MOM'S CHUCKWAGON BEANS

One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!

1 lb ground beef, browned
1 medium diced onion
1/2 lb bacon, cook crisp and save drippings
1 (16 ounce) can great northern beans
1 (16 ounce) can kidney beans
1 (16 ounce) can pork n' beans
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup ketchup
1/2 tablespoon prepared yellow mustard
1 tablespoon molasses
1 dash Worcestershire sauce

Steps:

  • Cook bacon.
  • Brown ground beef with the diced onion.
  • Place first 3 items in a large oven roaster (I use an Enamelware roaster).
  • To this, add the 3 cans of beans; do not drain beans.
  • Mix all other ingredients together in a medium bowl.
  • Pour over meat and beans and stir well.
  • Bake at 350 for 1 hour covered.
  • Remove lid or foil and bake for 20 more minutes.

CHUCK WAGON POTATOES

5 to 6 pounds red bliss potatoes
1 large onion, diced
2 shallots, diced
1/2 cup chopped garlic
1 1/2 cups par cooked bacon, chopped
1 1/2 cups salted butter, softened (recommended: Country Crock)
Salt and freshly ground black pepper
1 cup applewood smoked Cheddar, grated
1/2 cup chopped chives

Steps:

  • Preheat oven to 400 degrees F.
  • Wash and cut potatoes into bite-size pieces. Place potatoes in a medium sized roasting pan. Add diced onion, shallots, garlic and bacon. Mix potatoes and other ingredients with softened butter until ingredients are coated thoroughly with butter. Cover with foil and cook approximately for 1 hour or until the potatoes are almost fork tender. Remove foil. Season with salt and pepper and place back in the oven for 20 to 25 minutes or until potatoes have a nice golden brown color. Garnish with grated cheese and chives.

1 teaspoon sugar
1/2 teaspoon salt
4 cups shredded cabbage
1 tablespoon finely chopped onion
4 teaspoons white vinegar
1 dash black pepper
1 (1 lb) can pork and beans in tomato sauce, drained

Steps:

  • In a large bowl mix the mayo, vinegar, onions and seasonings.
  • Mix in the cabbage and beans, stir well but gently.
  • Cover and chill at least an hour to blend flavors.

1/3 cup minced celery
2 tablespoons chopped fresh parsley

1/4 teaspoon celery seed
1/4 teaspoon salt
1/8 teaspoon ground pepper

Steps:

  • In a medium bowl, combine all ingredients.
  • Cover and refrigerate until ready to use.
