Apricot Chicken image

This easy chicken recipe was submitted to me for my cookbook by a lady in Walden New York. It is quite easy to make, and simple as well, and will go great over a bed of jasmine Rice or your favorite pasta. Just add a salad, Green Vegetables and some dinner rolls, and you have dinner.

Number Of Ingredients 4

1 whole cut up chicken
1 jar(s) apricot preserve (8 ounces)
1/2 pkg onion soup mix
1/2 bottle red russian dressing

Steps:

  • 1. Preheat oven to 350 degrees F. Butter a 9X 13 inch baking dish. Set aside.
  • 2. Wash chicken pieces pat dry, and add to prepared baking dish, skin side up. Mix preserves with onion soup mix & Russian dressing in a small bowl and pour over chicken. Cover tightly with foil and bake in preheated 350 degree F. oven for 1 1/2 hours, till tender and juices run clear, when pierced with a fork. Serve over a bed of Jasmine Rice or your favorite pasta.
