This is a great recipe I got from a weight watchers meeting. It is full of flavor and only 2 points per serving.

Number Of Ingredients 8

1 lb of shredded cabbage
1 (2 7/8 ounce) package ramen noodles (broken into small pieces)
1/8 cup slivered almonds (toasted & chopped)
2 cups mandarin orange segments (drained & rinsed well)
1 tablespoon canola oil
1/2 cup water
1/3 cup Splenda sugar substitute
1/4 cup apple cider vinegar

Steps:

  • In a large bowl, combine cabbage, noodles & almonds.
  • In a small bowl, mix oil, water, splenda & vinegar, stir until combined.
  • Pour over cabbage mixture and serve immediately.

"Richly-flavored sesame oil and piquant cilantro add a distinctly Asian flavor to America's favorite side dish - lightened up." Was 8 points; now it's 1 point. We Renovated Coleslaw by: Using fat-free mayonnaise instead of regular. Adding a touch of sesame oil and cilantro to boost flavor for virtually no POINTS.

3/4 lb packaged coleslaw mix (shredded cabbage and carrots)
1 medium red onion, thinly sliced
1/2 cup fat-free mayonnaise
1 teaspoon dark sesame oil
1/8 teaspoon table salt (or to taste)
2 tablespoons fresh cilantro, chopped
1/8 teaspoon black pepper (to taste)

Steps:

  • Combine all ingredients in a large bowl and toss until thoroughly combined. Cover with plastic and refrigerate until ready to serve. Yields about 1 cup per serving.

This delicious sauce can be made in a blender and then tossed with these crispy veggies. Makes for a quick lunch when you are in a hurry! From Weight Watchers - 2 points per 1 1/4 cup serving. NOTE: To add some "heat" to this dish, you may want to consider adding chopped chilies of your choice or some red pepper flakes!

3 tablespoons rice vinegar (unseasoned)
2 tablespoons reduced sodium soy sauce
2 tablespoons reduced-fat creamy peanut butter
2 tablespoons fresh ginger, coarsely chopped
1 tablespoon brown sugar, packed
1/2 head savoy cabbage, thinly sliced (about 5 cups)
1 red bell pepper, cut into thin strips
1 cup carrot (packaged matchstick-cut)
1/4 cup fresh cilantro, chopped
2 scallions, thinly sliced

Steps:

  • To make the dressing, combine the vinegar, soy sauce, peanut butter, ginger and brown sugar in a blender and puree. Toss together the remaining ingredients in a serving bowl. Drizzle the dressing and toss to coat evenly.

1 cup(s) uncooked jicama, shredded
1/3 cup(s) uncooked scallion(s), chopped
3 Tbsp mint leaves, fresh, minced
2 medium jalapeƱo pepper(s), seeded and minced
2 Tbsp orange marmalade
4 tsp rice wine vinegar
2 tsp toasted sesame oil
1/2 tsp table salt, or to taste
2 Tbsp sesame seeds, toasted

Steps:

  • In a large bowl, combine carrots, cabbage, radishes, jicama, scallions, mint and jalapenos. In a small bowl, whisk together marmalade, vinegar, oil and salt; drizzle over slaw and toss well to combine. Sprinkle with sesame seeds just before serving. Yields about 1 cup per serving.
