CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

CHUCK WAGON BRISKET

6 pounds beef brisket
Salt and pepper
2 packets (1 1/2 ounces) meatloaf seasoning (recommended: McCormick)
1 bottle (12 ounces) beer
2 cups apple cider (recommended: Treetop)
1 cup sliced onions
2 cups BBQ sauce (recommended: KC Masterpiece)
1 cup soaked hickory or oak wood chips

Steps:

  • Set up grill for indirect cooking over medium heat (no direct heat source under brisket).
  • Rinse brisket with cold water and pat dry. Season with salt and pepper and place in foil baking pan. Sprinkle with meatloaf seasoning and pour over beer. Add enough apple cider to cover brisket halfway. Top with sliced onions and cover with heavy-duty aluminum foil.
  • Place pan on hot grill over a drip pan. Cover grill and cook 2 1/2 hours. If using charcoal, add 10 briquettes to each pile of coals every hour. Remove brisket from braising liquid and place directly on grill over the drip pan. Combine 2 cups of braising liquid with BBQ sauce. Mop brisket thoroughly with sauce. Add 1/2 cup of wood chips to each pile of coals. Cover grill. Turn and mop brisket every 20 minutes for 1 hour.
  • Transfer brisket to cutting board and let rest 10 minutes before slicing. Thinly slice against grain and serve with mop sauce on the side.
  • INDOOR: Preheat oven to 375 degrees F. Follow directions for preparing brisket. Cover pan with aluminum foil and bake in preheated oven for 2 1/2 to 3 hours. Remove brisket from braising liquid and place on foil lined baking sheet. Reduce oven temperature to 350 degrees F. Mop brisket with BBQ sauce return to oven. Turn and mop brisket with sauce 2 more times every 15 minutes. Remove from oven and let rest 10 minutes before slicing.

6 eggs
1 cup mushrooms, finely diced
1/4 red bell peppers, finely diced
1/4 green bell pepper, finely diced
1/4 cup celery, finely diced
1/4 cup onion, finely diced
2 Tablespoon prepared spaghetti sauce or ketchup
1 Tablespoon salt
1/2 Tablespoon pepper
2 1/2 Pound ground lean beef
3/4 Cup panko (Japanese bread crumbs)

Steps:

  • Preheat oven to 350°. Baking time approximately 45 minutes. Mix all ingredients together in a big bowl. Shape mix into a nice rectangle shape and place on an oiled sheet pan to bake. Slice to desired thickness. Lightly oil an outdoor grill or griddle top and grill slices of meatloaf before eating. Note: You can freeze meatloaf after baking to serve at a later time. Cool completely, wrap meatloaf with plastic wrap and then with foil tightly before freezing. To re-heat, thaw out meatloaf.

MEAT LOAF:
2 lb lean ground chuck
1 c chopped onion
1/2 c chopped green bell pepper
1 c seasoned italian bread crumbs-not panko
1 c evaporated milk (like pet or carnation)
2 large slightly beaten eggs
1 tsp salt
1/4 tsp pepper
1 tsp ground mustard (dry kind)
1 Tbsp brown sugar, firmly packed
MASHED POTATOES:
4 large potatoes, cooked and mashed
1/2 c cream
1/2 c parmesan cheese
1 tsp salt
1/2 tsp pepper
2 Tbsp butter
paprika, for garnish
parsley flakes, for garnish
FOR BBQ MEATLOAF:
prepare meat loaf the same as above. instead of baking in the oven. shape on a 1/4 inch thick cedar plank (that has soaked in water for at least 4 hours)and place meat loaf shape on the board and put on the grill with
indirect heat on both sides of the meat with temperature of 375^. leave on grill for 30 minutes or until internal temperature of meat reaches 160^. remove from grill and let rest for 10 minutes and proceed with potatoes as above. then place on grill
and cook for 45 minutes -until internal temperature reaches 170^ .let rest for 10 minutes before cutting.

Steps:

  • 1. Meat Loaf: Combine all ingredients in a large bowl and form into a loaf on a large cookie sheet (or the cedar board for BBQ). Press meat together well to hold it's shape. Bake in oven for 45 minutes or until internal temperature reaches 170^. Remove from oven and let rest.
  • 2. While meat is baking make the mashed potatoes. Boil potatoes in water to cover until tender when poked with a fork. Drain. Mix and mash potato with the cream,cheddar cheese, salt and pepper to taste and the butter. Blend well. Let potatoes get cold. Then-
  • 3. Spread potatoes on a flat small cookie sheet and place in the freezer for 1 hour.(this keeps the potatoes from falling off the meat.) Then with your hand scoop a little at time onto the cool meat loaf -covering sides and top. Sprinkle with paprika and sprinkle with parsley. Bake in oven at 375^ for 45 minutes or until it has heated through. Check at 30 minutes so cheese potatoes do not burn. Internal temperature should read 170^. Enjoy! --- Do the same potato procedure for the BBQ loaf. When BBQ-ing the loaf make sure to put the cover down on grill. Down for the potato coating too!
