8 cups chopped peeled tart apples (about 3-1/2 pounds)
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons vanilla extract

Steps:

  • In a Dutch oven, combine apples, brown sugar and cinnamon. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla. Mash apples slightly if desired. Serve warm or cold.

1 cinnamon stick
1 tablespoon fresh lemon juice
2 to 4 tablespoons sugar (optional)

Steps:

  • Peel, core, and cut apples (such as a combination of McIntosh and Golden Delicious) into 1/2-inch thick slices.
  • In a large saucepan, bring apples and 1/2 cup water to a boil. Add cinnamon stick; reduce heat. Cover; simmer, stirring occasionally, until apples are tender, 25 to 30 minutes.
  • Stir in fresh lemon juice and sugar (if desired) until dissolved, about 1 minute. Discard cinnamon stick. Serve warm or chilled (refrigerate in an airtight container up to 1 week).
