CHRISTMAS QUICHE
A delicious breakfast casserole that is our family's traditional breakfast meal every Christmas. Can top with sausage, bacon, or ham. We always use ham.

Steps:
- Melt butter in the bottom of 9x13 pan. Add hash browns and cook at 375 for 25 minutes.
- Shred cheese and sprinkle on top of hash browns. Spread ham over top of the cheese.
- Beat eggs, milk, and S&P together. Pour over top of casserole.
- Bake in oven at 350 for 35 to 40 minutes.

CHRISTMAS TURKEY QUICHE
A spicy hot dish with jalapeno peppers, turkey breast, onions, mushrooms, and cheese to make a main course meal for brunch or dinner.

Steps:
- Heat oil in a saute pan over medium heat. Cook turkey breast, flipping every few minutes, until nicely browned on the outside and no longer pink in the center, about 15 minutes. Set aside to cool.
- Preheat the oven to 375 degrees F (190 degrees C).
- Melt butter in a clean saute pan over medium heat. Add mushrooms, onion, and jalapeno peppers. Cook until onion is translucent, about 5 minutes.
- Combine 1 cup all-purpose flour, whole wheat flour, and salt in a bowl. Cut in the lard until mixture is crumbly. Add iced water, a spoonful at time, stirring with a fork until dough comes together in a ball.
- Roll dough out onto a lightly floured surface and shape it into 9-inch circle; transfer to a pie plate.
- Bake crust in the preheated oven until edges are lightly browned, about 10 minutes.
- Spread onion-mushroom mixture over the bottom of the crust. Layer farmer's cheese on top. Cut turkey breast into small chunks and scatter over the cheese.
- Whisk remaining 1/2 cup all-purpose flour with eggs, milk, and baking powder until smooth. Pour over the filling.
- Bake until lightly browned on top and crust bounces back when lightly touched, 35 to 40 minutes.

ITALIAN CHRISTMAS QUICHE
I was a little worried the Italian seasoning was going to be overpowering. I'm so glad I was wrong. This is one yummy quiche! It's simple to throw together and will be a great holiday breakfast or brunch. So good!

Steps:
- 1. Heat oven to 400 degrees.
- 2. Prepare a crust for a 9-inch pie plate or use a store-bought crust. Do not prebake.
- 3. Defrost asparagus and use paper towels to remove excess moisture (if frozen).
- 4. Sprinkle the pepperoni and asparagus pieces over the bottom of the pie crust.
- 5. Spread cheeses evenly over the asparagus and pepperoni.
- 6. Beat the 4 eggs with a whisk until a bit foamy. Stir in half and half and the Italian spices
- 7. Pour egg mixture over filling.
- 8. Be sure that no cheese is sticking out too high.
- 9. Place in oven on middle rack, turn temp down to 350 and bake 30-45 minutes until set. The knife should come out clean if stuck in the middle.
GRANDMA'S CHRISTMAS MORNING QUICHE
My grandma has made this quiche for Christmas morning ever since I can remember (and I'm sure before I was around). I love it!

Steps:
- 1. Brown sausage in skillet and set aside on paper towels to drain.
- 2. Cube 3/4 of a loaf of Pepperidge Farm bread. Butter a 9x13 dish and spread cubed bread evenly to cover bottom.
- 3. In a medium mixing bowl whisk together 6 eggs, salt, and milk until smooth.
- 4. Evenly sprinkle cooked sausage over bread cubes. Top with all shredded cheese. Then pour egg mixture over entire dish making sure to evenly coat all ingredients.
- 5. Cover with foil and let refrigerate overnight.
- 6. The next morning, preheat oven to 350. Bake uncovered for about 45 min or until cheese is bubbly and begins to brown. ( I check at 30 min) Enjoy!

- Brown sausage; Whisk together eggs, flour and baking soda. Add in cottage cheese; grated cheese; browned sausage and green chilis. Mix thoroughly and pour into greased 11x15 baking dish. Cook at 375 for 35 minutes; Can be prepared a day ahead and reheat covered at 300 degrees for 30 minutes christmas morning; I slightly undercook if I am planning to do this. You can also add seasonings; change meats and cheeses for different flavors as desired.
CHRISTMAS QUICHE
I usually make this for our Christmas breakfast. However this quiche is delicious any time of the year.

Steps:
- 1. Spray pie pan with Pam. Set oven at 350º.
- 2. Use bowl with spout. Break eggs in bowl and whip eggs with whisk. Add milk and whisk gently.
- 3. Add peppers, brocoli and ham to egg mixture.
- 4. Pour mixture in pan. Bake for about 15 minutes or until toothpick inserted in center comes out clean.
CHRISTMAS BREAKFAST QUICHE
Steps:
- Mix together eggs, 2 1/2 c. milk, and dry mustard. Set aside Mix together mushroom soup, 1/2 c. milk and salt. In a 9x13 pan layer the bread, sausage and cheese. Pour the egg mixture over all then top with the soup mixture. *Refrigerate over night* Bake at 300 for 1 1/2 hours. Let set for 15 minutes before serving.
CHRISTMAS QUICHE RECIPE
Steps:
- Quiche Recipe Mix together with a fork in one bowl: 6 eggs 1 cup Mayo 2T Flour Add: 1 bag of Steamed/ Chopped Spinach 1 ½ Cups of grated Swiss cheese 1 ½ Cups of diced Ham 2 tsp chopped garlic I use Trader Joes frozen pie crusts. Follow the instructions for thawing or if you don't have a pie pan use Sara Lee's frozen deep dish pie shell and thaw a bit. I used Sara Lees for years. Poke the deep dish pie shell with a fork to keep it from rising up out of the pan when cooking. Pour the ingredients into the uncooked pie shell. Bake: 375 degrees for 45 to 50 minutes (test with a tooth pick)
