- Butter a shallow 2-quart baking dish. In a large bowl, whisk together eggs, milk, sugar, cinnamon, and salt. Dip brioche in egg mixture, then arrange in dish, overlapping slightly and sprinkling raisins between slices. Pour remaining egg mixture over brioche and let stand 30 minutes or refrigerate up to overnight. Preheat oven to 325 degrees.
- Bake until puffed and custard is just set in center, 55 to 65 minutes (tent with foil, if browning too quickly). Let cool at least 15 minutes before serving.

- 1. Butter a casserole dish. In a bowl whisk the milk, vanilla, sugar, eggs, maple Syrup, and 1/2 tsp cinnamon together. Set aside.
- 2. Rip bread in to pieces like you would for stuffing. Toss in egg mixture with the apples and raisins. Coat evenly.
- 3. Pour in to a casserole dish. Drizzle melted butter over it. Mix 2 TB sugar with a 1/2 tsp cinnamon. Sprinkle over casserole. Dot with pieces of cream cheese. Cover with saran and put in fridge at least 3 hours or over night .
- 4. Bake at 350 for 35-45 minutes, or until lightly browned. I drizzle a little more butter over it before serving. Serve right away after removing from oven. Dust with powdered sugar, or serve with syrup.

- 2. Mix cream cheese, butter and 1/4 cup maple syrup until smooth.
- 3. Spread on top of bread, leaving some openings through which to pour egg mixture.
- 4. Beat eggs, half & half and 1/2 cup maple syrup. Pour over bread and sprinkle with cinnamon sugar.
- 5. Cover and refrigerate overnight.
- 6. Uncover and bake 50 to 55 minutes at 350°.

- In a small bowl, mix together the cream cheese, sugar, and 1/8 teaspoon of cinnamon until thoroughly combined. Spread cream cheese mixture onto 4 slices of raisin bread. Top each spread slice with another slice of raisin bread to make 4 sandwiches.
- In a shallow bowl, beat the eggs with milk and 1/8 teaspoon of cinnamon. Dip each sandwich into the egg mixture on both sides.

- Whisk first 6 ingredients in 13x9x2-inch glass baking dish. Add bread to egg mixture and let soak 20 minutes, pressing down occasionally.
- Preheat oven to 350°F. Melt 2 tablespoons butter in heavy large skillet over medium heat. Working in batches, add bread to skillet. - Prepare Apple Filling: In 12- inch skillet, melt margarine over medium heat. Add apples and sugar, and cook 20 minutes or until apples are deep golden, stirring occasionally. Stir in apple brandy; cook 1 minute longer.
- Prepare French toast: Grease 3 1/2 to 4- quart shallow ceramic casserole or 13" by 9" glass baking dish. Arrange half of bread slices, overlapping slightly, in casserole.
- In medium bowl, with wire whisk or fork, beat milk salt, cinnamon, and eggs until well mixed. Pour half of egg mixture over bread in casserole. - 1. Cube the cinnamon/raisin bread. Place 1/2 of the bread cubes in a greased 9" x 13" dish. Top with cream cheese and remaining bread.
- 2. In a large bowl combine remaining ingred's. Pour over the top of the bread mixture. Cover and refrigerate overnight.
- 3. In the morning...Remove from the fridge and allow to stand for 30 mins. Preheat oven to 350 degrees. Bake covered for 30 minutes until knife inserted comes out clean. Dust with powder sugar.
- 4. Warm syrup in pan over low heat or in microwave drizzle onto each serving. Enjoy!

BUTTERMILK FRENCH TOAST WITH HOMEMADE CINNAMON - RAISIN BREAD
A new twist on the classic French toast, using buttermilk for a bit of extra "oomph"! For a chef's treat (which was my favourite part growing up) pour the leftover egg mixture into the pan and cook until crispy on the bottom and set on the top like an omelette. - On the lowest setting of your toaster, toast the slices of bread until just slightly "blonde" in colour and dry on the surface. Set aside.
- In a shallow dish, whisk together the vanilla, cinnamon and brown sugar to evenly distribute the cinnamon.
- Add the buttermilk and eggs and whisk to combine.
- Place a large frying pan (we use non-stick but cast iron would be awesome) over medium heat and add 1 tbsp of the butter.

- Place bread in a shallow baking dish large enough to hold the bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak 10 minutes more or until soaked through.
- Preheat oven to 250 degrees. Place a wire rack on a baking sheet; set aside. Heat 1 tablespoon butter and 1 tablespoon vegetable oil in a large skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread.
