This is a fairly lean version of beef stroganoff, as most recipes call for more cream. This is something you can easily adjust to your tastes. I like a little thicker version, with just enough sauce to coat the meat and noodles.

1 tablespoon vegetable oil
2 pounds beef chuck roast, cut into 1/2-inch thick strips
salt and pepper to taste
1 tablespoon butter
½ medium onion, sliced or diced
8 ounces sliced mushrooms
2 cloves garlic, minced
1 ½ tablespoons all-purpose flour
½ cup white wine
2 cups beef broth, divided
¾ cup creme fraiche
1 tablespoon fresh chopped chives
salt and pepper to taste

Steps:

  • Season beef generously with salt and pepper.
  • Heat oil in a large skillet over high heat until nearly smoking. Stir in beef; cook, stirring constantly, for 6-7 minutes, until liquid evaporates and meat browns. Remove meat from the pan and set aside.
  • Stir butter, mushrooms and onions into the pan; cook and stir over medium heat until the vegetables are lightly browned. Add garlic and stir for 30 seconds. Stir in flour; cook for 1-2 minutes until incorporated.
  • Stir in wine and 1 cup of stock, scraping the bottom of the pan to release any browned bits. Bring to a simmer, cook for 3-4 minutes, until the sauce thickens.
  • Return beef to the pan. Stir in remaining cup of stock; bring to a simmer and cook on low heat for about 1 hour with the lid on, until the beef is tender and the sauce is thick. Stir every 20 minutes.
  • Stir in creme fraiche. Stir in chives. Season with salt and pepper to taste.

1 large onion, chopped (about 2 cups)
1 pound white mushrooms, trimmed and halved (or quartered, if large)

2 tablespoons cornstarch
1/2 cup reduced-fat sour cream
2 tablespoons Dijon mustard
Cooked thin egg noodles, for serving

Steps:

  • In a 5- to 6-quart slow cooker, toss beef, onion, and mushrooms with 1 1/2 teaspoons coarse salt and teaspoon pepper. Cover, and cook on low until meat is tender, about 8 hours (or on high for 6 hours).
  • In a 2-cup glass measuring cup, whisk cornstarch with 2 tablespoons water. Ladle 1 cup cooking liquid into measuring cup; whisk to combine. 2 teaspoons salt

¼ cup butter
1 ½ onions, minced

1 (10.5 ounce) can condensed beef broth, divided
⅓ cup dry white wine
6 cloves garlic, minced

1 (16 ounce) package broad egg noodles

1 pinch paprika, for garnish

According to legend, this recipe was invented by a chef working for a Russian General, Count Pavel Stroganov in the 1890's. Beef Stroganoff is basically tender strips of beef and mushrooms, cooked in a creamy sauce and rounded off with sour cream. You may want to make this with a tender cut of beef, such as tenderloin or top sirloin. Traditionally served over egg noodles, it also tastes delicious on rice or spaetzle.

1 onion, finely diced
1 lb top sirloin steaks or 1 lb tenderloin, cut in very thin strips
1/2 lb cremini mushrooms or 1/2 lb button mushroom
3 tablespoons oil
6 tablespoons butter
1 tablespoon flour
1 cup sour cream or 1 cup creme fraiche
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon lemon zest
1/2 cup beef broth
salt and pepper
chopped parsley

Steps:

  • Cut the beef in very thin strips. The easiest way to do that is to put the meat in the freezer until slightly frozen. Add salt and pepper and 1 TBS oil to the beef strips and mix together.
  • Melt 3 TBS butter and 1 TBS oil in a large skillet on medium heat. Increase heat and add strips of beef. You want to cook the beef quickly, browning it on each side. You may need to work in batches.When both sides are brown, remove the beef into a bowl and set aside while keeping warm.
  • Add remaining butter and oil to the pan and saute the onions until golden, add the sliced mushrooms and cook for a few minutes, allowing them to soak up the pan drippings.
  • Add the flour and continue stirring, add the broth and let it simmer until the sauce has thickened and the floury taste is cooked out. Stir in the lemon zest, lemon juice and mustard, add salt and pepper to taste.
  • Put the meat back in the sauce, heat through and add 1/2 a cup of sour cream, do not let the sauce cook anymore otherwise it will curdle.
  • Serve on egg noodles, topped with a dollop of sour cream and garnish with chopped parsley. Enjoy!

1/2 lb fresh mushrooms

1 garlic clove, crushed

1 tablespoon fresh lemon juice
1/4 teaspoon fresh ground pepper

  • Partially freeze steak and slice diagonally across grain into 3" strips. (When we first made this recipe we only had hamburger in the house. We later made it with steak and found we preferred it with hamburger.)

1/2-3/4 lb fresh sliced mushrooms
1/2-3/4 cup minced onion
2 tablespoons butter
1 (10 1/2 ounce) can beef consomme
2 tablespoons tomato sauce or 1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon salt
3 tablespoons flour
1 cup sour cream
3 -4 cups hot cooked noodles or 3 -4 cups rice

  • Cut meat diagonally into very thin slices.

2 Tbsp. flour
1/2 cup water
2 tsp. instant beef bouillon granules
1/4 tsp. pepper
2 Tbsp. butter or margarine
1-1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 clove garlic, minced
4 cups hot cooked noodles

Steps:

  • Place steak in freezer 30 minutes to firm. Cut across grain into 2x1/2-inch strips.
  • Mix sour cream and flour in small bowl. Stir in water, bouillon and pepper; set aside.
  • Melt butter in large skillet on medium-high heat. Add 1/2 of the steak; cook and stir until steak is cooked through. Remove steak from skillet. Add remaining steak and vegetables to skillet; cook and stir until steak is cooked through and onion is tender. Return all steak to skillet. Reduce heat to medium.
  • Add sour cream mixture; cook until bubbly, stirring constantly. Cook an additional minute. Spoon over hot noodles.

  • Slice meat across the grain about 1/4 inch thick. small sliced strips. In large skillet over moderately high heat, heat 1 Tablespoon of the butter with the salad oil until foamy. Add mushrooms and onion and cook quickly, stirring often until brown. Remove mushroom mixture from pan with slotted spoon and reserve. If needed, add another 1 Tablespoon butter to pan. Add strips of meat and cook over high heat, turning meat and shaking pan just until meat browns.
