2-1/2 cups graham cracker crumbs, divided
24 large marshmallows, snipped
8 ounces dates, chopped
2 cups chopped walnuts
1-1/4 cups heavy whipping cream
Whipped cream, optional

Steps:

  • In a bowl, combine 2 cups of graham cracker crumbs, marshmallows, dates and walnuts. Stir in cream; mix thoroughly. Shape into a 14x3-in. log. Roll in remaining crumbs. , Wrap tightly in plastic wrap or foil. Refrigerate at least 6 hours or overnight. Slice; garnish with whipped cream if desired.

I like this recipe for many reasons. It is a very easy to prepare and slice, looks great on a dessert plate, soft and chewy, and tastes good, too. Number Of Ingredients 5

2 cups semi-sweet chocolate chips
6 cups miniature marshmallows
1/2 cup butter or 1 stick
1 cup coarse chopped walnuts
1 cup coarse chopped pecans

Steps:

  • 1. Assemble all the ingredients before you begin. (chocolate chips, butter, marshmallows and chopped walnuts.)
  • 2. Chop the pecans.
  • 3. Melt the butter in a medium sauce pan over medium low heat, and stir in the chcolate chips.
  • 4. Stir the mixture until smooth, then remove from burner and set aside to cool. Set timer for 7 minutes. NOTE: YOU DO NOT WANT MARSHMALLOWS TO MELT.
  • 5. After the mixture is cool, add the walnuts and stir, then add the marshmallows. Gently mix well, and pour mixture onto 2 pieces of wax paper. Roll in the wax paper into two tight 7 inch logs. Then roll in two pieces of tin foil to give your roll some stability. Refrigerate for about a half hour.
  • 6. Remove from fridge and carefully open the foil. Use the same tin foil you rolled the log in and add the chopped pecans to it. The log should be firm enough to roll in the chopped pecans as depicted in my photo. When the roll is covered with nuts, wrap the log tightly in the same foil and return to the refrigerator for 24 hours.
  • 7. Slice the log into 1/4 inch slices the next day. Store in a tight container in the fridge. You will have a lot of nuts left in the tin foil, bag them up and freeze them to go in cookies, ice cream sundaes or other desserts.

Steps:

  • Sprinkle coconut evenly on a sheet of waxed paper. In a medium bowl, stir together marshmallows, graham cracker crumbs, condensed milk, walnuts and cherries. Shape into a log. Place on waxed paper and roll in coconut. Wrap with waxed paper and refrigerate until firm.

6 ounces chocolate chips (I prefer milk chocolate)
2 tablespoons butter or 2 tablespoons margarine
1 egg, beaten
3 cups colored miniature marshmallows
1 cup chopped pecans or 1 cup other nuts, your choice

Steps:

  • Melt the chocolate chips and butter over low heat in a large saucepan.
  • Add a small amount of the warmed chocolate mixture to the beaten egg, combining quickly.
  • Add the egg mixture back to the saucepan of chocolate, combining well.
  • Turn off heat, and add the marshmallows and nuts, combining well.
  • Pour out onto waxed paper, forming into logs approximately 2 inches in diameter.
  • Refrigerate, and slice to serve.

CHOCOLATE YULE LOG

1 pre-made chocolate jelly roll cake
1 (16-ounce) container frozen whipped topping, thawed
1 teaspoon vanilla extract
Cocoa powder, for dusting
10 miniature marshmallows
10 chocolate kiss candies, unwrapped
1/4 cup confectioners' sugar

Steps:

  • Lay cake on a clean work surface. Mix the whipped topping and vanilla extract together until combined. Spread white frosting over the top of the cake to coat completely. Roll up the cake, jelly-roll style, and then cover the outside of the cake with the frosting. Drag a fork along the length of the cake to form a bark design. Dust with cocoa powder and refrigerate.
  • For the forest mushrooms, insert 1 toothpick through each marshmallow and then into the flat side of the chocolate kiss to form "mushroom." Group chocolate mushrooms along cake by inserting toothpicks into surface of cake, at intervals to resemble growths of forest mushrooms. Dust chocolate kiss candies with confectioners' sugar. Slice and serve.

250 g crushed graham crackers (malt biscuits or sweet cookies)
100 g small marshmallows
100 g dried apricots, chopped
1 (400 g) can sweetened condensed milk
1/2 cup coconut

Steps:

  • In a large bowl, combine the malt biscuits, apricots, marshmallows and condensed milk.
  • Mix to a soft, not sticky consistency.
  • Sprinkle a sheet of foil with half the coconut and place half the mixture onto the foil in a sausage shape.
  • Roll the foil around the log, smoothing as you go.
  • Using more foil, repeat with the remaining mixture and coconut.
  • Chill until logs are required.
  • Cut logs into thick even slices to serve.

Number Of Ingredients 9

2 teaspoons butter
3 envelopes unflavored gelatin
1 cup cold water, divided
2 cups sugar
1 cup light corn syrup
1/8 teaspoon salt
1 teaspoon clear vanilla extract
Optional toppings: Melted chocolate, hot fudge and/or caramel ice cream topping
Optional garnishes: Baking cocoa, confectioners' sugar, crushed assorted candies, chopped nuts, colored sugars and/or sprinkles

Steps:

  • Line a 13x9-in. pan with foil and grease the foil with butter; set aside., In a large metal bowl, sprinkle gelatin over 1/2 cup water; set aside. In a large heavy saucepan, combine the sugar, corn syrup, salt and remaining water. Bring to a boil, stirring occasionally. Cook, without stirring, until a candy thermometer reads 240° (soft-ball stage)., Remove from the heat and gradually add to gelatin. Beat on high speed until mixture is thick and the volume is doubled, about 15 minutes. Beat in vanilla. Spread into prepared pan. Cover and let stand at room temperature for 6 hours or overnight., Using foil, lift marshmallows out of pan. With a knife or pizza cutter coated with cooking spray, cut into 1-in. squares. Dip or drizzle marshmallows with toppings if desired; coat with garnishes as desired. Store in an airtight container in a cool, dry place.
