium-high heat. Remove from pan and keep warm. Reduce heat to medium, add wine to pan to loosen browned bits, cook 2 to 3 minutes until liquid is reduced by half. Combine flour and broth until smooth, whisk into pan juices. Add steak sauce, Worcestershire sauce, ketchup and mustard. Bring to a boil. Return the steaks to the skillet, add the mushrooms and bring to a boil. Cook for 4 to 5 minutes on each side or until a meat thermometer reads 160. Sprinkle fillets with salt and pepper and serve sauce over the top.
