1 (5.3 ounce) container full-fat Greek yogurt
½ (8 ounce) package cream cheese, softened
2 tablespoons almond butter
2 tablespoons orange juice
1 tablespoon honey, or more to taste
1 tablespoon lemon juice
¼ teaspoon vanilla extract

Steps:

  • Beat yogurt and cream cheese together in a bowl. Stir in almond butter, orange juice, honey, lemon juice, and vanilla extract. Taste and adjust amounts to your liking.

1 cup whole-milk Greek yogurt, such as Fage
2 tablespoons chopped fresh tarragon
2 teaspoons grated lemon zest (1 large lemon)
1 tablespoon lemon juice (1/2 lemon)
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1 carrot, peeled and cut into matchsticks
1 red bell pepper, seeded and cut into matchsticks
1/2 English cucumber, cut into matchsticks
24 fresh chives

Steps:

  • For the dip: In a medium bowl, whisk together the yogurt, tarragon, lemon zest, lemon juice, olive oil and salt. Set aside for at least 5 minutes to allow the flavors to marry.
  • For the bundles: Make small bundles of 1 or 2 pieces each of the carrots, peppers and cucumbers. Tie each bundle at the equator with one of the chives, and trim the chive to the appropriate length. Serve alongside the tarragon-citrus dip.

1/4 cup sugar
1-1/2 teaspoons all-purpose flour
1 egg, lightly beaten
1/4 cup pineapple juice
2 tablespoons orange juice
2-1/4 teaspoons lemon juice
1-1/2 cups whipped topping
Assorted fresh fruit

Steps:

  • In a small saucepan, combine the sugar and flour. Stir in egg and juices. Cook and stir over low heat until mixture is thickened and reaches 160°. Cover and refrigerate until chilled. Just before serving, fold in whipped topping. Serve with fruit.

4 small ripe avocados , or 3 larger ones
200g natural yogurt
zest and juice 1 lime
juice ½ lemon
1 ¼kg baby new potatoes
2 tbsp olive oil
1 tsp hot chilli powder
1 tsp cumin seeds
200g bag tortilla chips , to serve

Steps:

  • Whizz half the avocado flesh with the yogurt, lime and lemon juice and seasoning. Dice the remaining avocado, then gently stir into the whizzed mix with most of the lime zest. Cover, then chill until ready to serve.
  • Boil potatoes for 6 mins, then drain well and toss with olive oil, chilli powder and cumin seeds. Now set aside until half an hour before your guests arrive.
  • Heat oven to 200C/180C fan/gas 6, then roast potatoes for about 30 mins, shaking the tray halfway, until golden and tender. Transfer the dip to one or two bowls, scatter with the remaining lime zest and serve with the hot potatoes, and tortilla chips for dipping.

1/4 cup orange juice
1 lime (zest and juice)

Steps:

  • Place all ingredients in a blender or food processor and puree until very smooth. You may have to scrape down the sides a few times, but it should get very smooth, light, and airy. Taste and add additional salt or pepper, as needed.
  • To use as a salad dressing, add 1 tablespoon of water at a time to the dressing and whisk or blend to incorporate well, until you've got it as thin as you like.
  • This will keep 3-4 days in the refrigerator, or can be frozen for 1-2 months in an airtight container. To use, simply thaw in your refrigerator or a bowl of cold water. Whisk to bring everything back together and serve cold!
