Steps:
- Scoop avocado pulp into small bowl and coarsely mash.
- Add all remaining ingredients, gently mixing until combined.
- Serve at once or press piece of plastic wrap directly onto surface to prevent browning.
- Store at room temperature and serve within 2 hours.
CLASSIC GUACAMOLE
This is the old, classic, simple way of making a good guacamole. The Hass avacados give a wonderful buttery taste.

Steps:
- Mash the avocado, leaving a few rough chunks.
- Stir in the remaining ingredients.
- Serve within 30 minutes with chips, or as a garnish to other dishes.
- It is best to make just before serving, but if you have to hold longer, place plastic wrap directly on the surface of the guacamole to keep from unsightly darkening.

Steps:
- Place drained peas in a medium bowl and mash thoroughly with a potato masher or fork.
- Add all other ingredients except for the tomatoes, onions and optional items.
- Continue to mash until blended.
- Stir in the tomatoes, onions and, if you like, some chopped cilantro and/or jalapenos.
- Season to taste with salt and pepper, if needed.
