CHUNKY MONKEY BANANA BREAD
Chunky Monkey Banana Bread. This tender and moist banana bread is fully loaded with melty chocolate chips and chopped walnuts.

Steps:
- Preheat the oven to 375°F. Spray loaf pan with baking spray set aside.
- In a large mixing bowl cream the butter and sugars.
- Add the eggs, buttermilk and mashed bananas. Mix until well combined.
- Add the dry ingredients to the wet ingredients. Mix until just combined.
- Fold in the walnuts and chocolate chips.
- Pour the batter into the prepared loaf pan.
- Top with additional chocolate chips.
- Bake for approximately 30 minutes covered with loosely with foil. Remove then continue baking for an additional 30 minutes or until fully cooked, top will be a golden brown. (foil helps to prevent too much browning)
- Allow to cool in the pan then remove to continue cooling on a wire rack.

Steps:
- 1. Cream shortening; gradually add sugar, beating at medium speed of electric mixer until light and fluffy.
- 2. Add eggs, one at a time, beating well after each addition.
- 3. Stir in mashed bananas, milk and vanilla.
- 4. Combine flour, soda and salt; add to creamed mixture, mixing well.
- 5. Stir in chocolate chips and walnuts.
- 6. Spoon batter into a greased and floured 9 inch loaf pan. Bake at 350 for 55-60 minutes.
- 7. Cool in pans for 5-10 minutes. Remove to wire wrack and cook completely.

- 1. Preheat oven to 375 degrees F. 2. In a big bowl, combine all dry ingredients and sift well with a fork or a whisk. In a medium bowl, mash the bananas, leaving some small chunky bits. Add the oil and lemon juice to the bananas, and combine well. 3. Add the wet ingredients and the chocolate chips to the big bowl with the dry ingredients, and combine well until just mixed. (Don't overmix-when in doubt, just stop, since it's better that two chocolate chips are touching than that your loaf is tough). 4. Pour the batter into a loaf pan or 2 mini loaf pans. Bake for 45-50 minutes (big loaf) or 25 minutes (small loaf). Since heat varies by the oven, you should check the loaves using the toothpick method. When it's golden on top and toothpick comes out clean, it's done. Enjoy!
