5 tablespoons butter, softened
1/2 cup sugar
1 egg
1/2 cup 2% milk
1-1/2 cups all-purpose flour
2-1/4 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
Melted butter and cinnamon-sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in milk. Combine the flour, baking powder, salt and nutmeg; add to creamed mixture just until moistened., Fill greased miniature muffin cups two-thirds full. Bake at 350° for 14-16 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Dip muffins in melted butter, then roll in cinnamon-sugar. Serve warm.

1 (11 ounce) can mandarin oranges (a 15-oz can works as well)
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup sugar
1/3 cup shortening
1 egg, slightly beaten
1/3 cup milk
1/4 cup melted butter
1/4 cup sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F Place muffin papers in muffin tins or spray tins with vegetable oil.
  • Drain oranges and pat dry with paper towels. Set aside.
  • Whisk together flour, baking powder, salt, nutmeg, allspice, and sugar. Cut in shortening with a pastry blender or fork until mixture resembles coarse crumbs.
  • Whisk together egg and milk. Pour into flour mixture and stir with a fork just until combined. Do not overmix. Batter will be thick. (If your batter is crumbly, you may add a SMALL splash of milk). Carefully fold in mandarin oranges.
  • Fill muffin tins 3/4 full. Bake 20 to 25 minutes until center tests done and muffins are lightly golden.
  • While muffins are baking, place melted butter in a small bowl. In another small bowl, whisk together sugar and cinnamon.
  • When muffins are done, dip each hot muffin first into the butter and then into the cinnamon sugar. Let cool.

1 large apple, peeled and diced
1/3 cup walnuts, chopped
1 egg
2/3 cup half-and-half cream or 2/3 cup milk
1 teaspoon cinnamon
2 tablespoons brown sugar

Steps:

  • Set oven to 400 degrees.
  • Line 16 muffin tins with paper liners.
  • In a large bowl, sift together flour, sugar, baking powder, 1/2 teaspoon cinnamon and salt.
  • Cut in the butter with a pastry blender.
  • Measure out 1/4 cup to add to topping ingredients; set aside.
  • Add in the chopped apples and nuts to the flour mixture.
  • In a small bowl, whisk together egg and half and half cream, then add to the flour mixture; stir JUST until combined, mixture will be lumpy.
  • Spoon into muffin tins about 2/3 full.
  • To the reserved 1/4 cup butter mixture add in 1 teaspoon cinnamon and 2 tablespoons brown sugar; toss to combine.
  • Sprinkle the topping mixture over each muffin.

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg

Steps:

  • In a mixing bowl combine flour, the 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the dry ingredients.
  • In another bowl, beat egg slightly; stir in milk and 1/3 cup melted butter or margarine. Add egg mixture to flour mixture. Stir just until moistened (the batter may be lumpy). Lightly grease 12 muffin cups. Fill cups about two-thirds full with batter. Bake in 350 f oven for 20 to 25 minutes or until muffins are golden.
  • Meanwhile, in a shallow bowl combine the 1/4 cup sugar and cinnamon. Immediately dip tops of hot muffins into the 1/4 cup melted butter or margarine, then into the cinnamon-sugar mixture until coated. You need to work quickly as the muffins are hot.
  • Baked muffins can be placed into freezer containers or bags and frozen up to 1 month.
  • NOTE: You might find that you don't get all 12 muffins from this recipe. It really depends on how much you fill each muffin cup. I was able to get all 12 muffins from this recipe.

In the preparation time I don't include the time while the oats and the sour milk are standing in the bowl (1 hour).

1 cup rolled oats
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup butter, softened

3/4-1 teaspoon salt

Steps:

  • Combine oats and buttermilk or sour milk in a bowl, mix and let stand 1 hour.
  • Sift together flour, baking soda, baking powder and salt.
  • Cream together butter and sugar with an electric mixer.
  • Add the egg and beat until light and fluffy.

  • For the muffins: Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners.
  • Whisk together the almond flour, flax seed meal, coconut, baking powder, nutmeg, salt and 1 1/2 teaspoons of the cinnamon in a medium bowl.

1/2 cup buttermilk
1 large egg

Steps:

  • Preheat oven to 375 degrees. Butter a mini-muffin tin, and set aside. In a small bowl, combine 1/2 cup sugar and 1 tablespoon cinnamon; set aside.
  • In a large bowl, combine flour, baking powder, salt, and remaining teaspoon cinnamon; whisk to combine. In a small bowl, combine 6 tablespoons butter, remaining 1/2 cup sugar, buttermilk, and egg; whisk to combine.   • In a medium sized mixing bowl, mix all of the flour, all but about a tablespoon of the sugar, half of the cinnamon, the butter, and 1 2/3 cups of the water, set the rest aside in case the batter is too thick.

1 Granny Smith apple, sliced thin

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a skillet over medium heat and fry until crisp, 10 to 12 minutes.
  • Meanwhile, add the butter, sugar, cinnamon and vanilla to a bowl. Using a fork, mash everything together until completely combined. Spread the mixture onto the split side of each English muffin half, completely covering the surface to the edges.
  • Place the English muffins on a baking sheet and bake for 10 minutes, then remove from the oven. Turn the oven to the broiler setting and broil until golden brown and bubbling, about 2 minutes. Watch carefully so they do not burn.
  • While the bacon and muffins cook, add the peanut butter to a microwave-safe bowl. Microwave until heated through and pourable, about 30 seconds.
  • Assemble by topping the muffin halves with a layer of sliced apples and drizzling the warm peanut butter over the top in a thin stream. Cut or tear the bacon rashers in half and place 1/2 piece of bacon onto each muffin half, then serve.

Topping
1/4 cup sugar
1 teaspoon cinnamon

Steps:

  • Heat oven to 400 degrees Fahrenheit.
  • Grease or line your mini muffin pans..
  • In a large bowl, mix together the flour, baking powder, salt, and cinnamon.
  • Melt the butter (I nuke it in a microwave-safe bowl for about 30 seconds on medium heat).
  • In a separate medium bowl, beat together the eggs, brown sugar, milk, melted butter, and vanilla.
  • Pour the wet ingredients over the flour mixture, and mix just until incorporated; do not overmix.
  • Scoop the batter by tablespoonful into the mini muffin cups (or, if you're making normal-size muffins, divide the batter between 12 cups).

2 cups unbleached all-purpose flour (10 ounces)
1 tablespoon baking powder
1/2 teaspoon table salt
1 large egg
1 cup granulated sugar (7 ounces)
4 tablespoons unsalted butter, melted and cooled slightly
1 1/4 cups sour cream (10 ounces)
1 1/2 cups frozen blueberries, preferably wild
1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter

Steps:

  • Adjust oven rack to middle position and heat oven to 350°F Spray standard muffin tin with nonstick vegetable cooking spray.
  • Whisk flour, baking powder, and salt in medium bowl until combined. Whisk egg in second medium bowl until well-combined and light-colored, about 20 seconds. Add sugar and whisk vigorously until thick and homogeneous, about 30 seconds; add melted butter in 2 or 3 steps, whisking to combine after each addition. Add sour cream in 2 steps, whisking just to combine.
  • Add frozen berries to dry ingredients and gently toss to combine. Add sour cream mixture and fold with rubber spatula until batter comes together and berries are evenly distributed, 25 to 30 seconds (small spots of flour may remain and batter will be thick). Do not overmix.
  • Use ice cream scoop or large spoon to drop batter into greased muffin tin. Bake until light golden brown and toothpick or skewer inserted into center of muffin comes out clean, 25 to 30 minutes, rotating pan from front to back halfway through baking time. Invert muffins onto wire rack, stand muffins upright, and cool 5 minutes.
  • While muffins are cooling, mix sugar and ground cinnamon in small bowl and melt butter in small saucepan. After baked muffins have cooled five minutes, working one at a time, dip tops of muffins in melted butter and then cinnamon-sugar. Set muffins upright on wire rack; serve.

Ingredients:
MINI MUFFINS
1 and 3/4 cup white-whole wheat flour (or all-purpose flour)
1 and 1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon nutmeg
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup dark brown sugar
1 large egg
1 and 1/2 tsp vanilla extract
3/4 cup pumpkin puree (not pumpkin pie filling)
1/2 cup milk
CINNAMON SUGAR COATING
1/4 cup (1/2 stick) unsalted butter
1/2 cup white sugar
2 Tablespoons ground cinnamon

Steps:

  • Directions: Preheat oven to 350F. Spray mini muffin tin with nonstick spray. Set aside. In a large bowl, combine the flour, baking powder, salt, cinnamon, pumpkin pie spice, and nutmeg. Set aside. In a medium sized bowl, whisk together the melted butter and brown sugar. Add the egg and stir for about 1 minute. Add the vanilla, pumpkin puree, and milk. Slowly pour wet ingredients into the dry. Stir together until just combined - do NOT overmix. Using a small spoon, spoon the batter into the muffin tins, about 2/3 way full. For ease, I used a small spoon sprayed with nonstick spray so that the batter easily fell off the spoon into the tin without using my fingers. Bake for 11-12 minutes, or until a toothpick inserted into the center comes out clean. While the muffins are cooling, make the coating. Combine the sugar and cinnamon a small dish. In a separate small dish, melt the butter. Once the muffins are relatively cool, dip into the melted butter and then into the cinnamon sugar. Muffins taste best on the same day though they can be stored at room temperature for 3 extra days.

4 -6 teaspoons butter, more if wanted
2 ripe bananas, sliced
2/3 tablespoon sugar
1/3 teaspoon cinnamon

Steps:

  • Mix cinnamon and sugar.
  • Spread butter on the cut side of the 4 halves of the toasted muffins.
  • Place bananas on the buttered muffins top with the cinnamon and sugar mixture.
  • Adjust cinnamon and sugar to your taste.

MUFFINS
1/3 cup (5 Tablespoons or 75g) unsalted butter, softened to room temperature
1/2 cup (100g) granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup (120ml) milk (cow, almond, soy)
1 and 1/2 cups (190g) white whole wheat flour*
1 and 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
8 teaspoons Nutella
CINNAMON-SUGAR TOPPING
1/4 cup (50g) granulated sugar
2 teaspoons cinnamon
3 Tablespoons (45g) unsalted butter

Steps:

  • Directions: Preheat oven to 425F. Spray muffin pan with cooking spray and set aside. In a large bowl of an electric or stand mixer, cream butter and sugar together on medium speed. Mix in the egg, vanilla extract, and milk. Gently stir in flour, baking powder, cinnamon, nutmeg, and salt. Do not overmix - stir until *just* combined. Spoon 1 heaping Tablespoon of batter into muffin cavity. Layer with 1 teaspoon Nutella in the center and spoon another heaping Tablespoon of batter on top. If the muffin tins are completely full, that is ok. They will not overflow. Repeat layering batter and Nutella into each muffin tin. I got exactly 8 muffins. Fill the empty muffin tins halfway with water for even baking. Bake at 425F for 5 minutes. Keeping the muffins in the oven, reduce temperature to 350F and bake for an additional 13-17 minutes until batter is set. Allow muffins to cool for about 5 minutes. While the muffins are cooling, make the cinnamon-sugar topping. Melt the butter for about 30 seconds in the microwave. Stir and stick back in microwave if not fully melted. In a separate small bowl, stir together the sugar and cinnamon. Dip the top of each muffin into the melted butter and dip into the cinnamon-sugar mixture. Swirl them around in the cinnamon-sugar a bit to make sure you get a thick coating. Set upright on cooling rack. Muffins stay fresh in an airtight container up to 1 week. Muffins freeze well, up to 3 months.
