Every ladleful of this hearty colorful soup brims with turkey, sweet potato, escarole, and tomato in a soothing broth. It comes together in under one hour, making it the perfect family-friendly weeknight meal.

1 tablespoon olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
2 tablespoons tomato paste
1 large sweet potato (about 12 ounces), peeled, quartered lengthwise, and thinly sliced
1 can (14.5 ounces) diced tomatoes with juice
1 can (14.5 ounces) reduced-sodium chicken broth
1/2 teaspoon dried crushed rosemary
coarse salt and ground pepper
1 pound cooked turkey breast, or 1/2 of turkey reserved from Spice-Rubbed Turkey Breast with Sweet Potatoes, cut into bite-size pieces
1 small head escarole (about 8 ounces), trimmed, leaves torn into bite-size pieces and washed well

Steps:

  • In a large saucepan with a lid, heat oil over medium. Add onion and garlic. Cook, stirring occasionally, until softened, about 5 minutes. Stir in tomato paste.
  • Add sweet potato, tomatoes and their juice, broth, 1 cup water, and rosemary; season with salt and pepper. Bring to a boil, and reduce to a simmer. Cover; cook until potato is tender, 12 to 15 minutes.
  • Stir in turkey; add escarole in 2 batches, waiting for the first batch to wilt before adding the second. Cover, and simmer just until turkey is heated through. Season with salt and pepper. Serve.

It's been 25 years since I cut this recipe out of a newspaper, and I've made it countless times since then. We like it so well that I always boil the leftover turkey bones and freeze the broth with turkey meat in quart containers, so it's available whenever I want to make soup.

3 cups chicken broth
1/2 cup frozen baby lima beans, thawed
1/3 cup cubed peeled potato
1/3 cup sliced carrot
1/3 cup sliced celery
2 tablespoons chopped onion
3/4 cup cubed cooked turkey or chicken
1/2 cup cooked spiral pasta
1 tablespoon minced fresh parsley

Steps:

  • In a large saucepan, combine the broth, lima beans, potato, carrot, celery and onion. Bring to a boil. Reduce heat; cover and cook for 15 minutes or until vegetables are tender. Add turkey and pasta; cook until heated through. Stir in parsley.

1 medium green pepper, coarsely chopped
2 garlic cloves, minced
1 (14 ounce) can diced tomatoes with juice, do not drain
1/2 cup long grain rice
4 cups chicken broth
2 cups water
4 carrots, peeled and sliced
1 (10 ounce) package frozen green beans
2 cups roasted turkey, cut into 1-inch cubes or 2 cups cooked chicken
1/2 cup chopped black olives
1 tablespoon fresh basil or 1 teaspoon dried basil
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • In a large stockpot, heat the oil over moderate heat.
  • Add the onion, green pepper, and garlic and sauté, stirring occasionally for 5 minutes.
  • Stir in tomatoes, chicken broth, water, carrots, rice, and basil. Heat to boiling, then reduce heat; cover and simmer for 15 minutes.
  • Add the green beans, black olives, turkey and salt and pepper. Cook uncovered for about 5 minutes or so until soup is heated through.

2 cups water (or broth)

1 leftover turkey carcass (from a 12- to 14-pound turkey)
4-1/2 quarts water
1 medium onion, quartered
1 medium carrot, cut into 2-inch pieces
1 celery rib, cut into 2-inch pieces
SOUP:
2 cups shredded cooked turkey
4 celery ribs, chopped
2 cups frozen corn
2 medium carrots, sliced
1 large onion, chopped
1 cup uncooked orzo pasta
2 tablespoons minced fresh parsley
4 teaspoons chicken bouillon granules
1 teaspoon salt
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper

Steps:

  • Place the turkey carcass in a stockpot; add the water, onion, carrot and celery. Slowly bring to a boil over low heat; cover and simmer for 1-1/2 hours., Discard the carcass. Strain broth through a cheesecloth-lined colander. If using immediately, skim fat. Or cool, then refrigerate for 8 hours or overnight; remove fat from surface before using. (Broth may be refrigerated for up to 3 days or frozen for 4-6 months.), Place the soup ingredients in a stockpot; add the broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until pasta and vegetables are tender.

TURKEY BARLEY CHUNKY SOUP



Turkey Barley Chunky Soup image

There are a bazillion turkey soup recipes on here but not this one. I like a really chunky soup so you may wish to alter the amount of barley you use. We use alot. Great for OAMC

1 turkey carcass
4 stalks celery, sliced
3 carrots, thinly sliced
1 small white onion, chopped
1 teaspoon garlic powder
1/4 teaspoon dried rosemary
1 1/2 cups pearl barley
salt and pepper
chicken bouillon granule, optional for additional flavoring

Steps:

  • Place turkey carcass in a large soup pan and completely cover with water.
  • Simmer 6 hours or more until the meat completely falls off of the bones, replenishing water as it evaporates.
  • Add celery and cook 2 hours more.
  • allow soup to cool.
  • Strain soup and remove bones and grissle.
  • Add xtra turkey if desired into pot. Add enough water to fill pot up to where it was when the bones were still in it.
  • Reheat soup and add carrot and spices and simmer for an hour. Add bouillon to taste if you feel the broth needs it.
  • Add barley and cook for about an hour or so.
  • Serve hot with parmesan cheese if desired.
  • You can freeze leftovers and reheat.
  • Great for OAMC.
