8 ounces cream cheese, softened
1/2 cup light brown sugar, packed
1 teaspoon vanilla extract
1 loaf cinnamon-raisin bread
2 golden delicious apples
1 tablespoon orange juice
1/4 cup salted peanuts, chopped

Steps:

  • Combine cream cheese, brown sugar and vanilla; beat at medium speed with an electric mixer about a minute or until smooth; set aside.
  • Cut each bread slice into a 3-inch round, or if it's large enough, two rounds at least 2 inches. Use a fruit glass to help.
  • Core apples and cut into seven slices, and brush with orange juice.
  • Spread about a tablespoon of cheese mixture onto each bread round; top with an apple slice.
  • Sprinkle peanuts in center.

1 teaspoon lemon juice
1 granny smith apple, peeled, cored and finely chopped
8 ounces light cream cheese, softened
1 teaspoon brown sugar
1 tablespoon low-fat milk
1/2 cup grated carrot
1/4 cup golden raisin
1/4 cup finely chopped pecans
1/4 teaspoon cinnamon
wheat bread, crusts removed

Steps:

  • In a small bowl, toss the lemon juice with the finely chopped apple.
  • Add the softened cream cheese, brown sugar and milk and beat well.
  • Stir in all remaining ingredients; mix well.
  • Spread onto crustless bread, sandwich and cut into squares or triangles.

2 slices raisin bread
1 tablespoon cream cheese
1 apple, sliced
1 generous tablespoon cinnamon sugar
2 tablespoons salted butter, softened
1 teaspoon powdered sugar

Steps:

  • Lay out the bread slices and spread them both with cream cheese. Lay the apple slices on one piece of bread. Sprinkle on the cinnamon sugar. Press the 2 slices together.
  • Butter one side of the sandwich and put it on a hot panini maker butter-side down. Butter the other side, close the lid and cook until it's toasted and warmed through. (If you do not have a panini maker, you can grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Turn to grill the other side in the same way.)
  • Sprinkle with powdered sugar, cut in half and serve!

1 cup icing sugar
2 tablespoons frozen apple juice concentrate
1 teaspoon ground cinnamon

Steps:

  • In a medium bowl cream butter and cream cheese together, until just incorporated.
  • Add sugar and cinnamon and beat till blended.
  • Add frozen apple juice concentrate and beat till smooth.
  • Keep refrigerated. For easier spreading serve at room temperature.
