8 large red bell peppers
2 tablespoons unsalted butter
1 cup chopped onion
2 cloves minced garlic
1/4 cup tomato paste
6 cups chicken stock
2 cups heavy cream
2 tablespoons chopped fresh cilantro leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 to 2 tablespoons cornstarch
1 cup sweet corn kernels, lightly roasted
Cilantro Lime Sour Cream, recipe follows
1 cup sour cream
1/2 lime, juiced
1 teaspoon finely minced fresh cilantro leaves

Steps:

  • Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. Chop skinned peppers and set aside.
  • Saute the butter, onions, and garlic until soft in a heavy bottomed soup pot on medium-low heat. Add the reserved red peppers, tomato paste, and chicken stock. Bring to a low boil, reduce the heat, and then simmer for 10 minutes. Stir in the heavy cream, cilantro, salt, and pepper. Stir in the cornstarch mixed with a little cold water to thicken. Simmer 5 minutes. *Let the soup cool slightly, and then blend in batches in a blender, or use an immersion blender to puree. Sprinkle the roasted corn over the soup before serving and top with a dollop of Cilantro Lime Sour Cream.
  • In a mixing bowl, whisk all ingredients vigorously until light and creamy.

1 onion, chopped
2 garlic cloves, minced
1 tablespoon chili powder
2 skinless boneless chicken breast halves, cut into 3/4-inch pieces
5 cups canned low-salt chicken broth
1 cup fresh or frozen corn kernels
1 cup chopped seeded tomatoes
1/2 bunch fresh cilantro sprigs, tied together with kitchen string.
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice
Sour cream

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onion and garlic; sauté until slightly softened, about 3 minutes. Add chili powder; stir 1 minute. Add chicken; stir 2 minutes. Add broth, corn, tomatoes and 1/2 bunch cilantro sprigs to saucepan; bring to boil. Reduce heat and simmer until chicken is cooked through, about 10 minutes. Discard cilantro sprigs. (Can be made 1 day ahead. Chill. Bring to simmer before continuing.)
  • Add chopped cilantro and lime juice to soup. Season with salt and pepper. Garnish with sour cream.

6 bacon slices, chopped

1 cup (packed) chopped fresh cilantro

Steps:

  • Place beans in large bowl. Add enough water to cover by 3 inches. Let stand overnight. Drain well.
  • Cook bacon in heavy large pot over medium heat until brown but still soft, about 4 minutes. Add celery, onion, carrots and leeks and sauté until vegetables begin to soften, about 10 minutes. Add beans, chicken broth, tomato, 1/2 cup cilantro, parsley, garlic, jalapeño, vinegar, cumin and coriander. Bring to boil. Reduce heat to medium-low, cover and simmer soup until beans are very tender, stirring occasionally, about 2 hours.

1/2 cup chopped onion (about 1 small)
1/4 cup chopped celery
1 teaspoon ground cumin, divided

4 celery ribs, diced
1 lb red lentil
1 bay leaf
1 1/2 teaspoons ground cumin
2 quarts chicken broth or 2 quarts vegetable broth, more if needed
1 lime, juice of
1/2 cup fresh cilantro or 1/2 cup fresh parsley, minced
salt and pepper, to taste

Steps:

  • Melt butter in soup pot over medium heat. Add onions and celery; cook until onions are translucent, about 4-6 minutes.
  • Add bay leaf, cumin and garlic, cook 1-2 minutes until fragrant. Add lentils and coat evenly with butter, cook 4-5 minutes, stirring frequently.
  • Add 6 cups broth. Bring to simmer and stir often so lentils don't scorch. Cook soup until lentils begin to dissolve and begin to look like a pureed soup. Add additional broth as needed to adjust consistency.

  • In large pot, cook onion, celery, garlic, chili powder and cumin in olive oil. Cook until soft. Add the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes. Steps:

  • Spray 5-quart oval slow cooker with cooking spray. Sprinkle chicken evenly with Caribbean rub; set aside.
  • In 12-inch skillet, heat 1 teaspoon of the oil over medium-high heat. Cook onion and garlic in oil 3 minutes, stirring occasionally, until tender. 1 (14 1/2 ounce) can fire roasted diced tomatoes or 1 (14 1/2 ounce) can regular diced tomatoes
6 cups low sodium chicken broth
1 (6 1/2 ounce) package Martha White yellow cornbread mix
2 teaspoons grated lime peel
2 tablespoons milk
1/2 cup sour cream
1/2 cup fresh cilantro, coarsely chopped
sour cream, chopped avocado, chopped cilantro, lime wedges

Steps:

  • HEAT 1 tablespoon oil in cast iron 5-quart fryer, over medium heat. Add chorizo and cook 2 to 3 minutes, using back of spoon to break into pieces. Add chicken. Cook 2 minutes. Add onion, celery, carrots, poblano pepper and salt and cook 3 to 4 minutes, stirring occasionally. Add garlic. Cook 1 minute. Add 2 tablespoons oil. Stir in flour. Cook 1 minute. Add tomatoes and chicken broth. Stir well, scraping bits off bottom of pan. Cover. Bring to a boil for 10 minutes. Uncover and simmer 15 to 20 minutes.
  • STIR together cornbread mix, lime peel, milk, sour cream and 1/2 cup cilantro in medium bowl. Mixture will be thick. Set aside 10 minutes to ensure liquid is absorbed into cornmeal. Drop by tablespoonfuls into simmering soup. Cover and cook 8 to 10 minutes, or until puffed and firm.
  • TO SERVE, spoon a couple dumplings into each bowl and ladle soup around dumplings. Garnish with sour cream, cilantro, avocado and/or a squeeze of lime juice.

1 Tbsp canola oil
2 tsp ground cumin
1 tsp paprika
48 oz low-sodium chicken broth
29 oz can hominy, undrained
4 cooked skinless chicken thighs, chopped
14 or 15 oz can diced tomatoes in juice, undrained
14 oz water (measured from canned tomatoes)
6 green onions, sliced
1 large jalapeno, chopped
1 large lime, juiced
1 dash(es) hot sauce, or to taste
1 tsp black pepper or cayenne pepper
1 c chopped fresh cilantro
tortilla chips, roughly crushed (for serving)
sour cream (for serving)

Steps:

  • 1. Heat oil in a large pot over medium heat; stir cumin and paprika into hot oil until fragrant, about 1 minute. To the seasoned oil, add broth, hominy, chicken, diced tomatoes and juice, water, green onions, chopped jalapeno, lime juice, hot sauce and pepper; bring to a boil.
  • 2. Reduce heat and simmer until flavors have blended, about 15 minutes.
  • 3. Garnish each serving with chopped cilantro, crushed tortilla chips and a dollop of sour cream, and serve hot.

1 dried chipotle chiles or 1/2 teaspoon canned chipotle chile puree
1 cup tomatoes, chopped (or one can chopped tomatoes undrained)
1/2 lb chicken breast, cut in 3/4
5 cups chicken broth
1 tablespoon chili powder
1/4 cup cilantro, chopped
1/2 bunch cilantro, tied with string
1 cup corn (fresh if possible, otherwise frozen)
2 cloves garlic, minced
1/4 cup lime juice
1 onion, chopped
to taste sour cream, garnish
to taste tortilla chip strips, baked

Steps:

  • Heat broth in medium pot. Add onion, garlic, chili powder, tomatoes, bunch cilantro and chile. Simmer for 15 minutes.
  • Add chicken and simmer until cooked (about 10 minutes). Discard bunch cilantro.
  • Add corn and cook 2-3 minutes.
  • Add chopped cilantro and lime juice. Garnish with sour cream and baked tortilla strips (cut corn tortillas in strips, spray with cooking spray, bake in 350 degree oven until crisp).

3 (15 ounce) cans cannellini beans (drained and rinsed)
2 limes (juice and zest)
3 garlic cloves (chopped)
3 tablespoons extra virgin olive oil
2 cups vegetable stock (or chicken)
1/3 cup chopped onion
1/4 cup cilantro (a good handful, chopped)
salt and pepper

Steps:

  • In a stock pot, combine the oil, onion, and garlic. When onions and garlic cook down a bit, add the beans and lime zest. Cook for another minute or two.
  • Add in the stock. Then add the cilantro and lime juice.
  • Cover with a lid and bring to a slight boil. Reduce heat to low and simmer for another 5 minutes.
  • Use an immersion blender (or cool slightly and use your regular blender) to make the soup creamy and smooth.
  • Add a bit of salt and pepper to taste, if needed. Set aside with the lid on tight to keep the soup hot while you finish making any other sides.

Black Bean Soup
1 Tablespoon extra virgin olive oil
1/2 small onion, minced
2 garlic cloves
salt and pepper
2 teaspoons chili powder
1/4 teaspoon cumin
2 cans seasoned black beans, drained but not rinsed (I used Trader Joe's Cuban-style beans)
1-1/2 cups water
1 cup chicken broth
4-5 dashes green Tabasco sauce
Toppers: sliced avocado, salsa, sour cream
Cilantro-Lime Rice:
1 cup long grain white rice
2 cups water
1 Tablespoon canola or vegetable oil
1/2 teaspoon salt
juice of 1/2 lime
3 Tablespoons chopped cilantro

Steps:

  • Black Bean Soup: Heat oil in a large soup pot over medium heat. Add onion, season with salt and pepper, then saute until soft, about 10 minutes. Add garlic and saute for 30 more seconds, stirring constantly. Add chili powder and cumin then saute for 30 more seconds. Add drained beans, water, and chicken broth, bring soup to a boil, then lower heat slightly and simmer for 15 minutes. Scoop 2 ladle-fulls of soup into a blender or food processor then blend until almost smooth. Alternatively use a hand-held immersion blender to process 1/3 of the beans in the soup pot. Add blended soup back into the pot then add hot sauce Chipotle-Lime Rice: While soup is simmering, bring water, oil, and salt to a boil in a saucepan. Add rice, place a lid on top, then turn heat down to medium-low and simmer until rice is tender, about 15 minutes. Stir to fluff then add lime juice and chopped cilantro. To serve, scoop cooked rice into bottom of bowls then top with hot soup. Top with sliced avocado, salsa, sour cream, etc.
