1 recipe Classic Pizza Dough
Semolina flour or fine cornmeal, for dusting
Extra-virgin olive oil, for drizzling
Kosher salt and freshly ground pepper
2/3 cup No-Cook Pizza Sauce
6 ounces fresh salted mozzarella, cut into scant 1/4-inch slices, room temperature
1/2 ounce Parmigiano-Reggiano, grated (a scant 1/4 cup)
Fresh basil leaves and red-pepper flakes, for serving (optional)

Steps:

  • Preheat oven to 500 degrees, with rack in lower third lined with a pizza stone or baking sheet. Turn dough out onto a pizza peel or thin wooden cutting board dusted with semolina (do not punch down). Starting in center and using both hands, press down and outward with your fingertips, rotating dough occasionally. Gradually work toward edges, leaving a 1-inch border of undisturbed dough, until it's stretched to an approximately 13-inch round.
  • Lightly drizzle dough with oil; season with salt and pepper. Gently spread sauce evenly to just inside border, top evenly with mozzarella, and sprinkle with Parmigiano. With one quick forward-and-back jerking motion, slide pizza from peel onto stone. (This is not the moment to hesitate! Be brave and bold, and the pizza will slide off the peel.)
  • Bake until crust is puffed, golden brown in places, and set on bottom, and cheese is bubbly, 10 to 12 minutes. Transfer pizza to a wire rack; let cool 2 to 3 minutes. Top with basil and pepper flakes, slice, and serve immediately.

1 package (6 ounces) fresh baby spinach

1/3 cup mascarpone cheese

Steps:

  • In a large skillet, cook pancetta over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Saute garlic in drippings for 1 minute. Add spinach; cook just until wilted. Drain spinach mixture on paper towels., In the same skillet, saute mushrooms in oil until tender; add the pepper flakes, salt and pepper. Transfer to a small bowl and let stand for 5 minutes. Stir in the mascarpone cheese, olives and pancetta. , Place crust on an ungreased pizza pan. 5 teaspoons white wine vinegar
5 teaspoons vegetable oil
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano, optional

2 cups cabbage, very finely shredded

Steps:

  • In a small bowl, combine vinegar, oil, sugar, salt, pepper, oregano and basil. Place the cabbage in a separate large bowl and pour the dressing over. Using clean hands, squeeze and knead the cabbage well to release juices. Do a taste test and adjust the flavor to your preference. Put a heavy bowl on top of the salad and weigh it down. Leave the salad to rest overnight in the refrigerator. I usually make a bigger batch than I have written up here because this cabbage salad makes a marvelous accompaniment to other dishes too. It keeps well for 5 to 6 in the fridge. When the salad starts to smell like an old scouring cloth, it's time to throw it away.

1 cup warm water (100 degrees F to 110 degrees F)
2 teaspoons sugar
1 teaspoon active dry yeast
2 tablespoons extra-virgin olive oil, plus more for the bowl
2 tablespoons extra-virgin olive oil
1 clove garlic, grated
1/4 to 1/2 teaspoon red pepper flakes
1 3/4 cups tomato puree (preferably San Marzano)
1/2 teaspoon dried oregano Kosher salt
1 8-ounce bag shredded low-moisture mozzarella cheese (about 2 cups)

Steps:

  • Make the dough: Combine the flour and salt in a large bowl. Make a well in the center and pour in the warm water. Sprinkle the sugar and yeast over the water and let stand until bubbling, 5 to 10 minutes. Pour the olive oil into the well, then stir with a wooden spoon to make a shaggy dough. Turn out onto a lightly floured surface and knead until smooth and elastic, about 1 minute. Place in a lightly oiled bowl, tightly cover with plastic wrap and let rise in a warm place until doubled in size, about 2 hours.
  • One hour before baking, put a pizza stone or large inverted baking sheet on the lowest oven rack and preheat to 500 degrees F. Make the sauce: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until slightly softened, about 1 minute. Add the tomato puree and 2 cups water. Stir in the oregano and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until thickened, about 20 minutes. (The sauce will keep in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 2 months.)
  • Divide the pizza dough into 2 balls. On a lightly floured surface, stretch 1 ball of dough into a 12- to 14-inch round. Transfer the dough to a piece of parchment paper, then slide the parchment with the dough onto a pizza peel or inverted baking sheet.
  • Spread about 1/2 cup of the sauce on the crust in a thin layer, then scatter 1 cup mozzarella on top. Slide the pizza (on the parchment) onto the hot stone. Bake until the crust is golden brown and the cheese is bubbling, 8 to 10 minutes. Let cool 1 to 2 minutes before slicing. Repeat to make the second pizza.

Steps:

  • Preheat oven to 400 degrees (unless it's for use at a later time.).
  • Place your Meal Mixer onto the Base and insert the Flat Blade.
  • Add ingredients in the order they appear to the Meal Mixer and Pulse the Bullet Express about 10 to 15 times until the ingredients are mixed together and the dough looks slightly formed and thickened (it pulls away from the bottom and forms towards the center.) If the dough is not forming, check to be sure you followed the steps correctly and start over from the beginning again.
  • Carefully remove the dough, keeping an eye on the blade (its sharp!) and place it on the flour sprinkled surface.
  • Knead for 4-5 minutes then shape into a ball. Lightly cover your fingertips with flour if the mixture is a little sticky.
  • Place the ball of dough into a large oiled bowl and cover loosely with plastic wrap. Let the dough rise for about 1 to 1-1/2 hours.
  • Roll the dough out by hand onto a 12-inch pizza pan.

Steps:

  • To make the dough, mix the yeast with the warm water, sugar and oil and leave for 1-2 minutes. Add the flours into a mixing bowl with 1/2 tsp salt and briefly mix before making a well ready for the liquids. Pour in the yeast mixture and stir into the flour using a fork, until the mixture comes together and can be finished off by hand. Knead the dough for 3-4 minutes on a floured surface, then place in a clean, lightly oiled mixing bowl. Cover the bowl with a damp tea towel and leave in a warm place for 1 hour or until it has risen to double its size.
  • Meanwhile, make the tomato sauce by blending all of the ingredients together.
  • Preheat the oven to 240°C (220°C fan, gas mark 9). Place the dough back onto a floured surface and knead for another minute to knock the air out. Any dough not used immediately can be refrigerated for up to 2 days - allowing to stand for 2 hours before making the pizzas.
  • Roll out the dough and place on a large baking tray. Spread the tomato base over the pizza before topping with the blue cheese and mozzarella, then the mushrooms and cherry tomatoes.
  • Cook in the hot oven for around 15 minutes or until the dough is crisp around the edges. Top with the parmesan and a good grating of pepper and serve.

Cooking for a couple of decades you are always tweaking. I have several dough recipes, but this is the one that consistently gets the high marks from my guest. A hot pizza stone works best, but a good hot oven is the key.

1 teaspoon salt
1 tablespoon honey
2 tablespoons olive oil
3/4 cup cool water
1 (1/4 ounce) envelope active dry yeast
1/4 cup warm water
3 cups flour
2 tablespoons butter

Steps:

  • In a small bowl combine salt, honey, olive oil, and cool water.
  • Mix well and set aside.
  • In a separate bowl, combine warm water and yeast. Allow to proof for ten minutes.
  • After proofing combine honey mixture and yeast in one large mixing bowl.
  • Add flour, one cup at a time, into the combined liquid mixture. Dough is an art - depending on your paradigm you may want to work this with your hands, add a T of water if it is dry.
  • Place dough ball on lightly floured surface and knead until smooth.
  • Place dough in covered buttered (melted) bowl and allow dough to rest for 30 minutes. A slightly warmed oven (90 degree) is great.
  • Divide into two equal sized dough balls.
  • If using a pizza stone, place stone in oven and preheat oven to 450 for at least ten minutes.
  • Roll out into two pies and add your favorite sauce and topping combinations.

1 1/4 cup Cold Water
2 teaspoons Salt
1/2 teaspoon Active Dried Yeast
4 cups "OO" Flour (white)

Steps:

  • Place two-thirds of the water in a large bowl.
  • In a saucepan or microwave, bring the other third of water to boil, then add it to the cold water in the bowl. This creates the correct temperature for activating yeast.
  • If mixing by hand: Place the flour in a large bowl and pour the yeast mixture into it. Stir with a wooden spoon until a dough starts to form. Continue mixing by hand until the dough comes together in a ball. Turn it onto a lightly floured surface and knead with both hands for about 10 minutes, until it is firm and stretchy.
  • If using a mixer: Fit the mixer with the dough hook and place the flour in the mixer bowl. Turn the machine on at a low speed and gradually add the yeast mixture to the flour. Once combined, leave the dough to keep mixing to at the same speed for 5-10 minutes, or until the dough is firm and stretchy.
  • Place in bowl. Cover the dough with cling film and leave to rise in a warm place for 1-2 hours.
  • When the dough has roughly doubled in size, divide it into 3 equal pieces.
  • Place each piece of dough in a separate bowl or tray, cover with cling film and leave to rise for another 20 minutes, or until doubled in size.
  • Kneading and stretching the dough: Our top tip is always to start with a perfectly rounded ball of dough as this helps to keep the shape of the pizza base circular during the stretching process. Place the ball on a lightly floured surface, flour your hands and use your fingertips to press the dough into a small, flat disc. Working from the center, push the dough outwards while spreading your fingers, making the disc slightly bigger. Pick up the dough and gently pinch it all around the edge, allowing gravity to pull it downwards into a 16-inch (30cm) circle. Neapolitan-style pizza bases are very thin, so you should be able to see through the base when you hold it up to the light. Take care when doing this - you don't want it to tear.
  • Once the dough is fully stretched, lightly flour your pizza peel and lay the base on it. If at this point you see any small holes in the dough, gently pinch them back together. Once you're happy with the base, add your toppings and bake in your Ooni 3, Ooni Koda or Ooni Pro as indicated in your chosen recipe.

3 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Garlic, minced
1 Tbsp. Parsley, minced
1 Tbsp. Oregano
Sea Salt & Pepper
8 Roma Tomatoes, sliced (divided - save 10 slices for the top)
1/2 Medium Red Onion, minced
2 cups Sargento® Classic Shredded Mozzarella Cheese
1 cup Fontina Cheese, shredded
10 Fresh Basil Leaves (divided)
1/2 cup Sargento® Artisan Blends Shredded Parmesan Cheese

  • Preparation Instructions:
  • Position oven rack on lowest shelf and preheat to 425 degrees F. Lightly oil a pizza
  • pan. Roll out dough as thin as possible. Let rest 10 minutes.
  • In a small skillet, heat 1 tablespoon oil and saute sausage until browned. Remove from pan and coin slice. Entered for safe-keeping, from Modernist Cuisine. I like how pressure cookers keep the flavor in, and wasn't completely satisfied with other P.C. recipe I found on the site. For a zestier sauce, try adding chili flakes, pureed anchovies or fresh basil. I like to toss in a parmesan cheese rind for flavor, then remove it after cooking. If you don't include the optional anchovies, this is vegetarian/vegan.

1/4 cup garlic, chopped (50g)
1/2 cup olive oil (100g)
28 ounces crushed tomatoes (794g of San Marzano or 6-in-1 Tomato Sauce)
extra virgin olive oil, to taste
salt, to taste
1/4 teaspoon red pepper flakes (optional)
2 anchovies, pureed (optional)
3 tablespoons fresh basil, chopped (optional)

Steps:

  • Mince garlic in a food processor for best results.
  • Fry garlic in olive oil until the garlic turns golden brown, but do not let get medium brown or burn. Might take about 5 minutes. (The Italians like to saute garlic on low to prevent browning.).
  • Add sautéed garlic and oil and canned tomatoes to pressure cooker. If using optional ingredients, add them here.
  • Pressure cook at a gauge pressure of 1 bar/15 psi for 45 minutes. Start timing when full pressure is reached. (For electric pressure cooker, use low pressure.).
  • Depressurize the cooker naturally. (Relax, it doesn't take very long to come down from low pressure.).
  • Season the sauce to taste with extra-virgin olive oil and/or salt.

Number Of Ingredients 12

3 tablespoons Olive Oil
1 small onion, peeled, finely chopped
2 cloves garlic, peeled, minced
14 oz. can italian plum tomatoes and their juice
1 (6 oz) can tomato paste
1 cup water
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 tablespoon minced fresh thyme or 1/2 - 1 teaspoon dried thyme
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
2 teaspoons sugar
1 teaspoon salt
1 teaspoon red wine vinegar

Steps:

  • Pour oil into a large, heavy skillet over medium heat. When hot, add onions and saute until transparent. Stir in garlic; continue to cook, stirring until garlic is soft bur not brown. Add tomatoes and their juice. Cook, breaking up tomatoes with tip of wooden spoon or spatula, until liquid begins to simmer. Stir in tomato paste and water. Add basil, thyme, oregano, sugar and salt. Bring to boil, then reduce heat and simmer, stirring occasionally, 35-45 minutes, until sauce is very thick. Stir in vinegar. Taste and adjust seasonings.

1/2 cup water
1 package regular or fast-acting dry yeast (2 1/4 teaspoons)
1 1/4 to 1 1/2 cups Gold Medal™ all-purpose flour or Better for Bread® bread flour
1 teaspoon olive or vegetable oil
1/2 teaspoon salt
1/2 teaspoon sugar
Cooking spray to grease bowl
1 can (8 oz) pizza sauce

Steps:

  • In a 1-quart saucepan, heat the water over medium heat until warm and an instant-read thermometer reads 105°F to 115°F. In a large bowl, dissolve the yeast in the warm water. With a wooden spoon, stir in half of the flour and all of the oil, salt and sugar. Stir in enough of the remaining flour, 1/4 cup at a time, until dough is easy to handle.
  • Sprinkle flour lightly on a countertop or large cutting board. Place dough on floured surface. Knead by folding dough toward you, then with the heels of your hands, pushing dough away from you with a short rocking motion. Move dough a quarter turn and repeat. Continue kneading about 10 minutes, sprinkling surface with more flour if dough starts to stick, until dough is smooth and springy. Spray a large bowl with the cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in a warm place 20 minutes.
  • Gently push your fist into the dough to deflate it. Cover bowl loosely with plastic wrap; refrigerate at least 2 hours but no longer than 48 hours. (If dough should double in size during refrigeration, gently push fist into dough to deflate it.)
  • Move the oven rack to the middle position of the oven. Heat the oven to 425°F. Place dough on center of an ungreased cookie sheet or 12-inch pizza pan. Press the dough into a 12-inch round, using floured fingers. Press dough from center to edge so the edge is slightly thicker than the center. Spread the pizza sauce over the dough to within 1/2 inch of edge. Add the toppings for either cheese, hamburger, Italian sausage or pepperoni pizza.
  • Bake 15 to 20 minutes or until crust is golden brown and cheeses are melted and lightly browned.

  • Extend the pizza dough (make sure to flatten the ends). Meanwhile, preheat the oven to 180°C.
  • Place the string cheese on those flattened ends. Then, roll them to create a cheese-filled crust.

1 lb basic pizza dough
2 cups cubed chicken breasts
1 (8 ounce) can basil garlic tomato sauce
1 teaspoon oregano, to taste
1 teaspoon garlic powder
1 tablespoon olive oil
1/2 cup diced green pepper
1/2 cup diced onion
2 cups shredded mozzarella cheese
1 teaspoon creole seasoning
cooking spray

Steps:

  • Season chicken with creole seasoning and garlic powder. Pan fry cubes of chicken until fully cooked, set aside.
  • Prep your pizza pan by spraying it with cooking oil.
  • Stretch the uncooked pizza dough into a circle big enough to cover most of the pizza pan (best you can).
  • Spread the dough onto the cookie sheet and press the edges to create a crust, score the dough with a fork for ventilation.
  • Spread the tbsp of olive oil on the dough, especially the crust.
  • Layer in this order:
  • Tomato sauce, cubed chicken, diced green pepper, diced onion, mozzarella cheese. Sprinkle with oregano.

1 1/2 cups warm water
2 1/2 teaspoons dry yeast
2 teaspoons sugar
1 1/2 teaspoons salt
2 tablespoons olive oil
1 tablespoon semolina or 1 tablespoon cornmeal
1 cup all-purpose flour
2 -3 cups bread flour
olive oil (for pizza pans)

Steps:

  • Grease three 9 inch pizza pans with 1 tablespoon olive oil. Set aside.
  • For the dough, in the bowl of an electric mixer, hand whisk the water and yeast and let stand 2 to 3 minutes. Stir in the sugar, salt, oil semolina, all-purpose flour and 2 cups of bread flour and mix to make a soft mass. Knead with the dough hook on the slowest speed of the mixer, dusting in additional flour as required to form a soft, elastic dough, about 5 to 8 minutes. Form dough into a ball and place in a lightly greased bowl. Insert bowl into a large plastic bag and let rise until almost doubled, about 30 to 45 minutes.
  • Gently deflate the dough, reinsert into plastic bag, and allow to rest an additional 15 minutes.
  • Gently deflate the dough. Press or roll out dough to fit prepared pizza pans.
  • If dough resists or otherwise retracts, let it rest for a few minutes, then gently coax it to fit pan. Drizzle a little bit of olive oil on top of dough. Spread on tomato sauce and topping of your choice
  • Preheat oven to 425°F Bake 15 minutes, and then reduce heat to 400°F Bake another 15 - 20 minutes until cheese is melted and lightly brown.
