CINNAMON (RAISIN) CREAM CHEESE STRATA



Cinnamon (Raisin) Cream Cheese Strata image

I like to make this when we have overnight guests. They can enjoy their morning coffee and maybe some fruit while it bakes.

4 large eggs, lightly beaten
2 c milk
2 tsp ground cinnamon
1/4 c maple syrup
1 large loaf of cinnamon swirl or cinnamon raisin swirl bread, buttered, crusts removed
5 oz cream cheese, cut in small cubes
warm maple syrup, for serving

Steps:

  • 1. Preheat oven to 350 degrees. Butter a 2 1/2 quart casserole or 9x13 Pyrex pan.
  • 2. In a large bowl, combine lightly beaten eggs, milk cinnamon and 1/4 cup maple syrup.
  • 3. Place a layer of buttered bread in the bottom of prepared baking dish. Sprinkle with 1/2 cream cheese. Repeat with another layer of bread. The shape of your pan decides how many layers you will make.
  • 4. Slowly pour egg mixture over top and sprinkle with remaining cream cheese cubes. Let stand one hour or cover and refrigerate up to 24 hours.
  • 5. Set baking sheet on lowest rack of over to catch any drippings. Bake strata, uncovered, on middle shelf until top is nicely browned and bubbly. About 1 hour.
  • 6. Serve with warm maple syrup.

1/2 loaf thick sliced cinnamon raisin bread, cubed
4 ounces diced cream cheese
4 eggs
1 1/4 cups half-and-half
3 tablespoons butter (melted)
2 tablespoons maple syrup

Steps:

  • Spray 8x8 inch glass dish, add bread cubes& top with cream cheese, do two layers.
  • Mix remaining and pour over bread& cheese.
  • Refrigerate overnight.
  • Bake 325 for 35-40 minutes.

1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 ½ cups half-and-half cream
6 tablespoons butter, melted

Steps:

  • Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
  • In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

2 apples - peeled, cored, and diced
2 tablespoons butter
2 tablespoons brown sugar
1 tablespoon ground cinnamon, divided
1 teaspoon salt
4 eggs
½ cup half-and-half
4 tablespoons cream cheese, softened
3 stale cinnamon bagels, cubed
¼ cup chopped pecans, or more to taste

Steps:

  • Grease an 8-inch square baking dish.
  • Place apples, butter, brown sugar, 1/2 tablespoon cinnamon, and salt into a skillet over medium heat. Saute until sugar bubbles, about 5 minutes. Set aside.

24 slices cinnamon raisin bread, crusts trimmed
6 eggs
4 cups half-and-half
1 cup sugar
2 teaspoons vanilla extract
1 dash nutmeg
16 ounces cream cheese
1 teaspoon vanilla
2 eggs
1/2 cup sugar
maple syrup

Steps:

  • Lightly butter a 3-quart baking pan. Cover the bottom of the pan with half the bread slices.
  • In a medium bowl combine 6 of the eggs with all the half and half, 1 cup of sugar and 2 teaspoons of vanilla. Pour half the egg mixture over the bread. In a separate bowl whisk the cream cheese, remaining 2 eggs, teaspoon of vanilla, and 1/2 cups of sugar until smooth and creamy.
