I created this recipe using the recipe builder on the weight watchers website, so if you use the exact ingredients I've listed it is only 4 points per serving! It's really tasty, plus it has 26 grams of protein to keep you full. This is a very basic recipe, there are many variations you could create by adding new ingredients to it--just keep in mind that the point value might change...

4 tablespoons kraft fat-free Miracle Whip
1/2 teaspoon black pepper
2 cups lettuce
4 buena vida whole wheat tortillas
16 ounces premium chunk chicken

Steps:

  • Mix the miracle whip and chicken.
  • Top the mixture with lettuce.
  • Season it with pepper or whatever you have a taste for, and place inside tortilla.
  • Enjoy!

2 cups cooked chicken breasts, diced
3 tablespoons reduced-calorie mayonnaise or 3 tablespoons fat-free mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon fresh tarragon, chopped or 1/2 teaspoon dried tarragon
1 cup sugar snap pea, blanched, cooled and chopped
1/8 teaspoon table salt, to taste
1/8 teaspoon black pepper, to taste
4 (4 inch) fat free tortillas (I use whole wheat tortillas.)
8 pieces lettuce

Steps:

  • In a large bowl; combine the chicken, mayonnaise, lemon juice, tarragon and snap peas together.
  • Mix until well coated and season to taste with salt and pepper.
  • Lay tortillas on a flat surface and using 1/4 of chicken salad mixture, place it down the center of each tortilla.
  • Top each with 2 lettuce leaves and roll up, folding in ends.

Simple to prepare chicken salad that I make up for sandwiches. We never have left-over chicken, so I microwave chicken just to make this. Very basic but very good! P.S. Celery is listed as optional because my husband hates it...if I am only making this for him, I leave it out! :)

Number Of Ingredients 7

1 1/2-2 cups chicken breasts, cooked and cubed into 3/4 inch pieces (see note)
1/8 cup onion, chopped small
1/8 cup celery, chopped small,optional
1 tablespoon sweet pickle relish
3 -4 tablespoons mayonnaise (I use Hellmann's Light)
paprika
salt and pepper, to taste

Steps:

  • In a medium bowl, combine mayo, onions, relish and 2 dashes or so of paprika.
  • Add chicken and fold into mayo mixture until well combined.
  • Taste and then add salt and pepper as needed.
  • Chill well and serve over lettuce or on your favorite bread.
  • Note: I microwave 2 boneless chicken breast halves sprinkled with salt, pepper, Italian seasoning, garlic powder and onion powder for 5- 6 minutes for this salad.
  • If you are using left-over chicken, you may need to adjust the seasonings in the ingredients list.

1 (12 ounce) can premium chunk chicken or 1 1/2 cups cooked chicken, chopped
2 tablespoons fat-free thousand island salad dressing
1/4 cup onion, chopped
1/4 cup Kraft Healthy Favorites Fat Free Cheddar
2 pieces sun-dried tomatoes, chopped into thin strips
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper
1 teaspoon garlic powder
hot sauce (optional)
4 low-carb whole wheat tortillas
cooking spray

Steps:

  • Mix first 8 ingredients in a small bowl.
  • Separate into 4 equal portions.
  • Spray a pan with Crisco and heat on high for a minute.
  • Heat first tortilla about 2 minutes per side (just until browned).
  • Remove from pan with tongs or fork.
  • Put 1/4 of the chicken salad mixture on the lower half of the tortilla and fold in the sides. Continue rolling in taco fashion and secure with a toothpick.
  • Cut in half on the diagonal and enjoy.
