Steps:
- Sift flour, cinnamon, salt, and baking soda together in a bowl.
- Beat butter and sugar with an electric mixer in a large bowl until smooth. Beat eggs, one at a time, into butter mixture until completely incorporated. Beat vanilla extract in with the last egg. Mix flour mixture into egg mixture until just incorporated. Fold in the chocolate chips, mixing dough just enough to evenly combine. Wrap dough in plastic and chill overnight.
- Preheat oven to 375 degrees F (190 degrees C).
- Roll cookie dough out on a lightly floured surface and cut into desired shapes with cookie cutters. Arrange cookies about 1 1/2 inch apart on baking sheets.
- Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in the eggs, orange zest and vanilla. Combine the flour, baking soda, cinnamon and salt; gradually add to the creamed mixture and mix well. Stir in the chips and walnuts. Cover and chill for 2 hours or until easy to handle., On lightly floured surface, roll out dough to 1/2-in. thickness. Cut with a lightly floured 3-in. round cookie cutter. Place 1 in. apart on greased baking sheets. , Bake at 375° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

- Preheat the oven to 300 degrees F (150 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs, one at a time then stir in the orange extract. Combine the flour, baking soda, salt and cinnamon; stir into the sugar mixture. Fold in the chocolate chips and frozen marshmallows. Drop dough by heaping spoonfuls onto the prepared cookie sheet.
- Bake for 20 to 22 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.

- 1.) Preheat oven to 350 degress.
- 2.) Beat butter and sugar in a mixer until creamy.
- 3.) Add the eggs.
- 4.) Add the baking soda, baking powder, salt, vanilla, cinnamon, and peanut butter. Beat on low for about 15 seconds. Add flour gradually. Mix until dough forms.

MOCHA CINNAMON CHOCOLATE CHIP COOKIES
Steps:
- Heat the oven to 350 F. Line a cooling rack with paper towels. In a medium bowl, comb~e the flour, baking powder, cinnamon and salt. In a larger bowl, beat the butter and espresso powder or coffee until well combined. Add the confectioners' sugar and brown sugar and beat until combined. Stir in the flour mixture about 1/2 cup at a time, mixing well after each addition. Stir in the chocolate chips. Put the granulated sugar in a small, shallow bowl. Scoop out about 1 tablespoon of dough and flatten it slightly into a disc. Dip one side into the granulated sugar and then set the disc, sugar side up, on an ungreased baking sheet. Repeat with the remaining dough, spacing the discs about 2 inches apart. Bake until the edges start to darken, 12 to 14 minutes. (Begin checking after 12 minutes, but don't be tempted to remove them too soon.) Let the cookies cool for 1 to 2 minutes on the baking sheets. Transfer them to the papertowel- lined racks to cool completely. Bake the rest of the dough the same way.

- Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper. In a large bowl, mix together the coconut oil, brown sugar, granulated sugar, vanilla and egg until combined and almost smooth.
- In a medium bowl, whisk together the whole wheat pastry flour, cocoa powder, cinnamon, baking soda, baking powder and salt. Add the flour mixture to the coconut oil mixture and stir until just combined. Stir in the chocolate chips.
- Using a rounded 1 tablespoon of dough for each cookie, drop half of the cookies onto one of the prepared baking sheets. Refrigerate the dough for 15 minutes. Bake until the edges are set and the middle of the cookies are still soft, about 10 minutes. While the first batch is baking, scoop and refrigerate the second batch, then bake. - INSTRUCTIONS Preheat oven to 375°F. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking soda, salt, and cinnamon. Beat until combined, scraping bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a spatula or wooden spoon. Stir in the 2 cups Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips. Shape dough into 1-inch balls and place 2 inches apart onto an ungreased baking sheet. Bake for 6 to 8 minutes or just until edges are lightly browned. Cool on cookie sheet for 2 minutes. Transfer to wire racks; cool completely. - Heat oven to 350 degrees.
- In a large bowl (or using your stand mixer) combine butter, white sugar, and brown sugar, and beat with an electric mixer until creamy and fluffy. Slowly add the eggs, and vanilla, and continue to mix until combined.
- In a separate bowl combine the flour, cinnamon, salt, and baking soda. Slowly add the dry flour ingredients to the wet ingredients, still beating until the cookie dough forms. Add the chocolate chips and fold them into the dough.
- Take a small amount of cookie dough and place it in one hand, top with a fresh strawberry, and then top with another small amount of cookie dough. Using your hands, carefully cup around the cookie dough to enclose the strawberry, pinching the sides as you go.
- Bake for 11-12 minutes or until the cookies is done to your liking. Let cool on the cookie sheet for 3 minutes before removing to a wire rack to cool completely.
