CINNAMON ROLL WAFFLES

1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
2 cups buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup butter, melted
3/4 cup brown sugar, packed
1 tablespoon ground cinnamon
4 tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Too prepare the waffles: In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. Make a well in the center of the mixture; set aside.
  • In a separate bowl, whisk together eggs, buttermilk, oil and vanilla. Pour into the bowl with the dry ingredients. Stir just until moistened; batter will be slightly lumpy.
  • Preheat a waffle iron and spray with nonstick spray. Pour batter into waffle iron grid and close the lid. Bake until waffles are completely done- follow your waffle iron's instructions. Use a fork to remove finished waffles. Repeat with remaining batter. Keep waffles warm until ready to serve (Placing in a 200 degree oven is will do the trick).
  • To prepare the cinnamon topping: In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside.
  • To prepare the cream cheese topping: In a medium, microwave-safe bowl- heat butter and cream cheese for 30 to 60 seconds; just until melted. Stir together until smooth; whisk in powdered sugar and vanilla extract.
  • When ready to serve, place waffle on plate, drizzle cinnamon topping, then drizzle cream cheese topping to taste. Serve immediately.

2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
3 teaspoons ground cinnamon
2 eggs, separated
1/8 teaspoon cream of tartar
1 3/4 cups buttermilk
1/4 cup butter, melted
2 tablespoons maple-flavored syrup
1 tablespoon vanilla
2 tablespoons butter, melted
2 tablespoons milk
1 cup powdered sugar

Steps:

  • Heat waffle maker. In large bowl, stir together flour, salt, baking soda and cinnamon; set aside.
  • In small bowl, beat egg whites and cream of tartar with electric mixer on high speed until stiff peaks form; set aside. In medium bowl, beat egg yolks, buttermilk, 1/4 cup melted butter, the syrup and vanilla; set aside.
  • Make well in center of flour mixture. Add egg yolk mixture; mix just until combined. Fold in beaten egg whites.
  • Spray waffle maker lightly with cooking spray. Spoon batter onto hot waffle maker, following manufacturer's directions for recommended amount. Close lid of waffle maker; bake 3 to 4 minutes or until steaming stops and waffles are golden brown. (To make ahead, place waffles on ovenproof plate in 200°F oven until ready to serve.)
  • In another small bowl, beat 2 tablespoons melted butter, milk and powdered sugar until smooth. Drizzle over waffles. Serve remaining glaze on the side.

  • Preheat a waffle iron according to manufacturer's instructions.
  • Whisk flour, white sugar, baking powder, and 1 teaspoon salt together in a large bowl. Beat warm milk, 1/3 cup melted butter, eggs, and 1 teaspoon vanilla extract together in another bowl. Add milk mixture to flour mixture and stir until batter is lumpy and just-moistened.

If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

1 roll refrigerated cinnamon rolls with cream cheese frosting (the small ones)
1/2 cup powdered sugar
1/4 cup milk (can use almond, soy or other non dairy milk)
1/4 cup real maple syrup
cooking spray

Steps:

  • Preheat your waffle iron; open cinnamon rolls and remove frosting.
  • In small bowl, whisk together frosting, milk, powdered sugar, & maple syrup until smooth; set aside.
  • Spray waffle iron with cooking spray; set cinnamon rolls on waffle iron and press down, cooking for approximately 4-5 minutes until cooked. You may have to press down on the iron during cooking if they start to puff up too much. You may need to spray again to prevent sticking after cooking several waffles.
  • Serve with glaze. Be prepared for much thanks! (And have an extra can on hand just in case!).
