Number Of Ingredients 13

1/2 cup(s) butter
1/2 cup(s) onion-chopped
1/2 cup(s) celery-chopped
3/4 cup(s) all-purpose flour
5 cup(s) milk
3/4 teaspoon(s) salt
1/2 teaspoon(s) salt
1 1/2 cup(s) shredded cheddar
4 large baking potatoes-baked, peeled, & chunked
12 - bacon slices-cooked and crumbled
1 cup(s) sour cream
OPTIONAL TOPPINGS
- chopped green onions, shredded cheddar, crumbled cooked bacon

Steps:

  • Melt butter in large Dutch Oven over Medium heat. Add onion and celery and saute until tender. Add flour to mixture and cook,stiring constantly for 3 minutes.
  • Gradually add milk and broth, stirring until thickened. Add salt and pepper
  • Add cheese to misture and cook, stirring constantly until melted.
  • Stir in potatoes and bacon. Add sour cream and cook until thoroughly heated.

1 1/4 cups chicken broth
3/4 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups (6 ounces) shredded Cheddar cheese
4 large baking potatoes, baked, peeled, and cut into large chunks
12 bacon slices, cooked and crumbled
1 cup sour cream
1 Toppings: chopped green onions, shredded Cheddar cheese, crumbled cooked bacon

Steps:

  • Melt butter in a large Dutch oven over medium heat; add onion and celery, and sauté until tender. Add flour to mixture and cook, whisking constantly, 3 minutes. Gradually add milk and broth, stirring until thickened. Stir in salt and pepper. Add cheese to mixture and cook, stirring constantly, until melted. Stir in potatoes and bacon. Add sour cream and cook until thoroughly heated. Add desired toppings to each serving.

This is made with convenience ingredients, yes, even cream of soup. But it's so good! And I used the low fat cream soup, and light cheese. Very hearty and comforting on a cold night, and SO quick to prepare!

1 (32 ounce) package frozen southern style hash browns, potato chunks,thawed
1 quart milk
1 (10 3/4 ounce) can cream of celery soup
6 ounces cubed processed cheese
5 slices cooked crumbled bacon
1 tablespoon Worcestershire sauce
salt and pepper

Steps:

  • Combine potatoes, milk, soup, cheese, bacon and the worcestershire sauce in a large soup pot.
  • Heat to boiling over med high heat, stirring often.
  • Boil while stirring until the cheese melts.
  • Add in salt and pepper to taste.
  • Sprinkle more bacon over bowls of soup, if desired.
