BREADSTICKS RECIPE (OLIVE GARDEN COPYCAT)

Perfectly soft, fluffy and chewy and finished with a buttery garlic topping. No one can resist these! And since they're made fresh from scratch they're even better than Olive Gardens!

Number Of Ingredients 9

1 cup + 2 Tbsp warm water ((110 - 115 degrees))
1 1/4 tsp active dry yeast
2 Tbsp granulated sugar, (divided)
3 - 3 1/2 cups all-purpose flour ((scoop and level to measure))
1 3/4 tsp salt
3 Tbsp vegetable oil (or olive oil)
2 Tbsp butter
1/4 tsp salt ((or to taste))
1/4 tsp garlic powder

Steps:

  • In the bowl of an electric stand mixer whisk together warm water, yeast and 1/2 tsp granulated sugar until yeast has dissolved. Allow to rest 10 minutes.
  • Add in remaining 1 Tbsp + 2 1/2 tsp granulated sugar, 1 1/2 cups flour, 1 3/4 tsp salt and vegetable oil, then fit mixer with paddle attachment and blend mixture until well combine.
  • Switch mixer to dough hook attachment, add in remaining 1 1/2 cups flour and knead mixture on low speed, adding up to 1/4 cup additional flour as needed, and knead until dough is smooth and elastic*.
  • Transfer dough to a large buttered mixing bowl, cover with plastic wrap and allow to rest in a warm place free from draft until double, about 1 1/2 hours.
  • Punch risen dough down, divide into 12 equal portions (2 ounces each by weight), keep them covered with plastic wrap as you work. Roll each piece into a 9 inch rope on a lightly floured surface, then transfer to two parchment paper lined baking sheets.
  • Cover and let rise 1 hour. Preheat oven to 425 during the last 10 minutes of rising.
  • Bake in preheated oven 11 - 13 minutes until golden**. Meanwhile, in a small bowl whisk together 1/4 tsp salt and garlic powder.
  • Remove breadsticks from oven and run a stick of butter over hot breadsticks (using 2 Tbsp, or brush with melted butter) and immediately sprinkle with garlic salt mixture.
  • Serve warm. Let any left over cool and store in an airtight container.

2 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
1 1/2 teaspoons baking powder
3 tablespoons solid vegetable shortening
2 tablespoons olive oil, (optional)
1/2 cup sea salt or kosher salt, (optional)

Steps:

  • Preheat the oven to 350 degrees. In the bowl of a food processor, pulse flour, salt, and baking powder to combine. Add shortening, and pulse until mixture resembles coarse meal. With the machine running, gradually add between 1/2 and 3/4 cup ice water until dough comes together, about 1 minute.
  • Transfer dough to a lightly floured surface. Form dough into a smooth rectangle, about 4 by 6 inches, with your fingers. Then roll out dough into an 8-by-10-inch sheet, 1/4 inch thick. Cut dough lengthwise into 1/4-inch-wide strips.
  • Using your hands, gently roll each strip back and forth into 16-inch-long sticks. For the twisted version, grab each end of dough strip with your fingers, and carefully stretch and twist strip in opposite directions. Arrange sticks on two baking sheets, side by side but not touching. If salting, brush each stick lightly with olive oil, and sprinkle with salt. Press the ends onto the baking sheet to keep sticks straight while they cook. Bake until firm and cooked through, 14 to 18 minutes. Transfer sticks to a wire rack to cool.

¾ teaspoon active dry yeast
1 cup warm water (105 to115 degrees F/40 to 45 degrees C)
1 tablespoon warm water (105 to115 degrees F/40 to 45 degrees C)
3 cups bread flour
1 ½ teaspoons salt
2 tablespoons butter, melted
2 tablespoons butter, melted
½ teaspoon garlic salt

Steps:

  • Dissolve sugar and yeast in 1 cup plus 1 tablespoon warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Combine flour and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix 2 tablespoons butter into flour mixture until incorporated. Pour yeast mixture into flour mixture and knead dough using the dough hook attachment until smooth and elastic, about 10 minutes.
